Ruth's Chris has prime steak, and Capital Grille has choice. The cooking process at Ruth's uses an 1800 degree broiler, vice a 1200 degree broiler. If you need things to top your steak with, than the steak is not the star.
The interesting thing is that the parent company for the capital Grille actually purchased Ruth Chris… So they are technically the same owners now, I wonder how that will affect and change Ruth Chris?
I was never impressed with Ruth’s Chris. Always preferred Morton’s. Tried Capital Grille and loved it. All time favorite was still Del Frisco NYC and Sparks in NYC.
Local restaurant, Anthony's in Old forge pa, way better filet than local Ruth's Chris. Tenderness, flavor, texture. Made me compare that ruths Chris was using mail order steaks.
Granted it’s been a bit but Capital grill hands down, RC seemed more like a chain. As I said it’s been a bit & not sure they still do this, but leasing your own wine locker so you could fill it with your own best wines was a super cool attraction.

BTW, the only thing I ever got at Ruth's that came with butter on thr super hot plate was my steak. Everything else was pretty standard steakhouse sides. Back in the day, before Arnie sold it, Morton's was the king of steakhouses. Now Texas Roadhouse serves a tastier steak than Morton's. LO We're living in sad time Scotty. Capital Grill's Stolly Dolies are good, I'll give you that! Cheers

Some steakhouse chain restaurants apparently infuse cheap steaks with clarified butter/oil to “mask” the medium quality of their meat
Or melted fat from dry aged beef to increase the intense meat flavour.

It tasted like a really good steak boiled in a sock then I went to Ruth’s Chris. I was beyond disappointed.

I tried Capital Grille for the 1st time for my 56th birthday. The experience won 🏆 us over, and yes, over Ruth Chris

I had my first dry aged steak about 15 years ago when Capital Grille opened on Wall Street. It’s been a dry aged love affair ever since.
