I bought one of these and the heel should come down to the bolster so that the knife edge is slapped on the cutting board instead of up in the air when you're trying to cut vegetables and your handle is hitting the board. I bought it to throw it in the van as a camp kitchen knife, and it doesn't quite cut it as a chef's knife.

I think the steel is different between the 2 now.

I think that would make a nice modern trade knife wouldn't have to worry so much about carbon steel it's more stainless has more chromium in it
