Spray oil & cooking sprays are usually- and unfairly - overlooked. I frequently use cooking spray as “glue” to get popcorn salt to stick or keep an herb mixture on pizza crust. It also helps make things crispy. But this is taking it to another level! Absolutely genius, Nagi!
Try adding a little dollop of butter or ghee and then sprinkling some cumin powder, Kashmiri chilli powder, sea salt, black cracked pepper, squeeze of lemon juice and some finely chopped coriander (for those of us who don't have the "it tastes like soap" gene). You're welcome.
This looks amazing! All of the eggplant recipes look really good, too. I'm cutting back on eating meat so I can't try the chicken recipe, but I can definitely try the other vegetarian recipes.Thanks, Nagi. ❤

2:52 if you cut it the other way , it could be used like a toast and a base for a sandwich! Caprese version seems like a great idea.
