FUGIYAS - East INDIAN BALOON bread

  • Fugiyas are made by mixing flour, eggs and coconut milk together with yeast. Some recipes use regular milk but I prefer the rich taste of coconut milk in my Fugiyas. Once the dough rises, the dough is grabbed with one hand and released with the other hand that is wet and the ball of dough is just dropped into the oil when it puffs up. This is an East Indian tradition that you can make in your own home!
    Here are the ingredients and steps to make this recipe!
    Ingredients
    2 cups All purpose flour(unsifted)
    1/2 cup whole wheat flour sifted
    1 beaten egg
    7.5 tbsps Sugar(3 tbsps per cup)
    1.5 tsps Yeast in 1 cup warm water
    200 ml canned Coconut Milk
    Pinch of salt
    Add extra Milk or Coconut Milk if required
    Instructions
    Add 1 cup of warm water to 1.5 tsps of yeast, feed it with a pinch of sugar and leave it aside for about 15 - 30 mins to froth.
    Add add 2 cups of regular all purpose flour and 1/2 cup of sifted whole wheat flour.
    Mix all the liquid ingredients together - one beaten egg, all of the yeast mixture and 200 ml of canned coconut milk.
    Add the flour a tbsp at a time and 3 tbsps of sugar per cup ie 7.5 tbsps of sugar.
    Be sure to scrape the bowl in between and once all your batter is mixed. Also add a pinch of Salt.
    If your dough mixture looks a bit dry, add a little bit of milk.
    Leave it in a warm place to rise for 1 hour
    Prepare your equipment before you start - risen batter, a large bowl of water, big enough to dip your fingers in, a tray with layers of kitchen towel, a hand towel and a slotted spoon
    If you’re right handed, make sure to wet your fingers on your right hand and vice versa if you’re left handed. Grab the dough, release with your wet fingers and drop into the dough. Make sure that you keep wetting your fingers, if they get dry, the dough ball with stretch when you try to release it.
    Keep those fugiyas moving in the oil so they cool uniformly
    Drain the Fugiyas on some kitchen towel to remove the excess oil

    The only channel who came first with this recipe on YT. Now in the last few months there have been many making this bread, but I always refer this lady because she's the one who first introduced me to this recipe. I still remember making this bread with my mom 4 years back

    Thank you for this recipe, it’s perfect. The measurements are also perfect. I use milk instead of canned coconut milk. Today is the 4th time I’m making this recipe. Super easy to mix as I have a kitchen aid as well.

    Have never ventured into making fugias. Maybe be someday.. I am half East Indian... My Mum made them and we happily are them. If Aunt Mabel could do it. I can too. Thanks for sharing.

    During the whole month of Ramadan we make these and in Arabic it's called Leqamat ,the ingredients are the same nowadays people like to improvise on the taste by adding other ingredients too but the basic is flour salt yeast sugar. It's made every day fresh in large quantities cause it's distributed with the neighbors.

    I have a couple of questions:
    1. Can i avoid egg?
    2. Can i use fresh yeast for this ?

      Heya! I haven't tried it with fresh yeast, but I am sure it will work. You can try without eggs, but the texture will be a lot harder.

    Most recipes call for beating the dough (deflating it) after the first rise - to get the air out. you. There is no mention of this. Do you start making fugias immediately after the dought has risen?

      Yes there is...u can add toddy and leave it to ferment overnight

      Yes you can, keep it overnite. I use the Flieshman active dry yeast. There are two types, traditional & quick rise. I use the traditional yeast pkt, for an over nite rise & usually put it in the oven, with the light on. The light inside the oven provides sufficient warmth for it to rise. Must warn you though, to either use a lid or cling wrap to cover the pot or use a tray below to catch the overflow when it rises or yr oven will be a mess in the morning.
      For quick results I use the other option ‘quick rise’, n like her just warm up the oven a wee bit before putting it in. Something I noticed is, if you warm up the oven too much, the dough gets a bit too watery n your fugyias won’t be perfect rounds. I too live in Canada n that’s the best you can do, to get it to rise.
      Been making them for 20yrs + they turn out perfect every time. Her ingredients are spot on though.

    My dough has rised but its become like chapati dough ...its not become little runny like they usually have ...

      So it's too heavy? Did you give the yeast enough time to rise? Usually an hour is enough. Try forming them and if they don't work ... try again!
