I found this video 2 weeks ago and cooked it last week. There were little bit of mistakes and lacking on 1 or 2 ingredients but it turned out to be very tasty. Today, I cooked this dish again and it was okay, complete ingredients but I thought I shd have added a little bit more of vinegar and salt, although I prefer my food to be not salty and other food to be not too sweet. I find this video very helpful. Thank you so much. .

That's a very good way to minimise oil- absorption of the brinjals. I've tried just dry toasting the cut brinjals till lightly brown but without adding the flour.The sauce is nice.

The egg plant has oxidized as soon as they were placed in the bowl. I always immediately put them in plain water as soon as i cut them to prevent darkening due to oxidation
This way still makes the eggplant wet/soggy. The better way to do it is to very lightly coat the eggplant with olive oil and bake in the oven in high heat until slightly soft first first before stir frying.
I've eaten this dish in restaurants but never knew how to make it! Thanks for sharing the recipe and techniques! I will try at home!

The cornstarch is genius. I recommend Szechuan peppercorns
i dont think the Szechuan pepper can support or elevate the sugar in this dish
