Not too hard, just put a glass or metal bowl over a pot of boiling water, melt 2/3rds of the chocolate, and stir constantly until melted, and add in the remaining third, stir until smooth and glossy. Another way is to microwave it in 30 second intervals, stirring every time the time is up, until chocolate is smooth and glossy, although this technique is not 100% reliable.

@@dpchiko17 Basic Grammar school math solves this issue. They shrunk by 1/4 of an inch so that means you would add 1/4 inch to the next batch. It's too damn simple. Maybe it's because I've done basic trade work, but I also cook and have a degree in cooking so idk, it's just basic simple math to me. I'm 32 for reference.
@@hailitalia86 it depends on how it shrinks. If it consistently shrinks by 1/4 inch regardless of its initial size, then yeah you would just add 1/4 inch. If we assume it to shrink by 25% (aka shrink to 3/4 of its size) then you need to multiply by 4/3, hence why they increased it to 1 1/3 inch in the video.
To be fair, that two minutes wasn't spent determining that an eighth of an inch was a 25% loss (since it wasn't), it was two minutes of Claire discussing other stuff, then saying the crackers shrunk to about three quarters of an inch. Which, to those saying the metric system would solve that issue... Nope. This whole damn thing, both the joke in this comment and Claire's actual math trouble in the video, has nothing to do with US vs metric units. It involves percentages and fractions, which are the same regardless of your unit of measurement.

I'm from Yucatan, where Achiote (Annatto seed) is produced, we use It in a lot of our regional food recipes, mainly in cochinita and pib (earth oven tamal). It brings a lot of flavour and color. Is very interesting how you used it in a cookie/snack recipe.
