      I have heard that they can be as much as 8 ft tall, I have very few wild ones next to a swamp near my house and I found one that I almost didn't recognize as an Elderberry because it's so big! I'm 6 ft tall and this sparse unhealthy old bush what is left of it is twice as tall as me! Must be ancient, to late this year now to try and learn to clone it

    I'm making my second batch right now. The first was delicious! Thank you for putting my nerves at ease about the green berries. Most people say you HAVE to get every single one out, and that would be so tedious!

    Oh Sandra, elderberries!!!!! They have a special place in my ❤️. My Grandma always picked elderberries and made the best jelly. If she had plenty she would can some too for pie. Sometimes she added apple juice to help add pectin. I have about half a cup of elderberry juice in the freezer to use for jelly. (I’ll add apple juice for the rest). I wish I could go pick with you. Nobody wants to do that anymore and usually those bushes are on the other side of a ditch! LOL

    My father in law makes and bottles his own wine. He even grows his own grapes and elderberry and uses them. I would loveee to be able to use this recipe to make use of some of the elderberries myself. I love their immune system boosting qualities so to be able to make something using them myself would really mean alot to me!!

      They tend to grow in wetter areas on the outskirts of wooded areas.

    Lovely calico girl! I've been growing and processing elderberries since the late 80s. Jelly, syrup, tinctures...yummy and great for you! And Wine! Lol!

    Thank you so much for all the info. Could I leave the honey and/or sugar out when canning? And add it when I make the syrup? Also, could I add some ginseng in with the elderberries?

    I have my elderberries in the freezer now. Good year for them. I did have to share with birds. It’s a balance to get them ripe and yet get them before the birds. Looking forward to making my syrup.

    Honey is one of the most powerful antibiotic substances in nature. No baby has ever been observed to contract botulism from Clostridium botulinum bacteria. The claim is that its "possible" however, I think the real reason can't be spoken of on this media due to sensorship.. Honey has the ability to strengthen the neurological system, which may well counter the neurotoxic effects of those needles they want to give all the babies.

    I just picked lots of elderberries for the first time. I had no idea how tedious it is trying to get them off the stem! I had washed mine first and was trying to pick them off but even though they are ripe(they are dark purple/black)they seem to want to stay attached to the tiny pieces of stem.....and of course I am paranoid because I don't want to poison my family. Everything I have read basically says to make sure there are NO stems or unripe berries.....is that overkill? I picked 2 -5 gallon buckets and a giant laundry basket! I now see I may have gone overboard...I am going to freeze them to help with the destemming.....thanks for the video!!

      No, the elderberries are pretty acidic already.

      Very high in tannin. That's why when made into wine you leave it in bulk (5 gallon) for 4 years minimum before you begin to sample and bottle. 20+ years in the cellar no problem for this country wine.

      Yes, if you can it it will last years on the shelf, but refrigerate after opening. And you process for the same amount of time. Have a great day! 😊

    I noticed some elderberries have purple stems to the berries and others do not? Why is this ? A different species maybe? The berries are ripe on the other colored stem.

    I'm confused. do you use 4c water or 8c? recipe says 4 but I thought you said 8c

      Recipe shows 4c berries and 8 c water. Hope that helps!

      It is a syrup. Syrups have a high sugar content. The berries are very healthy and capable of soothing cold and flu symptoms. I doubt there are many syrups that can do that.

    Why not use a stick blender and then strain it using a nut milk bag.

      No, I didn't. Sugar has been used in syrups for 100s of years. It's only been "bad" since the invention of the internet.

      @@HomesteadingWays You are wrong about that. Read up on how they make and process to get white sugar. Perhaps, like everything else, it may have been ok years ago but now our "food" has been tampered with so badly. Look around, everyone is overweight, has or had cancer, and many people are on drugs/medications. Get the connection??? You should also look into what you are feeding your animals. It is all toxic ingredients.

      Processed sugar is very unhealthy. It has been stripped of its natural benefits. It’s best for honey. White sugar is as dangerous as cocainaa
