  • Welcome to the first of many, How to Fillet videos! I wanted to start this series and help you guys learn how to clean any saltwater fish species that comes your way! This is the first of many fish cleaning videos I have planned for this year. Yellowtail snapper are abundant in Florida waters and are one of the tastiest and best eating fish we have in the tropics. In this video I show you how to prepare the fish the traditional filleted way or with the skin on, for a seared preparation.

    Screw two fresh bottle caps to a stick side by side inline and near the end of the stick, with the flutes of the cap facing out, makes a great fish scaler!

    Hey, buddy-- thanks a lot for this video. I've never broken down a Yellowtail Snapper before, but I'm about to go into the kitchen to do my very first right now, thanks to this video and your kind work. Subbed and liked. The bones and head (minus the gills) are going to make fish broth for the seafood risotto tonight, and the snapper itself is plated on top.

      Your instructions REALLY paid off! I removed two meaty fillets down to touching the bones, didn't hit the ribcage, didn't waste a single scrap other than the gills. Thanks for helping me make a great meal for my family, sir. Keep up the great work!

    I have watched all your videos and have a question ...when you do the first cut how do you decide on the angle to com from the top of the head towards the belly? you do it differently on all the species you fillet

    I bought some fillets at Whole Foods and they had a lot of those small bones -- the ones you mentioned how to remove after the initial fillet is created. Guess the fish guys at the store didn't do that.

    Question, how do you know wich bones you're cutting trough? Like when do you cut the center bones and when do you cut the rib bones?

      You should always cut over the rib bones which can be found by the head and the lower half or bottom of the fish. These are the bones that protect the fishes internal organs and they are much more pronounced in Species like grouper and snapper, you never cut through the center or backbone always on top.

    Looking forward to your filleting videos. Can you please zoom in closer to the fish when cutting. For a beginner it helps a lot. No, we won't be able to see your face in the shot when you're talking but we can still hear you.

      The Louisiana charter guys love them but I’d say for most people and fish it’s a waste of money. I think filleting fish is fun and a skill that’s unique and has a ton of room for growth!

    Is there not enough meat to save on the belly? I would have run my knife around the hill plate and filleted the fish with the belly meat.
