How To Make Trini Chicken Pelau | Foodie Nation

  • Pelau is the ultimate one-pot dish of Trinidad and Tobago:
    Yield: 10 Portions
    INGREDIENTS
    3 Tbsp Vegetable Oil
    ½ Cup Brown Sugar
    1 Whole Seasoned Chicken (Cut into Pieces)
    2¼ Cups Rice
    1 Tin of Pigeon Peas
    6 Cloves of Garlic (Finely Minced)
    ½ Cup Onions (Finely Minced)
    2 Bundles Chives (Chopped)
    6 Pimento Peppers (Finely Minced)
    1¼ Cup Pumpkin (Cubed)
    ¼ Cup Coconut Milk
    Water (About 4 Cups)
    1 Whole Scotch Bonnet Pepper
    ¾ Cup Carrots (Cubed)
    ½ Cup Corn Kernels (Optional)
    1 oz Salted Butter
    2 Bundles Chadon Beni/Culantro (Finely Chopped)
    Salt and Black Pepper to taste
    METHOD
    1. Heat iron pot over high heat.
    2. Once pot is hot, add the oil and then add brown sugar.
    3. Once sugar begins to bubble and caramelize, stir using a pot spoon until sugar develops a deep amber with slight black jack color.
    4. Immediately add your seasoned chicken pieces to the pot and stir to allow caramelized sugar to evenly coat the chicken. Allow chicken to stew (brown) for 10 minutes.
    5. Reduce heat to medium, add the rice and mix thoroughly with chicken. Allow rice to parch or brown with the chicken to develop a nutty flavor and caramel color for about 4 - 5 minutes.
    6. Add pigeon peas followed by the garlic, onions, chives, pimentos and pumpkin.
    7. Mix the coconut powder with the water add to the pot. Water should cover the surface of the rice. Stir to distribute aromatics then add the whole pepper, cover and bring a slow boil. (About 8 - 10 minutes)
    8. After this time, remove cover and add the carrots and the corn. Stir to combine and check the doneness of the rice at this point. If it’s still a bit hard or close to being done, gauge by adding a little more water and cover the pot; allowing it to cook for a few more minutes. However if the Pelau is still moist with sufficient liquid and close to being done, then leave uncovered and allow excess water to evaporate.
    9. Add the chadon beni, salted butter and taste for seasoning. Add salt and pepper as per your likeness and stir to ensure all ingredients are mixed well as this prevents the bottom from burning.
    10. Do this until you have reached your desired consistency.
    11. Remove from heat and let sit for 15 minutes to allow the flavors to converge and set.
    12. Serve as is or with coleslaw as a great accompaniment.

    I don't know if you guys realize how important well produced videos like these are for Trinis living abroad. Here in the Middle East the closest thing I could find to pigeon peas was Fava Beans and for the first time in my 38 years I attempted to make a Pelau. It came out fantastic! We out here in Qatar craving a lil Trini flavour and this video came right on time. Keep up the good work guys!

      Have you tried or if you can find GUNGO PEAS, dried or canned. Here in Switzerland, we can't find pigeon peas, and when our Trini chef, as I was working with the Trinidad Ambassador in Geneva, we found it in Asiatic Stores owned by Shrilankans or Indians. That is what we used for the Chicken Pilau and I think Gungo Peas is the same as the Pigeon Peas.

    You guys are so entertaining to watch! I watch your videos as much for the ole talk as for the recipes! And yes, I am a Trini! And yes, I like a moist but not wet pelau. I live in the UK so sometimes I just throw in frozen mixed vegetables in the pelau! It may or may not contain corn or even cut string beans!

    I tried your recipe and followed ur instructions (apart from the carrots and corn) and my pelau was perfect. I was the first time that I had stewed or browned anything . Have never made pelau before bcos afraid .Perfect recipe .Follow the times given in the video and in the written recipe.

    I always put corn in pelau. I love the burst of sweetness and the different texture it gives. I also make paneer pelau for my vegan friends. It tastes just as delicious as meat pelau. Team corn and wet pelau. ⭐ 💥

    Happy Independence My beautiful T&T.
    I am not a Pelau lover in general but your video inspired me to make this today. Definitely no corn and I am not a fan of sappy Pelau so I just left mine covered on residual heat for about 15 mins more than yours to get a little more grainy. Delicious and it may convert me to maybe a Pelau liker lol.

    No corn in mine. It has an overpowering taste. I like to rinse the rice first to get rid of the starch. Looks delish guys.

    I’ve had Chicken Pelau and my husband cooks it and it’s yummy. I’ve made sand coach too. I love stewed & curried dishes so much!! Can you make simosa’s? I haven’t seen many Trinbagonians make it other than my Mother in law. It was so yummy along with aloo pies.

    Chicken pelau is probably the dish I miss the most as a vegetarian. Now I just make the rice with the browning and pigeon peas.
    Update: I am no longer a vegetarian and I am cooking chicken pelau as I watch this.

    Try quail pelau with toasted saunf, hint of rose water, tamarind and apple cider vinegar. Also try caramelizing brown sugar with paprika and marathi moggu. Cheers and blessings!

    I always add corn to my pelau. Kezzi ann u missing out! I saw quinoa pelau (the quinoa to replace the rice) on fb today. I want to try that.

      Quinoa, especially the wholewheat one absorbs the coconut milk and other flavours in ways rice never could! You just have to be mindful that you have to do a great deal more seasoning to the quinoa to get those flavours to sink in. It's either brown rice, basmati/jasmine rice or quinoa for me! Parboiled rice tastes so boring after that!

    Both of you cook very well, I love watching your channel and I love the jokes. I know everyone makes pelau different but I never tried corn. My kids are American and they love the dish. I make it dry for them they do not care for it moist. One day I'll have to put the corn to see if they like it. My only thing is I average on everything I do I do not keep stirring it all the time. Once i put the rice and add liquids and all the other things I let it sit an cover it on low heat and turn it 1 time til it soaks up the liquids (water and coconut milk) . I will turn it again and let it sit. You guys do a very good job. I was born trini but grew up in America however I love your channel because my grandmother cooked a lot of your food, an I have learned a lot from this channel. Thank you so much for putting together a channel like this, an making everything look so easy. God bless the both of you.
