    One of the most beautifull things about claire is that she doesn't pretend. Shes just a regular woman. She doubts, gets confused, is lazy to do certain things, makes mistakes, etc. These are all good things. She's not an influencer pretending to be perfect. She's just one of us. I have found this very enjoyable and endearing since I discovered her when she worked at bon appetit.

      It's so so important to humanize the cooking/baking experience. She gives tips even when not struggling because she has experienced such challenges And she explains why her suggestions will help. She is a great teacher. I've also learned a lot from creators such as Emmymade, Sohla,, and Carla Lalli who take a similar approach to presentation for their viewers.

    Pie dough :
    - 390 gr flour
    - 2 tbsp sugar
    - 2 tsp kosher salt
    - 2 and 1/2 sticks of cold butter
    - 2 1/3 cup of cold water
    Apple filling :
    - 3 apples (honeycrisps and pink lady)
    - 2 tbsp granulated sugar
    - 2 tbsp demerara sugar
    - a pinch of salt
    - a couple teaspoons of vanilla extract
    - 1/2 tsp cinnamon (1/4 tsp more later)
    - 1/2 tsp of ACV (and add a little bit more while cooking the apple filling)
    - 1 1/2 tsp of Angostura bitters
    when cooking the apple filling :
    put aside the apples on a plate, pour in about a cup of apple juice to the pan, add 1 1/2 tbsp of butter, melt them.
    Cornstarch slurry :
    On a mini bowl or cup, add in a couple teaspoons of cornstarch and dissolve them in 2 tbsp of apple juice. Claire did put in more later on tho.
    Add the cornstarch slurry into the pan, whisk it in.

    I am so happy this type of series is back in her orbit. I am also thrilled that she has turned her brand into a full fledged self-sustaining YT business. I am so happy for her. Now, as a St. Louis resident and native, I would love for her to introduce the world to provel cheese and her version of replicating it outside of our hometown. I love it in a version of pasta Alfredo. It is an amazing cheese with so many options.

    As a German I'm pretty surprised that they discontinued the deep fried Apple Pies in the USA in the 90s already 😮 They're still selling them here in my country and they always have been selling them, as long as I've been on this planet. They're insanely delicious and sometimes they have them with other fillings like cherries. You should try them as well, the pastry on these is pretty nice. They have these tiny crispy bubbles on the surface. Amazing.

      Here in Brazil we also have the fried pies as well. There are only 2 options though, apple and banana pies.

      I live in Germany, we only have the apple pie as standard item. Everything else is just seasonal and limited. Right now they have "Double Choc" pie, made with a dark chocolate pastry and chocolate filling.

      It's because in the 90s Americans were like, Oh were getting less healthy, I know, instead of organizing for walkable cities and more paid time off and a higher minimum wage so that we can buy and prepare our own food with less stress, lets just freak out about McDonalds convenience foods. We're still doing it, take a look at the "Make America Healthy Again" campaign, pretending like food dyes are the problem lol

      I dont know if things were different in europe/Germany, but i feel like i ate the fried apple pies in high school in like 2013/14. Maybe I’m misremembering but i just have this faint memory of the bubbly crust which was amazing. So sad that they don’t have those anymore

    Thank you for making your videos. I have been cooking and baking for about 50 years and love it all. My Italian grandmother taught me how to cook and make bread and my Hungarian/German/Austrian side taught me how to bake. Your videos bring me so much joy and you are a lover of the craft and super talented.

    In the uk we still fry the pies as full pockets of apple filling!! we have also had promotional seasonal pies like the white chocolate and raspberry pie or a milk chocolate ganache pie

      I'm so-so on seeing the cats 😬. I wish she wouldn't pick them up, hold them against her apron and then immediately handle food again. I also wish they'd show her change aprons and wash her hands. It just seems like cat hair is definitely in the food too. I love her and her technical mind. I've been watching since the bon appetit days...and no cats in the kitchen.

    I really appreciate the educational angle you put on these vids. The little moments you take to define a new term in writing on the screen or look at the camera to explain what you’re doing make the videos actually helpful to new bakers and welcoming and endearing to all viewers.     Love watching this series and was thinking back to before Claire did this on her own channel. Its so nice to see her actually enjoy doing this and look considerably less stressed lol. I think this series is successful bc its the comfort of a cooking video like what i grew up with in Martha Stewart and the like but theres no pre-prepared dish waiting in the oven, and the trail and error is interesting to watch. I also like hearing Claire talk about the ingredients in the original dishes and why they're there. I feel like i learned a lot from the ice cream recreate. I hadn't even thought to look at the packaging of ice cream and making sure it even says "ice cream" and not "dairy treat" so i enjoy her breaking down those ingredients as well as the ones she uses in her process.

