I've been thinking about making recipe books for my daughters. I miss my mom and her cooking. She never used printed recipes and I have no idea how they were made. I want them to have my recipes for when I'm no longer here. I love that your family will always have these videos to look back on one day.
I did this recently for my daughter's, and they love them. I update it about once a year. My sister in law helped make a cookbook for my mom's recipes years ago, and that is where I got the idea!

I put spinach in a ziplock bag so it takes up less space and use it in smoothies and pasta. Going to make that pasta sauce because I have cherry tomatoes in the freezer from my garden.
Tip: when folding in egg whites, take a bit and lighten up the flour mixture first, then fold in the remaining whites. It’ll save you time and ensure that lift.

BTW for a Genua sponge like this, traditionally a metal spoon is used to fold the rest of the cake into the beaten egg whites, supposedly it keeps more air in the mix and therefore the cake will raise higher and be lighter. For the same reason the almond flour is sieved before use. Although Becky’s cake looked pretty good done with a plastic spatula.And obviously tasted great!

My Viennese neighbor back in the 60s taught me to put a bit of dairy in the meatballs to keep them moist and I've done that for the past 50 years. Nowadays that I can't eat any red meat, i still use a tablespoon of yoghurt, cream, sour cream or even powdered milk in the avian ground meat or even ground fish balls. I also love using the olive oils from my conserves. I buy rather expensive Spanish Tuna in Olive Oil and later use that oil for Asian recipes wherever you might use a fish sauce or anchovies. And speaking of tuna, Tuna Pot Pie...Pie Crust, Tuna, White Sauce, Veggies. is a wonderful treat all year long. you could even toss in other Seafood to keep it interesting. Pot Pie Freezer meals...freeze the fillings in molds the size of your pie plates (put a freezer bag in the plate and fill it as you wish) then when you want a pot pie just roll out the dough put the frozen filling in the middle and bake a bit longer for defrosting the filling. when combining two batters one thick one thinner (whites and yolks wars). add the thinner TO the thick first half and then gently folding...I've done it backwards tons of times myself... If you don't like lemon use orange or lime or go wild with grapefruit. hehehe hugs Jim Mexico

Thanks for sharing the White Chicken Enchilada recipe. I used Pepper Jack cheese as that is what I had on hand. Husband liked it but felt it was too bland, so I will make it again but with a bit more spice. Again, thanks for sharing..
My friends and family have had a terrible month/week. Your channel is so soothing. Not only did you inspire me to grow my own tiny garden this summer, but just watching you cooking and cleaning your space, and learning about freezer meals, and food preservation has become such a soft place for my heart when I'm grieving or my friends or family are struggling. I grew up in Vancouver and Kitsap county, up north, but currently live in New England. I love it here but also enjoy seeing glimpses of home. Washington state will always be home. Hey Becky, great ideas again! What I do, is when I'm making chicken pot pie, I made loads extra of the chicken mix and freeze it, so when I feel like chick pot pie, I have everything in the freezer and, I've made mini 2 bite pies, or individual, or even handpies, and when everything is ready, is so easy and my family loves the pot pie handpies for on the go! Happy holidays from the frozen north!
All left over turkey or baked chicken gets put into 2 c sealer bags and frozen for future pot pies or chicken casseroles. Your canned chicken would be excellent for this, also. And no, you do not need to refrigerate the filling. That would add to the baking time, and is completely unnecessary. Your pie looks wonderful!!! Boursin cheese is easy to make at home, and a fraction of the cost.
I have to tell you that I make you chewy oatmeal raisin cookies pretty regularly and my family requested them as the main Christmas cookie this year. I've been trying to find the perfect oatmeal raisin cookie for years and yours is the one I keep coming back to.
My favorite pot pie recipe is from America’s Test Kitchen. They tell you to make the filling except for the frozen peas. Cut the heat and stir in the peas straight from the freezer so that it cools the filling enough to keep the crust from getting too warm!

I freeze my tomatoes instead of canning them, but never thought to freeze my cherry tomatoes whole like that. Great ideas! Thanks so much for these great recipes.
We add peas, mushrooms, and broccoli to our chicken pot pies. Also we use Martha Stewarts Pate brisee pie crust. This French (I believe )crust makes all the difference.
Becky, I learned that when folding whipped egg white you go the opposite way. Fold a little of the whipped whites into the other mixture first. That'll lighten it & make it easier to fold into the rest of the whites 😊
When making chicken pot pie, you definitely want the feeling to be on the cold side so that your cold butter in the pastry does not melt and you get a beautiful golden flaky crust

I came up with an idea with the boursin cheese. Cook lasagna noodles. Dry. Smear on the boursin cheese and shredded rotisserie chicken and green onions or chives. Roll up and top with cheese sauce. Very good.
A good way to add flavor to the orzo it to brown it in some butter before adding it to the dish to cook. My mother in law does this and the flavor just pops.

