    I asked my family for a good knife set for xmas last year because my current day job only has basic Dexter knives and a worn out deli slicer.
    Lord have mercy those knives have amazed me since day one. The restaurant foolishly uses the slicer to process green peppers and tomatoes and it basically juices them. I started doing them by hand. No waste, i cut tomatoes slices in such a way that i could reassemble the tomato. My green peppers leave hardly any juice on the board and they dont look sliced until their scooped and spread out like playing cards.
    Point is. Good knives rule.

    My wife says I’m not allowed to buy anymore knives. That was Japanese slicer, Sashimi and a Birds beak knife ago🤣🤣🤣

    Thanks for the personal story. Good (and affordable) knives are the must-have in the kitchen. A lot of us home "chefs" know about cutting up onions and so forth, but butchering is another skill to add to the toolbox. With your videos and correct knife usage, we can aspire to the next level. And yes, y'all,there's nothing better than gifting a good knife to someone that likes to cook. Better than flowers and chocolates, and I dare say jewelry 😉

    From my time in the military, and what I have done thru the years, in my opinion, the two most important things in cooking is the right tools, and lots of counter space.

    I'd love to see you do a video about cleaning. As someone who doesn't work with raw meat much, but wants to start, its a little overwhelming to know how to properly clean up after cutting. Do you bleach every surface the raw meat has touched? Is soap and water sufficient? can something that had raw meat just be rinsed and put in the dishwasher? how do I avoid contaminating the whole kitchen?

    Great historical recount! - I love hering these "The story behind the face" videos.
    Can you talk about the steel and blade structure in your personal line of knives? - I know this makes a big difference.
    I have collected quite a number of knives through the years, and some of the cheaper ones are actually my go-to knives for day-to-day use - Thanks - Cheers!

    Would have liked for you to tell us who the manufacturers of these knives where . I personally use victorinox and henckel

    It would be great if you would identify care instructions for your two knives on your website. Items like cleaning and what angle you sharpen the knives at (15 or 20). Thanks!

    Funny, I still have my chef's knife (and use it every day, and don't ever let the wife touch it) from when I worked as a line cook in high school. In the mid 1980's.

    If the knife is stainless steel, respectfuly in my opinion there not worth owning..

      It’s not uncommon for chefs to hold down numerous jobs throughout their career. It’s a widely accepted process in the field. There is a wealth of knowledge and experience to be gained when working with chefs from different background and with unique skill sets. Also, be kind.
