Somewhere I googled to a site that said nitrate is used to add pink color to meat. If cook at a slow cook temperature it won't react to form nitroamines...that cause high blood pressure and cancer. I do a baking sheet with a stainless steel cooking rack in the oven at 300°F. You taste meatier flavor. Maybe just search nitrate and cons or wikipedia. I love bacon and think if we invested as cooks into pasture raised -we can get closer to what ancestors had cheaply -and the traditional food without the harm. Pasture raised lessens the bad cholesterol, with greater amounts of vitamin e and selenium needed for body detoxification. Love this bean recipe, thx for sharing.

I have two suggestions first add a 1/4 teaspoon of baking soda to the water you soak the beans in they get softer and second make little depressions in the beans and add eggs in them and let the eggs cook sunny side up for a breakfast of champions 😊😊😊❤❤❤
@@renam9296 yes it can and it takes the skin on the beans off easier just remember to rinse them before cooking I fill the pot back up with cold water and the loose skins float to the top .

This looks so good! I’m going to try them like this. A friend gave me a tip on the beans though and the flavor is better like this. She told me to sauté the onion, garlic and some cilantro and then add them to my beans. I also started using smoked ham hocks in them. Thank you for all the recipes Claudia! You stay killin it♥️

Awe my beautiful friend you can always make my recipes a healthy version using your ingredients of choice 😊 but I can most definitely share my go to meal prep ideas that are on the healthier side 😉
You can make this healthier by pouring off all but 1 Tbsp of the oil after cooking the bacon, and then doing the same after cooking the chorizo. I must have poured off 1/2 cup of unnecessary fat by doing that, and the dish was still delicioso. BTW, make sure to cook the bacon long enough to render as much of the fat as possible. I think that took me at least ten full minutes at med-high heat until it all started crisping up just enough for the fat to cook out so I could pour it off.
Recipes like this are why Mexican food is king. So comforting and filling.
