  • I got another How to fillet video for you guys! This time we have a beautiful big Red Snapper which also goes by the names (Genuine Red and American Red Snapper). Red snapper are deep water snapper often inhabiting depths 200 plus feet. Red snapper can be eaten whole or filleted, and make some of the best table fare and are one of Florida's best eating fish.

      Is this an old video? I thought Red Snapper was closed until July in both the Gulf and Southern Atlantic waters?

      you should come to Louisiana and book a charter and fish for yellow fin tuna and red snapper. I really like the videos keep it up. you should also do a red snapper catch and cook

      @@LandsharkOutdoors Not trying to argue with you but that's not what NOAA and FWC says. I looked and it does not say that red snapper season is open now. If you could provide a link i would appreciate it.

    I taught myself how to filet fish when I was at the young age of 7 or 8, I'm 57 now, For the most part I do it the way you do it except for the rib cage, that part I have just learned, I guess you can teach an old dog new tricks! thank you.

    Dont throw away fish head especially the snapper ones, they make good 'fish head curry' . Fish head curry is a highly priced food in asian restaurants.
    I will give some tips on making one.
    1. clean head take of the gills and unwanted parts.( cut in half or cooked whole.Do not cut it in small pcs.)
    Ingredients
    1.Oil (prefered veg C.oil )
    2.Fenugreek 1 tea spoon
    3. fennel seed 1 tea spoon
    4. Cumin seed 1 tea spoon
    5. Onions 3 medium
    6. Tomatoes 3
    7. Curry leaves handful
    8. Green chillies 3
    9. ladies fingers 4 or 5
    10. Tamarind juice 1 medium bowl
    11. Red chilli powder 1 table spoon
    12.Corriander powder 2 table spoon
    13. Turmeric powder 1 tea spoon
    14. Salt to taste
    15. Sugar a little to bring that jest.
    Cooking method
    Oil in Pot heated, throw in fernugreek,fennel and cumin till a little brown ,throw in onions and curry leaves - let brown a little, than the tomatoes(diced) Green chillis (split in med) ladies fingers ,cook a little.Add tamarind juice(sour to taste) let it simmer add chilli powder,corriander powder,turmeric powder and let it boil.
    Add salt and little sugar and continue to boil ,put in the fish head 15mins later add corriander leaves and spring onions (chopped).
    YOUR FISH HEAD CURRY IS READY!
    Eat it with rice,bread etc.

    Good how to-it’s how the charter boat deck hands do it for speed. I sometimes go to the cleaning tables and ask for the carcass, there’s good stuff left over and the guys are usually happy to give it to you

    I usually make all my cuts, 90% finished on one side but leave it attached. When you flip it over its nice and flat, not concave. Makes that second fillet as easy to cut as the first.

    Ok take me and Skywalker fishing and between the two of us you'll be the best fish cutter on youtube lol. I was a cutter for years at a seafood distributor, I can show you one simple trick to make your fillets come out better and other cuts you can do to have some more great cooking videos. Not at all that you do a bad job, I really like the cooking you and Brook do. Take Care

    Would be cool if u did a waste free fillet video and try to utilize as much of the fish as possible. Ideas: Maybe make a soup with head and bones. Serve grilled collars.. fry off the fins.. if you are adventurous you can even fry the scales. Seen japanese guys do that. You wash them, dry them on a rack underneath a fan overnight, then fry the next day.

    Great fillet, I have some recommendations if you want to try this
    -bleed the fish, it’ll improve the taste and filleting will be less gory
    -get a stiff knife, it’ll help you make cuts where you want to to as opposed to a flimsy knife
    - don’t throw away the head and collars, they make excellent curry
    - scale the fish if you don’t want to create a mess or making sushi

    Take my advice, for a better experience, just scale the whole fish eat it whole, you'll get more meat and way more flavor

      If you do cook it whole, gut it first and use your finger or a spoon to scrap out the blood line! Some people might think to cook it with the guts xD stupid people out there.

    Awesome video bro, keep it up! Really though, try a fish whole. You can use mangrove snapper, grunt, yellowtail.

      I do eat fish whole but my family and brooks family arent big fans so that’s why you don’t much whole fish cooking

    Must have been fishing state waters. Not a lot of people know that you can keep them year-round if caught in State waters.

      You can call fwc an ask them or ask a fwc officer when you see one.

      State waters in the keys is only out to 3 miles anything beyond that is federal. Three miles from shore in the keys and you're still in shallow water. I doubt very much that snapper came from shallow water.

    I used to catch red snapper all the time when I would go deep sea fishing with my parents but I think I remember my dad scaling the fish. Can you do that or is there a reason you didn’t do it here?

    HI Viktor. Love your vids. I have a couple of questions...in your commercial fishing for kings and bonies you had what looked like three or four hooks hooked together. What is the purpose of that? Also, I see that most folks gaff with the hook facing downwards is there a reason for that or is it personal preference? Thanks man!

      a lot of times kings will hit either the front half or bottom half of a fish. if u only have one hook u only have half a chance of catching it. more hooks less chance of missing the strike.

    Hi There .. I do like your videos quite a bit ... let me rephrase that, I like your videos A LOT !. They are very good and very instructional (this is the key for me) not just a guy pulling fish like many others on UA-cam. It will be great if you could do a bit more inshore videos (Redfish, Trout, snook, tarpon ....) and why not even Florida fresh water (Bigmouth Bass, Peacock bass, Crappie).     Dont throw away the head,try making 'fish head ' curry Indian style ,you'll love it.
    Eat it with bread,rice you name it.
    And the bones you can make good soup.

      Good morning from Singapore,with You Tube around no problem.Type Indian fish head curry receipe you will not miss it.
      But I will give the basics:
      1.oil(better be vegetable C.Oil.)
      2. fenugreek( tea spoon) 3. fennel seeds(tea spoon) 4.Cumin seeds(tea spoon) 5. onions( 2 medium) 6. curry leaves (handful) 7. tomatoe 3
      8. green chillies 3 9. ladies fingers 4 10. red chilli powder 1 table spoon 11. corriander powder 2 table spoons 12. turmeric powder 1 tea spoon 13. Tamarind juice 1 medium bowl 14.corriander leaves few stalks15. spring onions 1 stalk
      16.salt to taste 17.little sugar to taste.
      This are the basic ingredients ,but it varies from Indian to Indian households.

      The Year-round harvest is only for Atlantic state waters. So don't try it if your in the Gulf

    You threw away the collar meat? Best part! What a waste! And the meat in the head! The fun of catching such a great fish is to save as much meat as possible and eat. So many different ways of cleaning and filleting a fish on UA-cam.

      the meat in the head is the best meat on most fish! collars are great and rib meat is great.. always gets tossed out too! usually by americans..

    Nah... First, gut it and take out the gills. Then, take off the scales (including on the head and cheeks.) Only then can you get full fillets, SKIN ON. The bones, collar (or "wings,") and head (including the cheek meat make the BEST fish stock and soup. If for some reason you don't cook the fillets skin on, use them for the stock.
    Red Snapper head, skin, and bones are not less important than the fillets. Let's not discard 5 star ingredients because it takes a little longer to cook. Otherwise, it would better to buy some cheap frozen tilapia fillets.

    Guy does not know even the basics of killing and draining the blood from the fish. Basically ruined a beautiful fillet because of bad technique.
