It shouldn't be for a pastry chef really. I don't think I've seen anybody on the Great British Bake Off fail at it - and some of them have trouble caramelizing sugar.
A common misunderstanding is that claire CANT temper chocolate but thats never really been true. She CAN temper chocolate, her problem has always been that she finds it very boring and very tedious and so she avoids doing it. Thats why now that she has the sous vide technique she is less reluctant to do it because it doesnt actually require her to do much with it.
@@BerserkerTwo Then why does she keep failing at it when she does try to do it? She only started trying the sous vide method because she kept failing at the seed method. If she just finds it boring, why was she not able to temper the chocolate in this video?
@@BerserkerTwo nope, she has a hard time doing it. Sometimes she even fail with the sous vide method. Never understood why, I've been tempering chocolate since I was 17 years old, saw a guy teaching on a cooking show one day and that was it. And I don't need to use any thermometer

this woman continually amazes me in how she tears apart millions of dollars in brand and culinary research in a week with a baking sheet, tempered chocolate, and pure frustration.
This is absolutely one of the most informative "foodie" "science" shows on the internet. I loooooove these people!! The chemistry in the bowl and in the workplace is amazing. It doesn't hurt that they are so knowledgeable and so creative and not afraid to make keep trying until they get it "right on". They are wonderful and thank you all for a great show!!!

You know, I gotta say I love love LOVE when other people come in to help Claire!! Like, I don't mean to make it a forced point that someone always will, but whenever it happens, it makes my entire soul smile. When it feels like Claire has just gotten stuck and then gets frustrated, it's so good to see someone else come up with som ideas to just brainstorm with her, and then she always seems to find new energy for the project! I'm especially thinking of the jelly belly-episode, haha.

Claire if you had watched the Unwrapped episode on Butterfinger, they mix the corn flakes into the hot sugar mixture before the lamination process. Which most like makes the sugar much more brittle.
Brad's interactions with Claire is essentially part of the show. It just isn't Gourmet Makes without a Brad moment.
