After watching numerous paella videos and making paella many times, it is clear that there is no such thing as an authentic or traditional paella. Every family, chef or home cook makes it different. Some paellas are better than others because of the style, steps or progression of adding ingredients to the pan. One tip is if you can't find Spanish/Bomba rice, use medium grain rice-never short grain and never stir the rice after you initially spread the rice around in the boiling chicken stock or it will get gummy. There are many other tips but you must study, practice and learn them on your own. It's well worth it.....
Not really. Authentic PAELLA VALENCIANA has specific ingredients. You cant add carrots, bell peppers or spinach, because it wont be a Paella Valenciana. Every family/restaurant makes it their own way, but the key ingredients stay the same.
You´re not exactly right. Same ingredients may vary in different parts of Spain and others are completely forbiden. The key is THE METHOD, the type of rice (no long or medium grain), the amount of water and the cooking times. Other than that is dead simple! :D

It's a pity that no Spaniard with good English skills posts a decent paella video with quiet music (or none), showing his / her face in front of the camera, lapel mic, and subtitles of the basic ingredients and step. I think I would pay for that.
The secret to all these UA-cam silent movies with loud music is to mute the audio. He doesn't speak a word while cooking anyhow. We can just read poorly written and infrequent subtitles.

When we asked where our Paella is the wait took that cold Paella we suspected was ours back into the kitchen and 5 minutes later (after heating it up again) brought it out to us. Snobby service, fake fancy and one of the worst Paellas we had and we had plenty!!!!

NO, those ones are the right ones. Paella is only the veggies and meat one they put you here, the other is called Arroz con bogavante.

I have used parboiled rice which is sold partially cooked and the Paella is great with loose grains. If you like it softer then add more water.

In English they are called Scarlet Shrimps or Cardinal Prawns.
carabinero is a type of seafood. Nothing like a prawn, better and way more expensive.
