How To Make Trini Cassava Pone | Foodie Nation

  • Chef Jason teaches Kezzianne how to make 'Trinbagonian' Cassava Pone:
    *Yield: 15 Portions
    INGREDIENTS
    4 Oz Butter, melted
    2 Cups Brown Sugar
    1 Tsp Ginger, minced
    1 Tsp Mixed Essence
    1 Tsp Cinnamon Powder
    ¼ Tsp Grated Nutmeg
    ¼ Tsp Black Pepper
    4 Cups Cassava/Yucca/Bammy, finely grated
    1 Cups Dried Coconut (White Flesh), finely grated
    1 Cups Pumpkin, finely grated
    1 Tsp Baking Powder (Optional)
    ¼ Cup Currants
    METHOD
    1. In a medium mixing bowl, add the melted butter followed by the sugar and whisk to incorporate. (About 5 Minutes)
    2. Add the ginger, mixed essence, cinnamon powder, nutmeg and black pepper.
    3. Whisk spices well into butter and sugar mixture.
    4. Place in the grated cassava and mix, followed by the coconut and pumpkin.
    5. Using a hand blender, pulse the mixture in intervals to break down the ingredients and slowly bind them together into a homogenous matter. (About 1 minute)
    6. Switch over to a spatula; add the baking powder and currants. Mix to properly incorporate all ingredients.
    7. Preheat oven to 350 degrees fahrenheit.
    8. Place pone batter into a 9 x 13 inch baking tray and gently tap the tray against the counter to settle the batter evenly.
    9. Bake pone for 50 minutes to an hour until lightly golden brown on the surface and texture is firm but springs back to the touch.
    10. Let cool for 20 minutes before slicing.
    11. Serve with a hot cup of tea for a snack or just on its own as a great sweet treat when you’re feeling peckish.

    Its two different kinds of pone that i know of one is cassava pone the most popular one and then sweet potato same way it's made sweet potato pumpkin and coconut with the same ingredients its delicious love them

    Looks like a really easy to follow recipe. I no longer feel intimidated by trying to bake pone! But would it taste creamy as well as sweet without the condensed milk?

    Original long time pone had coconut sweetpotato cassava butter raisins black pepper spices and sugar. No milk was added

    This consistency looks just like my granny pone (Best pone ever). I will definitely try, my first and only time making pone was an EPIC fail, I'm still heckled to this day about it and it was about a decade ago, lol I'm hoping this will redeem me.

    The pone looks good. I know you all said to grate the coconut etc on the fine side of the grater, but yours clearly isn't. I'm assuming it's fine to grate it on the bigger side then?

    Instead a swizzle stick or immersion blender, couldn't you use a Kitchen Aid stand mixer? (No, I'm not a sales rep for Kitchen Aid.) :-)

    You guys kill me. I am here in Us for the past forty-two years. I cannot forget the way we said things. I wasn't spanked, I got licks, with whatever my mom had in her hands at that moment. If she's cooking, it would be the pot spoon.     In today's world people can afford to buy more things. Before you might only have cassava now sweet potatoe , Edoes, or pumpkin is available. Before no fruits were added because, there were expensive. Some people are even adding eggs.
