Mini Keto Cheesecakes (recipe from Simply Keto cookbook)
Crust:
1/2 cup + 2T almond flour
1 T confectioners Swerve
1T melted butter
Cheesecake filling:
8 oz cream cheese
1/2 cup swerve
1 egg
1.5 tsp lemon juice
1.5 tsp vanilla extract
Fresh fruit
Combine crust ingredients and press into bottom of 8-9 paper muffin liners. Combine cheesecake ingredients until smooth, pour over crust. Bake at 350 for 15-18 minutes. Let cool and top with berries. Refrigerate for 2-3 hours before eating.

Hilarious, "what do you say, you just burped, what do you say!" I totally do that with our kids. That cauliflower bake looks delish!
I was blessed with thick hair too, but I am 73 now and I have been buying hair pieces and wigs to cover up bald spots so never take it for granted.
I make a similar cauliflower bake. I use frozen cauliflower, microwave it for a couple of minutes and put it in a food processor along with the cream cheese,bacon, cheddar, etc. that way the cauliflower gets “riced” and the cheeses get mixed easily.

With some motivation from my friend Jen on UA-cam, I did a pantry/freezer clean out January and February. Cleaned out so much that I was able to thaw out my deep-freeze. As a busy, working mom of 3, I prefer to do freezer meal plans for a month. So thankful I completed a 25 round batch right before people lost their dang minds and started hoarding food.
Our schools just announced closings but as a teacher I still have to work to create e-learning plans for my students.

I love that you take an inventory of what you have and make meals. I do this every so often. Inventory the pantry and fridge, then we make “use up meals”. They are very good too!
It’s nice to see the table set and y’all eating as a family not many people take the time to do that these days. I feel like it is so beneficial to kids growing up not only because it’s good family time but it also teaches good eating habits, conversation skills, and table manners.

Hi Jen I’m so glad you talked about family eating around the table I have wonderful memories of five kids and my dad and stepmom every night we ate at the dinner table…… I think it’s very important for family bonding and by the way I never made different stuff for my kids and my stepmother never made different things for us what was on the table was what we had and if we didn’t like it we didn’t eat. Lol
Girl idk how you find the energy to make dinner every night I’m a nurse too and work 3 12’s a week night shift and I’m always so tired and worn out I’m lazy and don’t wanna cook 😭
I probably wouldn’t make dinner after a 12 either!

Hi Jen! Are you able to give a little more detail on how to make the yellow rice in the IP? Do you follow rice/water ratio on package? Or is it different since it is done in the IP? And I usually do white rice with the pressure cook button. I have heard that you cannot adjust time or pressure level when using the rice function. I would love to do that. Thank you so much! I would not recommend doing it in the IP actually, it was very mushy :( regular rice works out fine but I did not have luck with the yellow!

For cheesy potatoes try crunching up frosted flakes on top before baking. It is amazing!!

Thank God, something that is NOT about this dam virus!! Jesus!! I have severe anxiety and panic disorder and all of this madness has me a got mess. I had a dam panic attack last night worrying myself so much about me and my daughter and what we are going to do financially to get groceries . I also have COPD so I'm not sure if that puts me at risk or not but still in my head, I'm all over the place. Anyhoo, your food always looks amazing. Chili really looks yummy!! I use chard stems too - I found a recipe years ago from Food52 that was hummus made with the stems of the chard and it was excellent. I’ve made that several times. Totally delicious.

I put a pinch of sugar in mine too..😃 my spices i use chili pwd, cumin, cayenne, paprika and then my go to's ( salt pepper, onion pwd, and garlic salt) ur styff looks yummy🥰
My exact chili recipe. Sometimes I use a squirt or two of catsup for sweetness if needed.

Never thought to use my mixer for meatloaf. Ive always just mixed it by hand like my mom does. I do use my mixer with the whisk attachment to make mashed potatoes

I have to agree with what you said about kids eating fruits and veggies. My son has never had a separate meal than us other than at restaurants. He either ate what was on the table or he got a PB&J (the only thing he could make himself) By 5 he loved all fruit and veggies including spinach and brussel sprouts. He also preferred broiled/grilled fish or shrimp over chicken nuggets. We once went out to a restaurant and he was maybe 5-6 and he was upset the kids menu didn’t include a grilled/broiled chicken/fish/shrimp. He ordered grilled salmon with rice pilaf and steamed broccoli off the adult menu. The server asked me if it was ok as it was a lot of food for an adult let alone a kiddo. I responded with well he wants to eat healthy and if I discourage it here how can I encourage it at home? He’s 14 now and still a healthy eater because the foundation was taught at family dinners at home.

Hey Jen, great video. For a little bit of insurance that your hash browns will be fully cooked because when they’re crunchy it IS an abomination to God, just set them on a microwave safe plate or dish and nuke them for a few minutes. You’re not cooking them completely but giving them a head start. Let them cool before you mix with the other ingredients. 😃
