Becky, and easy dinner you should check out is a Scottish recipe called "Mince and Tatties", which is a ground beef, onion, carrot and gravy one-pan dish served over mashed potatoes. It is my family's new favourite meal. It comes together in about 30 minutes, and is delicious and thrifty. It is absolutely loaded dwith flavor. You and Josh would love it. There are lots of recipes online for it, since almost every Scottish family has their own slightly different version of it, it seems.

I love that you use the mixing spoon to drizzle some sauce onto your tasting spoon to prevent double dipping, even if you’re only making food for the family. This awareness is lacking in so many other cooking videos I’ve seen where the meal is made for friends and ppl not in the household.
Goulash is another dish that cooks in one pot. So hearty and packed with flavor. A favorite around here and so easy

If you use carrot, onion, and celery a lot, you can make a quart jar of dehydrated/ freeze dried mixture and then you have a quick soup starter!!!

Becky, thank you for this video. I do this most of the time. It's just my husband and me. I'm older and don't always feel like making a big mess in the kitchen. When I feel good, I will make up large dishes, divide them up into one portion servings and freeze them. But the idea of just having a pan, or two, is much better for me to handle. I’m newly retired and I’ve never gotten into cooking or gardening. This year’s garden didn’t do as well as I was hoping but hopefully, with your inspiration, it’ll be better next year. But I was able to make tomato soup from the garden, which was delicious!

I made the garlic chicken gnocchi tonight for supper and....yeah.... it's going into the regular meal rotation! Deeeeelish! 👌 Thank you for sharing it, sister!
I make homemade hamburger helper often. I sometimes put some of my homemade taco seasoning in it while it's cooking, and then top it with taco toppings.....chopped tomatoes , salsa, sour cream, and grated cheese.
To make this even easier I brown about 10 pounds of ground beef with onions, garlic and salt and pepper and freeze 3 cups( close to 1 lb) of the mixture in bags. Super simple to pull a bag out and use in hamburger helper, tacos, spaghetti sauce, shepherds pie, etc.

I agree with you on Onion in everything! I have kept diced onions in my freezer for years and I love how easy that makes all my meals!! I finally invested in a veggie chopper from Amazon to help with the days I come home from Costco with a lot of onions!
My philosophy? If it doesn't have chocolate, it better have onions! One or the other is essential.

Did the gnocchi skillet meal, used sausage instead of chicken. I had two bak choy and a can of Italian tomatoes with zucchini for the veggies. Just a bit of parmesan cheese for the mozarella. It was incredible! And so fast and easy. Definitely a keeper in our meal rotation. Becky you are such an inspiration, you have refreshed my love to experiment and cook again!
I love the tops of the celery for tuna and egg salad sandwiches! Which would go great with my favorite corn chowder!!!!😀❤

What a nice variety of recipes you've chosen for this video! The hamburger helper is a great family meal. Economical, delicious and no crazy chemicals and additives that come in the commercial version. If you want to change it up even more, use some canned tomatoes in it.

A long time ago I ran across a recipe called cheeseburger chowder which is basically potato soup with ground beef and the recipe called for American cheese. I'm not a fan of American cheese so I used cheddar and my family loves it. The recipe also called to thicken the soup with flour/water mixture, but my sister showed me a cheat by thickening with potato flakes instead. It's super fast and easy and a family favorite. I'm sure the original recipe called for other things to ramp up the cheeseburger flavor, but after all these years I don't remember 😂. I've used a variety of different things to tweak the flavor, sometimes spicy 🔥, sometimes savory. I've used venison, hot sausage, chicken. A cheesy potato soup base is an awesome start to a warm comforting supper.😊❤

I made my own sundried tomatoes this year. Freeze dried sliced tomatoes, put in a jar and add oil!! Easy!! And I made gnocchi, thanks to you! 😊
I did something similar... but I dried them in the oven and then added some Italian herbs to the oil yummy!

My family loves homemade helper. I add some flour to the beef and onions b4 adding the liquids to make a thicker sauce. We like Italian herbs and 8oz of tomato sauce with the broth. Finish with cream and shredded cheese 😋
I keep quartered lemons and limes in a bag in my freezer, so that I always have them on hand. The go a little softer when thawed but if you’re just using them to squeeze on food they’re fine.

