Been enjoying your videos and have gotten so many great tips from you! Here is a tip I would love to share with you, always wait for the water to come to a boil before adding your salt. If you add salt to the cold pot, the salt will go straight to the bottom of the pot or pan (sink( and eventually you will see 'spots' when washing out your pot from the salt sitting down there. When poured into the boiling water, it will automatically mix in and dissolve :)

Hi Becky from England. Minds think alike even thousands of miles apart. I have spent most of today doing pasta, chili, and ragu sauce based meals to freeze. I did one just for my self because I honestly didn't think my hubby would eat it. He did and then proceeded to eat half of mine also. As well as the one I did for him. I used left over chicken shredded it with shredded crab sticks. The sauce was a mushroom base with peppers red onions shredded carrots and broccoli stems and oyster mushrooms I mixed it with a garlic and herb crème cheese. With mozzarella, monetery jack cheese. Cheddar and parmesan and crème fresh. Linguini pasta added and I loved it. I do love this channel. You make it welcoming and I want to try the things you make which is always a good sign. Another great line up of a family of dishes! Loved that Josh was featured, too. [Oreh-ki-ETT-ay] is the Italian pronunciation. It means "ears" in Italian. It is a great pasta design because the little impression captures the sauce. Beautifully done, Becky.
Becky, thank you for sharing this with us! I did leave the following review :) Lol, its a long one, but thought I would share it over here! (I still have to watch the rest of the video!) "Becky at Homeacre Homestead did a video that had this as her first recipe. I was in town, so was able to get the high maintenance ingredients (I am 45 minutes from the nearest grocery store)like Heavy Cream and the Grape tomatoes. I did modify mine a little bit. I dont have any chicken stock on hand because I just dont have the room, so I end up having to make do with bouillon a lot of times. I have on hand for a lot of recipes that are tomato based the Knorr Tomato Bouillon, so I used that instead of the chicken broth. I made the whole pack of bacon, oopsie! So, I had a lot for the recipe… I ended up using 3 tbsp of tomato paste as well and 3 cups of the tomato bouillon. I also sauteed a medium to large onion in the bacon drippings to give it the extra flavour that I was missing from the better stock. I also goofed and added the heavy cream last. I tempered it because I was really worried that it would curdle. I think even though I goofed on a lot of the recipe. I was trying to remember the recipe via the video while I was cooking. It turned out absolutely fabulous! Today was Stranger Things Sunday where we try out strange things to us, and lol, would catch up on the show 😛 Thank you for sharing such a wonderful recipe, and letting Becky do a video on it. This is one of my favorite dishes as a child and my Noni would make them Al Mano ( by hand) in the spring. Orecchiette: Or-e-key-eta-e it means little ears . This dish hales from the Puglia ( G is silent) region of Italy, and traditionally is made with broccoli de rape which isn’t broccoli at all, or broccolini can be subbed. Love watching your videos. You often give me inspiration to cook more meals for myself, instead of cooking the old tired favorites. Thanks for getting me moving a bit more. Just a little tip about Italian, in case someone else hasn't already mentioned it: "cci" and "ci" words are pronounced with a "ch" sound (think cappuccino or Da Vinci), "cch" and "ch" words are pronounced with a "ck" sound (orecchiette, bruschetta, Pinocchio). Hope this little tip helps with future cooking words.
So thankful you help me smile all the time!! Thank you dearest Becky! Oh so wonderful to hear Josh's voice again, so miss him cooking and tasting with you!
Hey Becky I love your recipes I’m really interested to try the 2nd one and 4th one I’ve got a quick tip for you for your fresh herbs. I use a small fork and pass them through the fork it takes all the leaves 🍃 off effortlessly without having to pull each one then I chop them . Happy cooking everyone 😊
If you add little water to the bacon it helps render the fat and when it cooks of the bacon browns very quickly. It works really well when making bacon bits, I cover the cut up bacon in water and it let it cook.
Hi Becky, I am a new subscriber. I just tried the first recipe today! It was AMAZING!!! My friends came over tonight and her daughter ate three plates of pastas. They said I can open my own restaurant with this recipe! THANK YOU very much for sharing it!
