Watched them live and it isn't that fast. You can often hear them having a backing tack playing that is that fast, very different sound to what their instruments are actually playing thou. They got into big trouble over it.

Why would he take the time to unscrew and fling the whammy bar when he needed to make the sound again later? Also it sounds more like a Mario power-up to me than Pac Man, but either works fine I suppose. Not saying you're wrong (I don't know the guy or anything), but those are just the things I've heard. Either way it's funny to see it flying off behind him.