Great video, Becky! When I saw the title, I immediately thought of the feta and tomato pasta. I like how you changed it to make it your own recipe. I rarely make a recipe as written. Teaching people to use what they have on hand and modify recipes is a great skill!
I made the chicken and orzo last night for dinner - it was delicious! I did not use rosemary sprigs, but I did have a new grinder of red wine rosemary himalayan salt that I just picked up at Trader Joes, so I used that. It was perfect! I would definitely recommend and make this recipe again :)

Have many recipes on hand. Only use a few regularly. We are planning to have soup options to mix and match from a base broth since we enjoyed this at a restaurant. We each liked different combos so this could be interesting at home with fewer selections.
So I halved the Tomato and Boursin Cheese recipe with a few tweaks for my liking. I added Basil, Garlic, Fresh cut Onion, Oregano, and I didn't have spinach so I used Zucchini and at the end I added green Olive Juice and Green Olives. OMG I actually did have to use Pasta Water and thank Goodness I kept 2 cups. I used about 3/4 cup though I cooked 1/2 pound of pasta for my small version, but the Parmesan was over the top. I will continue to tweak this, but Amazing smell and quick meal in 40 minutes. Thank you.
Hi Becky. I’ve loving watching you for now over a year. You remind me of one of my favorite cooks, Rachel ray. I became a subscriber because of your garden. I’m obsessed 🤩. Tip I wanted to share ( I do myself as well, life changer) is having a garbage bowl while cooking on the counter. It’s so easy and makes cleaning so much faster. Something I learned from Rachel ray. 😊. I love your channel and learning a lot.
My suggestion for rosemary and thyme is to grind it into a powder. We found that the flavor is also more subtle. When I first started using dried herbs the pieces in the food bothered my husband. Even fresh rosemary I grind in water. I grind/blend them in my nutribullet. There's usually not enough for my vitamix dry. Make sure to wash in the dishwasher after use to get rid of residue.

Thanks for the tip for the spinach. I'll be using that. A tip for you, when using whisked egg whites and I have to mix anything into them I use a cold metal spoon very gently. It doesn't seem to knock the air out. Thank you Becky.
Chicken pot pies are also a great way to turn leftovers into another meal. A Mindful Mom has an awesome Chicken and Dumplings Instant Pot recipe that I used the leftovers for my pot pie. I just added frozen veggies and the pie crust. So delicious. Sour cream chicken enchiladas are my favorite. I use to make them for my grandmother. Our youngest daughter is lactose intolerant so it’s one I haven’t made a work around. That may be on the list for next week. Precious memories.
It was hilarious how 1 or both of your little dogs magically showed up for EVERY taste test, except the almond cake one. You certainly had their undivided attention, one's head cocking from side to side as you took bites. When you taste tested the chicken pot pie, I thought bc of the camera angle we wouldn't be able to see a dog if 1 was there. I about fell off my chair when his reflection showed up in the refrigerator at the last moment! As soon as your spoon clanked that last bowl of pasta, the 2 of them appeared. The spontaneity is priceless. I don't think you could plan better theatrics than real life provides. Btw, all of the food looked delicious, just as it always does. God Bless!❤
Chicken pot pie also freezes excellent. I made 3 sourdough chicken pot pies this fall (1 for dinner, 2 for the freezer). I cant wait to have a frozen one over the busy holiday season!

Quick tip for pies to get a nice crisp base and stop you getting a soggy bottom, put your baking sheet in your oven for half an hour while you oven gets up to temp, make you pie and get it ready to go in, then when it's ready to bake , take the tray out, put the parchment on the tray to protect it and make for an easy clean up if you get a spillage, then put the pie on the tray and get it in the oven quick as you can, I used to do this and it makes a big difference to the base of any pie. You can do the same thing when you make pasties, just make each one on a piece of parchment a bit bigger than you need, do the same thing with the baking tray, and use a bench scraper to lift up the straight side of the pastie and steady the other side with your hand to put it on the tray, it takes seconds and helps them cook from the bottom better. Hope this helps, I had years experience of baking before I had to stop because of my spine, I still dabble when I can.
I could watch you for hours. In fact I do. Funny thing is, I love to bake and cook and even can and freeze stuff. I am 75 years old and you have given me a renewed interest in continuing to cook and bake and canned. I’ve even got excited about making a couple of raised garden beds in my backyard. Of course I don’t know if I have enough energy to raise it or not. L O L but it gives me renewed interest. Our neighbor has a rabbit that they let run loose. His name is Rex and he loves a lot of my plants. So, I’m trying to decide how I can keep him out of my garden. 😂😂our Spring time will prove interesting to say the least. I live in SE TX. Hi, Becky I got to ask you do you ever bury your veg scraps under your new plants ?? I do this in England. Vegetable scraps under the soil can be used to kick-start a new garden bed too. They add bulk, enrich the soil and will slowly improve soil structure if you add a few worms at the same time. It's rather like creating a miniature worm farm underneath your veggies. I have two worm compost bins as well. they are both well established now. I also have vertical hanging herbs. It's taken me many years but now all walls that face out to our back garden are covered in vertical hanging plants from herbs to small fruits and veg and flowers. My mind is blown from the spinach in the freezer. Why did I never think about that, I only use it for cooking and smoothies anyways so frozen works fine. I usually just freeze it when it’s starting to go bad.
I always buy the bagged prewashed spinach to freeze, way more convenient to store than a rectangular plastic container. I always throw it frozen (just like she did) into recipes even if it doesn't call for spinach to get extra vitamins and nutrients. It melts down almost immediately.