Love getting Josh's opinions as well. And kudo's to you for making all 4 of these in the same day! Guess you won't need to cook dinner for a few nights this week! Thanks!
Orechiette means little ear in Italian because that's what they look like. It is pronounced or-reh-KEE-et-eh and is one of my favorite pastas to cook with because of the way it holds a creamy sauce like the one you made. Also, If you add chicken to the last dish with the lemon and capers, you'd have Chicken Piccata, a dish I believe I've seen you make before. All of these meals look delicious. ~ Lisa
The lemon caper sauce would be my favorite. It's good, simple Italian fare. Well done Becky. It's or-rec-key-et-tee. It means "small ear" in Italian and it's one of my favorite pastas.
Might be a very silly question as I never had to boil pots of water consecutively but could you not use the same water for each pasta batch instead of fresh water each time?
You can get just as much of a depth of flavor from the Yum Yums on the bottom of a non-stick pan as you can from a stainless steel pan. The same flavor builders provide the dish with just as much flavor. Non-stick pans don't absorb flavor bits and take away from the end product. The same "leftover flavor" is there whether you are deglazing a non-stick or stainless steel pan.
I forgot to state my vote! I ranked them 1, 3, 4, and 2 - but they were ALL so good for different reasons!
That's exactly what I was telling you.... but obviously, you couldn't hear me all the way from MA!!!! LOL

Becky, I absolutely love your videos. I think I’ve watched everyone and I only found you last year. I’m wondering in the sauces that you make I’d love to see some recipes without so much cream and cheese some time.
I'd love that too!
There is nothing more fun than seeing the delight in your eyes when you taste your recipes! Love it
The Sun dried tomato pasta looks delicious, would make a great cold pasta dish.
Oh my word! I tried watching other cooking videos but your videos Im actually learning from your videos because it's you love cooking. You cook fresh most of your ingredients...thank you so much
Love watching your videos.
Becky, you are a UA-cam Sweetheart!! Love the new homestead, totally gorgeous! The landscaping is outstanding!
If you add little water to the bacon it helps render the fat and when it cooks of the bacon browns very quickly. It works really well when making bacon bits, I cover the cut up bacon in water and it let it cook.
Walnuts or almonds toasted would make a great crunch too!
Each of these dishes looked simply elegant. Also, like your knife skills 😊
Hi Becky, I am a new subscriber. I just tried the first recipe today! It was AMAZING!!! My friends came over tonight and her daughter ate three plates of pastas. They said I can open my own restaurant with this recipe! THANK YOU very much for sharing it!
I love capers too! I could eat number 4 every week.
~ Lisa
Totally a favourite video. All of these recipes are exactly my family's type of dinner xx
The lemon caper sauce would be my favorite. It's good, simple Italian fare. Well done Becky. It's or-rec-key-et-tee. It means "small ear" in Italian and it's one of my favorite pastas.
I always fry a few pieces of bacon when I start soups too! I save a little of the bacon grease and scrape the pan. Such good flavor!
Perfect timing, I am thankful this came up to put me in a better mood!
All 4 sounded absolutely delicious. Giving them a try. I think the sundried tomato one would be a #1 here.
It's pronounced
"or eh key eh teh"
It means "little ears" because of the shape. I like how you attempt the difficult, whether words or recipes.
Might be a very silly question as I never had to boil pots of water consecutively but could you not use the same water for each pasta batch instead of fresh water each time?
I love how your eyes lite up when you eat something you made and it’s delicious ❤❤❤
Hey Becky. I want to pass on a tip I learned. Always wait until your water boils to salt it. Waiting helps extend the life of your pots.
Thank you Becky! I needed this! I’m struggling so hard with meal planning burnout. Can’t wait to try these!
These all look delicious! That said, UNsalted water comes to a boil faster than salted. If you’re in a hurry salt the water after it boils.
I like your apron it looks like a cutain very creative
Yeah!!! The next half hour sorted for me… I’m watching Miss Becky so I’m not moving from my seat.