    Ireland still has the fried versions and they look way more appetising than these ones 😂 they sometimes release different flavours like double dark choc and dark choc raspberry, all as the fried type of pie. My mom has ordered 10-15 at once and stuck them in the freezer.

    Adding bitters to pie filling is genius! I'm sure it's a thing but I'd never heard of it before and my mind is expanding, every time I watch your videos I always learn so much about baking and you always give such good technical advice, like chopping apples and I think I could use that with potatoes too!       My almost 20 year old cat died in April, but my arm still has the burn marks from trying to maneuver a sheet tray into the oven while not completely opening the door, because her ancient ladyship was in the way.

Like at least here in Germany any cheap grocery store bakery would have a better Apple pie than that. Being fried sets them apart from that as something unique you can only get at McDonald’s

    I truly feel like this is one of your greatest successes in all of Gourmet Makes and Recreates. Not only does it look like the original, it looks significantly better and I have no doubt it tastes leaps and bounds better too. I think I'm going to try to make these myself!

    From all the videos that Claire has made since her time at BA, it would be interesting to see her recreate Blow pops and the Tootsie roll pops. Im sure on the surface it seems easy but Im sure Claire would blow us away (no pun intended) with all the components and techniques needed to achieve this. Either way keep them coming I feel like regardless of what is done theres always so much I learn from every video!

    The company that makes McD's pies is actually a very awesome company. Very cool history. Women owned and privately held to this day. They make about 1.5 million hand pies a day. It was cool to see Claire take a crack at it.

    Claire, make Whoopie Pies! They’re delicious, but I’m never happy with the filling when I make them at home. Is it marshmallow? Is it buttercream? It seems like a hybrid! However I try to make it, it just doesn’t seem quite right. Obviously not for this series, but just in general.

    These pastries hold a special place in my heart. My dad cleaned as a janitor on his days off from firefighting, and sometimes if a Saturday was a building where I could come along and help, he would thank me by buying me one of these McDonalds Apple Pies. It was so cool to see Claire create a beautiful homemade one!

    I tried out the Onion Galette and it was sooo good. Your recipes really transformed me into the resident cook/baker for my roommates and I love it and i think they love it even more 😂

    I really enjoyed this episode. I’m often scared of experimenting in baking and sticking to written recipes, but this episode made the recipe look super achievable by simply reusing repurposing different techniques and recipes to create a new one.

    the best part about mcd's pies for me is that it's accidentally vegan. As much as butter makes an amazing pastry, having a plant-based treat option at mcd's is awesome. I get that you use butter, but I know there's a HUGE vegan audience that would love to see you recreate something purposely or accidentally vegan and/or share a vegan dessert recipe that's up to your standards!! Love youuu :)

      Why not put any cinnamon in the dough as well? Would you ever put brown sugar in the dough or would it alter the color too much?

    Love seeing Claire know what she's doing and succeeding at making better versions of things I've never even eaten. Maybe it's cos she's just *too* good, but I'd love to see a bit more trial and error so I can learn about the process of this didn't rise like I wanted it to so I'll add beaten egg whites etc.

    12:50 - This is hugely vindicating. I also add cocktail bitters to recipes, especially apple-pie (in my case, whiskey bitters often makes an appearance).

    Claire- thank you so much for your videos. I found you through NY Times cooking and have stuck with your content ever since. Love your baking books too. You make baking and cooking fun and inviting. I had no idea what I was doing but really wanted to get in to the art of it all and you helped to make that possible. I see at the end of this video you are open to ideas for more videos like this. My mom and I love the little Debbie Christmas tree cakes. They are crazy sweet but somehow amazing! If you find this idea interesting my mom and I would love to see you create these with your own touch of being less artificial and more home made. Thank you again for being so kind and thoughtful.

    In the same vein as this one, I'd love to see Claire take on the Holiday Pie from McDonald's. The pastry is more like a sugar cookie and it has that custard filling. These videos are so relaxing now that they aren't designed to cause Claire as much stress as possible, which is sometimes how the original conceit of this felt on the other channel. Now they feel like someone who is very much in their element breaking down how to achieve a mass-produced effect from home baking/cooking.
