Hi...I never heard of pone...i am looking forward to trying your recipe... but HELP!!! my family raised in Bahamas but came to NYC..we had what we called Cassava Pie layer of cassava (prepared as you did) but they also prepared a chicken (with a gravy) and put a layer of cassava...then chicken...cassava ...then chicken and topped it with cassava and then baked it... are you familiar with this? What was it called?
I was wondering, with your experience would still come out good if i subbed the pumpkin for beat root? I'm sorta looking a healthier option for my mom but don't if that would offset anything done here :/. Pls respond
Hey, Beet root sounds awesome but I'm not sure what the pone will taste like. What I can say is, omit pumpkin completely and just use the cassava and coconut. That's how I like pone, without pumpkin. Put more coconut if you want. However, if you want, try it with a little bit of the beet root and see how it turns out. Let me know! I'm eager to find out how it tastes!
Quick advice: essense and extract are two different things. Essence is simply artifically flavored, where as extract is made directly from vanilla beans via an alcohol component; hence why it's more potent.

Why everybody have to put in their 2 Cents I know making Cassava Pone. Sweet potato is not necessary. Is Cassava Su gar Butter. Milk Evaporated Milk Ginger Cinnamon Nutmeg a pinch Salt. Grated Coconut Pumpkin and Vanilla Essence Mix all together And Bake its a very easy and Simple Receipt.

Try sweet potatoes instead of pumpkin
It works great with the beetroot, the colour is just different. Pumpkin is used to give the pone extra moisture and colour.
Why baking powder?
if u put coconut milk,do u have to put evaporated milk an wat causes it to be glueie i love it so
The gluey texture comes from the cassava. You can omit the evaporated milk if you want
Angie Sookdeo my mother in law taught me to add a tiny bit of baking powder to your mixture and you will have to gooiest pone ever

Yep I know, that's why I mentioned that extract is way more concentrated. They use a little bit extract and thin it out to make essence.
