Gotta say I think celeriac is kind of underrated. It brings a nice sweetness when baked in the oven with other vegetables and I love to use it for a vegan bologonese as well :)

My first experience with celery root as a vegan was in Denmark. They use it everywhere when preparing vegetarian dishes, including burgers and steaks. It's probably because it's so cheap here and easy to cook. I do enjoy it if it's really well seasoned. Otherwise, you'll end up eating a bland root.

I've just made pesto with my golden marjoram which grows madly in my garden. Marjoram, garlic, olive oil, salt, pine nuts, nutritional yeast. Absolutely gorgeous but I'm needing something else to do with it. Thanks Gaz.

I love the creativity with such an underrated veg. Pesto is one of my favorite sauce/dressing for many dishes. I was expecting a heavier use of it, but I love that you chef it up and just dressed it at the end as it needs to stay raw to fully shine💯big points for legit techniques all the way across. I must admit, sumac is one of my favorite and a new discovery in last 15 years. Such zesty lemon earthy tang and great addition to cumin in coconut yogurt for that middle eastern flavor . I was picturing all of these sauces and ingredients in a home made pita bread pocket!!!😋 side note since this is long anyway. The kitchen is a stunner mate! I build kitchen and custom cabinetry for a living. Love where you took this. Kind of a dream set up! The 3/4 angle shot of the shallow counter eating sesh is 👌🏼. Tom is always on point!!! Crushing it as always.

Wow, this looks amazing. Don't know where to get ramps around here, but there is green garlic and garlic chives. We will be celebrating Beltane this weekend when everyone can be together and I am thinking this would be a great dish for that celebrating some fresh vege from spring with the remnants of a few winter vege. Also have asparagus and fresh herbs from the garden. You inspire me.
Just tried this burnt onion purée recipe with roasted potatoes and smoked tofu... how is this so simple yet so delicious?!! Might be great with a bit of mustard added, maybe I'll try next time. I also got my mind blown by this tea-smoking technique, I think I will invest in a steam basket to try!! Thank you for the cooking inspiration :)
