I made these last weekend…but took more of a taco approach them burger. I mixed my meat with taco seasoning and an egg then coated the outside of the meatball with more taco seasoning. I used fiesta blend shredded cheese. I assembled and folded them still on the grill…just for soaking up a little extra in the tortillas and the cheese to melt. Topped with lettuce, tomatoes, sour cream, and salsa. They were AMAZING!!! My family loved them so much, that’s what is for dinner tonight! I also did homemade fries on the Blackstone. 🤤🙌🤤

With that title, I was expecting you to cram a burger into a taco and add the other stuff to it.
I was watching along as you put the burgers on them on the griddle and seasoned them as usual. Then...BOOM! You did the trick with the tortilla.
I immediately thought, "this guy is a genius!"
What a great idea! You could feed a lot of folks with these as you just keep cranking 'em out.

I'd be happy with just about any cheese I have on hand for these, so long as it melts well. I'm partial to smoked Gouda, but American sure does melt nice and has that classic cheese burger flavor👍😊

I used the fiesta blend shredded and it was good, but I am sure any cheese would be tasty on these. Really good and fast.....

Awesome vid Hungy Hussie. I do have a question the side you put the tortilla on the meat ball does it get cooked once you flip it. Or since there so thin it cook right threw??? I just don’t want to make anyone sick if I make these.
The burger is so thin when smashed down, it's cooked. If it was thick I'd say no, but these are so thin that you can see the griddle between the holes.

Do you put oil on the griddle before you put your balls on to smash? Or do you get a better maillard reaction without?
I don’t Kevin and yes, I do feel you get a little better color for sure. The 80/20 provides plenty of fat. If using leaner meat, I’d do oil.

You want med/high to high, especially on the smash. You can go cooler on the flip though.
Out of curiosity, how do you know when the burger is cooked through doing these?
When I try this the "blood" from the raw hamburger soaks into the fajita shell. When the shell is on top of the burger, and smashes down onto it, and the hamburger cooks, anything coming out of the top of the burger soaks right into the shell. When flip to other side, the shell is now on bottom, so the burger not direct on grill. had to take them off before shells burned and meat was undercooked and the pink "blood" was sitting in the shell. Not sure what I did wrong.

How do you know that the meat is done if you don't flip it?
It's smashed so thin it has no other way than to be done.
Making these again tonight. Ive been using a Rubbermaid Deviled egg carrier and premake my burger balls. I put one in each depression, season well, put the lid on it and in the fridge till needed at the Blackstone for their ultimate sacrifice. 😅😊

I'm a cheese dude. I mess with bleu cheese, limburger, gouda, kefir, brie, goat, etc. My wife is Puerto Rican, so fake plastic cheese is king to her. She calls my cheeses "rich white people cheese" 🤣
Pepper Jack, Cheddar or American depending on what kind of mood I’m in. I do throw in the White American if I’m doing a cheese steak.

Good stuff Matt. I love one slice of pepper jack and one slice of good quality Muenster. Some heat with the rich flavor of the muenster. It truly is good groceries.

1 slice Havarti and 1 slice American OR Aged White Cheddar is delicious IMO
I normally like provalone on a burger. Melts really nicely. Greatly dislike American cheese product with one exception ... smash burgers. There's just something about that taste and melt on a smash that isn't replicated by anything else.

Do not like smash burgers at all. Basically burned up meat. which make it worse than trash. What a waste. And to waste meat in this way and try to degrade taco's. Not a good thing.

I either use american or if I'm making a fancy smoked burger I use pimento cheese, occasionally I make mushroom and swiss smashburgers...