Beautiful pot pie Becky! When I make my pot pies. I make the filling in one cast iron. I put the pie crust in my tiny cast irons. (I think it’s a 4~6 inch) so I end up making single serve pot pies in the cast iron. You don’t have to do cast iron. But it’s an idea to maybe use ramekins. I love the frozen spinach idea!

Pot Pie Freezer meals...freeze the fillings in molds the size of your pie plates (put a freezer bag in the plate and fill it as you wish) then when you want a pot pie just roll out the dough put the frozen filling in the middle and bake a bit longer for defrosting the filling.
when combining two batters one thick one thinner (whites and yolks wars). add the thinner TO the thick first half and then gently folding...I've done it backwards tons of times myself...

Hi Becky. When making your chicken pot pies, you can also add cubed potatoes as well. I do cook the potatoes half way and then add to my sauce.

Hey Becky, great ideas again! What I do, is when I'm making chicken pot pie, I made loads extra of the chicken mix and freeze it, so when I feel like chick pot pie, I have everything in the freezer and, I've made mini 2 bite pies, or individual, or even handpies, and when everything is ready, is so easy and my family loves the pot pie handpies for on the go! I make the enchilada exactly like that except add fresh garlic to the butter in the white sauce and we call it chicken picado. It is so, so good!
All left over turkey or baked chicken gets put into 2 c sealer bags and frozen for future pot pies or chicken casseroles. Your canned chicken would be excellent for this, also. And no, you do not need to refrigerate the filling. That would add to the baking time, and is completely unnecessary. Your pie looks wonderful!!! Boursin cheese is easy to make at home, and a fraction of the cost.

My favorite pot pie recipe is from America’s Test Kitchen. They tell you to make the filling except for the frozen peas. Cut the heat and stir in the peas straight from the freezer so that it cools the filling enough to keep the crust from getting too warm!

We add peas, mushrooms, and broccoli to our chicken pot pies. Also we use Martha Stewarts Pate brisee pie crust. This French (I believe )crust makes all the difference.

Becky, I learned that when folding whipped egg white you go the opposite way. Fold a little of the whipped whites into the other mixture first. That'll lighten it & make it easier to fold into the rest of the whites 😊
When making chicken pot pie, you definitely want the feeling to be on the cold side so that your cold butter in the pastry does not melt and you get a beautiful golden flaky crust

I came up with an idea with the boursin cheese. Cook lasagna noodles. Dry. Smear on the boursin cheese and shredded rotisserie chicken and green onions or chives. Roll up and top with cheese sauce. Very good.

I made the pasta sauce tonight and it was AMAZING! Another plus for this recipe is that it is made in a single pan so clean up was really easy!
A good way to add flavor to the orzo it to brown it in some butter before adding it to the dish to cook. My mother in law does this and the flavor just pops.

I made the chicken and orzo last night for dinner - it was delicious! I did not use rosemary sprigs, but I did have a new grinder of red wine rosemary himalayan salt that I just picked up at Trader Joes, so I used that. It was perfect! I would definitely recommend and make this recipe again :)

Have many recipes on hand. Only use a few regularly.
We are planning to have soup options to mix and match from a base broth since we enjoyed this at a restaurant. We each liked different combos so this could be interesting at home with fewer selections.
So I halved the Tomato and Boursin Cheese recipe with a few tweaks for my liking. I added Basil, Garlic, Fresh cut Onion, Oregano, and I didn't have spinach so I used Zucchini and at the end I added green Olive Juice and Green Olives. OMG I actually did have to use Pasta Water and thank Goodness I kept 2 cups. I used about 3/4 cup though I cooked 1/2 pound of pasta for my small version, but the Parmesan was over the top. I will continue to tweak this, but Amazing smell and quick meal in 40 minutes. Thank you.

