Good video. I choose this one because it was the shortest.

What happens if I can't get the LCD Shield Plate off? The Y000 screwdriver that came with the repair kit doesn't seems to grip. How important are those screws? What's my workaround if I can't get them off? Everything else has worked on your video so far! Thank you for your help!

Not using heat on the home button and camera/proxy cable will rip them.

will a hair dryer be sufficient ? I actually have a heat gun, but know they get much hotter and want to avoid heat damage to an expensive phone.

Yes, it'll be a little slower, but should be fine!

Do you need to use adhesive to glue it back together or does it just snap together? Thank you

It is a good idea to put on new adhesive to ensure water tightness. New adhesive is usually sold in pre-cut sheets and is usually very affordable.

Is it possible to change only the digitizer so I don’t have to throw out a perfectly fine LCD?

Yes, it is possible. But it is a complicated process that requires specialized tools, time and patience, and nobody does it anymore because its more hassle than its worth since the iPhone 8 assemblies are quite affordable nowadays.
You would need to remove the old digitizer piece by piece, clean up the LCD of the old OCA (optically clear adhesive), sanitize the LCD surface for the application of the new OCA, apply OCA to the LCD, cover it with the new digitzer, stick the sandwich in the vacuum chamber to remove air bubbles, and voila - you've created a refurbished iPhone 8 display assembly.
