When it comes to the powdered cheese state, all pale in comparison to Nacho Cheese Doritos, continually perfected by science and consistently beloved by the masses since 1972. Join pastry chef Claire Saffitz in the Bon Appétit Test Kitchen as she attempts to take Nacho Cheese Doritos to the next level and make them gourmet!
*The third state of nacho cheese, cheese sauce, is controversial in the nacho community and for our purposes we are disregarding it. I just love how Claire is basically a scientist in Gourmet makes, throwing hypothesis, making experiments to confirm or denying them and then iterating by throwing a new hypothesis based on the results and trying again. I really loves her creativity and resourcefulness

Her knowledge of food is really underrated. They really just cut scene over her amazing ability to tweak recipes based on scientific processes. Any given episode she makes like 100 on the fly food science decisions based on just her own knowledge

Hi Claire! An idea to potentially improve your recipe. In addition to the monosodium glutamate that is providing umami, the original Doritos also contains both disodium inosinate and guanylate, which are chemicals that boost the umami sensation on the tongue. This is the main idea behind the basic Japanese dashi where Kombu (containing monosodium glutamate) and Bonito flakes (containing inosinate) combine synergistically to make a wonderful yet simple stock. Guanylate can be found in abundance in dried shiitake mushrooms. So what I would suggest you try adding to your recipe in small amounts are 1) powdered bonito flakes and 2) dried shiitake mushroom powder. Hope this helps! :)
These gourmet makeovers with Claire are so fun and entertaining , but, I bet, in real life , it’s VERY stressful for her. She constantly has to ask her peers and managers to taste try, then the big guns come in and taste it and give their opinions . She has to be going in ten different directions at once .

Have to say I actually made this recipe just now and the flavor profile is so much more accurate (and simultaneously kind of elevated) than I anticipated it would or could be. Absolutely nails the umami ‘just one more chip’ flavor. It definitely requires some uncommon ingredients, but would encourage anyone to actually give this a try!

Claire you have the perfect iterative process of testing and improving. Major food products have extraordinarily high amplitude flavor profiles (like Howard Moscowitz describes via Malcolm Gladwell's Ted Talk on Choice, Happiness, and Spaghetti Sauce). It's so tough to get a blended amplitude flavor profile where you don't taste outlier elements separately. Example: generic cola tastes like a bunch of different flavors: cinnamon, caramel, corn syrup vs. a Coke which tastes like a Coke. The difference is how carefully blended and balanced the flavors are.
