Shelf stable elderberry juice - no sugar needed.

  • Elderberry has been acknowledged as great medicine for a long, long time. The recent popularity in use of elderberry syrup is skyrocketing.
    Personally, I try to avoid sugar wherever possible. Sugar is thought to be inflammatory, which seems to negate the purpose of any natural medicine.
    Here is a link to complete canning instructions and recipe. I always add 1 TBSP of citric acid or commercial lemon juice per 1 quart of juice.

    A word on vitamin C. Elderberry does contain a good amount of VitC. However, since vitamin C is heat and light sensitive, and elderberry has to be heat treated to make it consumable, the amount of vitamin C is not the same in cooked berries as it was in raw (non-consumable) berries.
    Vitamin C is great for health, so it's best to add fresh lemon or lime juice to the canned juice before consuming, if increased vitamin C intake is your goal.

      Sorry I forgot to mention it in the video. It is mentioned in the description above the comment section. Blue Book recommendation is 15 minutes for pints and quarts. I always opt on the safe side and do mine 25 - 30 minutes. Which probably isn't necessary. :) I hope that helps.

      @@homesteadinginnorthflorida YES! Thank you! I believe I will also do longer. I’ll do at least 25 because my elevation is slightly above 1000 feet near Atlanta which is approaching the north Georgia mountains. I ordered some dried elderberry and plan to can lots of 8oz jars of “decoction” so we can just add equal part raw honey to make a pint of syrup at a time. Running out and grandkids (and I through them) have been exposed to Covid again!

    May I ask, did you add any water to the instant pot before cooking for five minutes? Or, was it just the elderberries? Thank you. 🙂

      Oh good catch! I would have mentioned that. I added about a cup, just so they would not stick and there was enough liquid initially to build up pressure. If you do it stovetop, you can get away with less water, by pre-smashing the berries (or using frozen ones) and then cooking them until they release their juices. In general frozen ones juice quicker, as the cell walls are destroyed during freezing. :)

      @@jd3813 no, I do not add water. I do add citric acid. There is a ling in the description under the \/ideo that has everything typed out step by step.

      If canned correctly, the juice will stay preserved indefinitely. After roughly 1 year, the quality will suffer some. Color change, etc.

    I don't have canning paraphernalia. Can I just put it into tightly fitting jars. How long would they keep like this

      It won't keep without being canned. But you can freeze it in ice cube trays and transfer the frozen cubes into freezer bags.

      @@pinkpoodlepaloma - yes, absolutely. You can put the entire clusters in the freezer.The berries will then readily fall off. And can be frozen in bags. :)

      Great question. I did add water and I certainly should have mentioned that. For my cooker, the InstantPot, a cup of liquid is needed to get it to pressurize.

      I don't. Nothing here gets sprayed and they always seem pretty clean. I do let them sit on newspaper or baking pan for a bit to give the little spiders etc a chance to crawl out. And to make sure there are no stink bugs in it. :)

    Me too, I think it defeats the purpose of using elderberries if adding sugar.

      I'm glad I'm not the only one seeing it that way. :) In my world, sugar is an occasional treat, not medicine.