Tip I wanted to share ( I do myself as well, life changer) is having a garbage bowl while cooking on the counter. It’s so easy and makes cleaning so much faster. My suggestion for rosemary and thyme is to grind it into a powder. We found that the flavor is also more subtle. When I first started using dried herbs the pieces in the food bothered my husband. Even fresh rosemary I grind in water. I grind/blend them in my nutribullet. There's usually not enough for my vitamix dry. Make sure to wash in the dishwasher after use to get rid of residue.

Thanks for the tip for the spinach. I'll be using that. A tip for you, when using whisked egg whites and I have to mix anything into them I use a cold metal spoon very gently. It doesn't seem to knock the air out. Thank you Becky.
Chicken pot pies are also a great way to turn leftovers into another meal. A Mindful Mom has an awesome Chicken and Dumplings Instant Pot recipe that I used the leftovers for my pot pie. I just added frozen veggies and the pie crust. So delicious.
Sour cream chicken enchiladas are my favorite. I use to make them for my grandmother. Our youngest daughter is lactose intolerant so it’s one I haven’t made a work around. That may be on the list for next week. Precious memories.
It was hilarious how 1 or both of your little dogs magically showed up for EVERY taste test, except the almond cake one. You certainly had their undivided attention, one's head cocking from side to side as you took bites. When you taste tested the chicken pot pie, I thought bc of the camera angle we wouldn't be able to see a dog if 1 was there. I about fell off my chair when his reflection showed up in the refrigerator at the last moment! As soon as your spoon clanked that last bowl of pasta, the 2 of them appeared. The spontaneity is priceless. I don't think you could plan better theatrics than real life provides. Btw, all of the food looked delicious, just as it always does. God Bless!❤
Chicken pot pie also freezes excellent. I made 3 sourdough chicken pot pies this fall (1 for dinner, 2 for the freezer). I cant wait to have a frozen one over the busy holiday season!

Quick tip for pies to get a nice crisp base and stop you getting a soggy bottom, put your baking sheet in your oven for half an hour while you oven gets up to temp, make you pie and get it ready to go in, then when it's ready to bake , take the tray out, put the parchment on the tray to protect it and make for an easy clean up if you get a spillage, then put the pie on the tray and get it in the oven quick as you can, I used to do this and it makes a big difference to the base of any pie. You can do the same thing when you make pasties, just make each one on a piece of parchment a bit bigger than you need, do the same thing with the baking tray, and use a bench scraper to lift up the straight side of the pastie and steady the other side with your hand to put it on the tray, it takes seconds and helps them cook from the bottom better. Hope this helps, I had years experience of baking before I had to stop because of my spine, I still dabble when I can.
I could watch you for hours. In fact I do. Funny thing is, I love to bake and cook and even can and freeze stuff. I am 75 years old and you have given me a renewed interest in continuing to cook and bake and canned. I’ve even got excited about making a couple of raised garden beds in my backyard. Of course I don’t know if I have enough energy to raise it or not. L O L but it gives me renewed interest. Our neighbor has a rabbit that they let run loose. His name is Rex and he loves a lot of my plants. So, I’m trying to decide how I can keep him out of my garden. 😂😂our Spring time will prove interesting to say the least. I live in SE TX. Hi, Becky I got to ask you do you ever bury your veg scraps under your new plants ?? I do this in England. Vegetable scraps under the soil can be used to kick-start a new garden bed too. They add bulk, enrich the soil and will slowly improve soil structure if you add a few worms at the same time. It's rather like creating a miniature worm farm underneath your veggies. I have two worm compost bins as well. they are both well established now. I also have vertical hanging herbs. It's taken me many years but now all walls that face out to our back garden are covered in vertical hanging plants from herbs to small fruits and veg and flowers.

My mind is blown from the spinach in the freezer. Why did I never think about that, I only use it for cooking and smoothies anyways so frozen works fine. I usually just freeze it when it’s starting to go bad.

If you are growing it, you can cut some of the leaves off, leaving the roots intact and it will re-grow more leaves...if the weather cooperates.😊

I always buy the bagged prewashed spinach to freeze, way more convenient to store than a rectangular plastic container. I always throw it frozen (just like she did) into recipes even if it doesn't call for spinach to get extra vitamins and nutrients. It melts down almost immediately.

Beautiful pot pie Becky! When I make my pot pies. I make the filling in one cast iron. I put the pie crust in my tiny cast irons. (I think it’s a 4~6 inch) so I end up making single serve pot pies in the cast iron. You don’t have to do cast iron. But it’s an idea to maybe use ramekins.

Oh and on a side note .. sometimes when I’m in a hurry I bake my pie crust flat on a cookie sheet brushed with butter and sprinkled with any herbs and spices you have. I bake it golden brown . Serve the filling in a bowl with delicious large pieces of broken crispy crust on top! ❤️ super fast and easy
