Rachel ray was what got me into cooking and the food network, loved 30 minute meals so much!! I'm a nurse as well and so 30 minute meals are definitely my speed!!!
I make a delicious Orzo Pasta I bet your crew would like. This is a recreation of a salad I ate on a cruise. It is one of my favorite pot luck recipes as it goes with so many grilled meats as a side but is easily turned into a full meal. When I was catering this was one of my most requested salads. It lasts 3 or 4 days in the refrigerator so I often made this to take for lunch when I was still working. I love Rachael Ray. She is my favorite too. Orzo Pasta Cook a box of orzo pasta. While that cooks seed and dice 2 medium zucchini, 1/2 a red onion, 1 yellow or orange bell pepper seeded and diced (I like them for both color and sweetness but have used a red and green when that's all I had) and cut in half a carton of grape or cherry tomatoes. Add your drained pasta to the bowl with the vegetables and stir in 1 cup of your favorite pesto. I usually keep a jar of Barilla Pesto on hand and the jar is plenty. That's the original salad. To turn it into a full meal I have added some of the following items. I like to add crumbled feta or fresh mozzarella cheese, chopped kalamata olives, diced chicken, cooked shrimp, drained canned tuna or salmon or I have used leftover grilled salmon that I just flaked up. All the variations are delicious. This makes a huge bowl of salad. My daughter and I when she was still at home could take this 2 or 3 days for lunch. If it starts to dry out a little after a few days I usually just stir in another Tbsp of olive oil. I hope that you try this recipe and that your family enjoys it as much as we do.
All the meals look delish!! I used to religiously watch Rachael Ray, also. Thanks for the substitution ideas. So helpful during this time when 1.) So many of us are trying to shelf cook and not run to the store 2.) Our stores don't carry those items 3.) We need a cheaper sub. Thanks Jen!!
I love Rachael Ray! These recipes looks so good. I have a tip about rice pilaf. If you don't have orzo then you can break spaghetti noodles into small little pieces and use in place of the orzo when toasting it up. Turns out great. I use it all the time.

I have not finished watching the vid yet but had to stop when you mentioned that the Vodka pasta is a great pantry staple. I just make Rachels Black Bean and Rice Stoup last night and it is also a total easy right out of the pantry type of recipe. It also works great in the Instant Pot. It had so much flavor for such an easy recipe.
These recipes all look great. And I don't do it much lately, but I used to love altering cake mixes. One of my first ever cookbooks was The Cake Mix Doctor. Think I got it for a high school graduation present lol

Jen when making the vodka sauce also add in a touch more cream and fresh Parmesan chesse I make it all the time it will be even more creamy and I add sausage to mine as well
Hi Jen, I love using your recipe recommendations esp since they often use ingredients I have on hand and need to use up. One current ingredient I have in my freezer that is baffling me is frozen chopped spinach since we aren't smoothie fans. Hi jen... Question on the burgers. I tend to purchase ground turkey/chicken as they are low cost. To make them into burgers would you do the same as beef? I definitely season accordingly. That tuna salad looks yummy and will try!💖

ive made the vodka cream sauce b4 and those oklahoma burgers. I lessened the amount of vodka for the sauce and it was just as delicious. I have a couple of other favorites of hers - the portobello mushroom philly cheese “steaks” and the roasted tomato vodka soup (from her magazine years ago - it is in one of her books forget which one). It is our favorite tomato soup. I adapted it for the instant pot. I make it very often.

Awesome video as usual. Born and raised in Oklahoma and I have never heard of those burgers.
Instead of regular salt, try garlic salt and pepper, on the asparagus next time. That’s how I make it and it’s absolutely delicious!