I made chicken corn chowder the other day with a freezer prep I had made containing chicken, carrots, onion, garlic, and caelery seed. I had planned to use it for chicken noodle soup, but had a lot of canned creamed corn on hand, so I added a couple cans of that and some homemade chicken broth. Yummy!
Also, made peanut butter chicken with broccoli and a side of sauted bok choy day before yesterday after watching you do a freezer meal prep for peanut butter chicken. It's one of my mom's favorite meals. She was in the Navy and stationed in Hong Kong in the 80s and used to make a lot of Asian food while I was growing up. I took some of the chicken over to her house for her to try. She said it was amazing:)
Just finished making 6 loaves of pumpkin bread that I put in the freezer and made a huge batch of tomato-cheddar biscuits that I froze the dough for later baking after watching you do it.

I loved this video! I like your ideas for minimizing mess and dishes. Although I don't mind cooking messes (I am really good at making them!) sometimes it is so helpful to have go-to recipes that are minimal mess. Hey, Becky, that would make a great name for a video of 5 recipes--Minimal Mess!
I made the Tuscan Chicken with Gnocchi and subbed the sun dried tomatoes too. It’s so yummy!
Reserve a little of your broth to heat in the microwave to add to the coconut milk can to collect all that is left behind in the can. 😊
My mom used to make corn chowder all the time because it was a super cheap meal to make. It's one of my favorite dishes my mom made us. Brings back memories every time I make it.

Another important note about the homemade hamburger helper is that making it homemade reduces the sodium dramatically. The boxed version has like 1,000 mg. of sodium or something per serving! Other than cooking with fresh ingredients, you don't mention much about cooking for health reasons, but reducing the sodium is terrific! I love your creativity and confidence to add ingredients not in the original recipes. Your willingness to experiment gives me incentive to do the same.

I like to add the oil from the sundried tomatoes in as half the fat to cook the rest in. So half the butter and replace with a couple tablespoons of the sundried tomato oil to cook onions and chicken in. I also add a little garlic when the chicken is almost done

Try adding can of diced tomatoes to the homemade hamburger helper....so amazing! My mom made this all the time when I was a child, and I've continued to make it, too. It's a recipe that is quick, easy, versitile, and delicious.

Hey Becky! Great recipes! For more options of long term storage and ease of cooking- celery, carrots, grated cheese, and corn all freeze dry and reconstitute amazingly well! I’m using my freezer for meats this season and freeze drying everything else and it’s working great for me. Might give you more space for your freezer meals! 😍
Can confirm that we love our freeze dried sweet corn! My mom doesn't like freezing or canning corn, but the freeze drying makes one incredible product. Occasionally my dad has been known to eat a handful or five like candy. :D
Great job as always Becky! I do the peppers, onion and celery and cheese in my corn chowder and your right the cheese makes all the difference! I make a new recipe almost every night, not that I don’t make it again at some point, especially if we really like it. However, I usually change up any recipe to suit our tastebuds. It is just myself and my special needs 32 year old granddaughter and she loves my cooking so I am always trying to keep it interesting. I do have a different theme every night of the week but hardly ever the same recipe twice, except for our holidays!

In local markets are now "boneless skinless chicken quarters" which are leg and thigh attached parts. I've found they're the easiest,best, and fastest dinner!! I've fried, braised, baked, sliced, diced and just about anythinged to them!! The meat is forgiving for long cooking times and absorb marinade beautifully. Easy to trim excess fat so are healthy. They're a game changer for my family!
one of my favorite recipes my grandma did was baking chicken quarters with a slab of butter on each piece, sprinkled with some garlic powder, salt, and a generous amount of cracked pepper, slow roasted and the melted butter spooned over the meat frequently. OMGoodness, the tenderness of the meat and the spices were sooo good!

Jalepeno cheddar sourdough would go really well with that corn chowder. Ballerina farms sells sourdough starter in powder form. Goulash is also a great one pot meal.

Corn chowder is my favorite soup. My secret is to cut up a few slices of bacon and cook it till crispy and then pull it out and set it aside till the end. Next I cook the onions in the bacon grease and then add the potatoes and broth and cook till tender. Then add creamed corn, cream, and the bacon. It’s SO good 😊. Like you, it takes me back to my childhood.

I have to admit I love your cooking videos way better than any of the others. I especially enjoy the videos of you cooking with your mother. These meals looked absolutely delicious. They made me very hungry. I've never had corn chowder but it looked quite delicious. Also the chicken and gnocchi looked so awesome, I wish I could get it myself. I've never made gnocchi but some day I'm going to try it and then I hope I remember yiur recipe.
