    In this episode of In The Kitchen With Matt, I will show you how to make Navajo Fry Bread. This easy fry bread dough recipe is what is used for Navajo Tacos. Frybread has been around for many many years, and several different cultures have their own version of it. This is a traditional fry bread used by the Native Americans. This particular iteration was created in 1860s by the Navajo Nation. They were given flour, salt, baking powder, and lard by the US Government to sustain them on their Long Walk from Arizona to New Mexico. I live in Arizona, about 4 miles from a Reservation. They have fry bread stands located throughout that particular reservation where they sell Navajo Tacos. In Utah and Southern Idaho they call these scones. So yummy! They are super easy to make, if I can do it, you can do it. Let's get started!

      This is not "traditional" Native American food. This is what Natives created when the U.S. government kicked them off of their land, put them on reservations, and gave them USDA commodity items such as sugar, oil, lard, and white flour. I would not even call those items "food". They would be more accurately called "empty calories". At that time, they did the best with what was given to them just so they could survive.
      Not trying to create controversy here. I'm just stating facts. I just don't think it's accurate to call it "traditional" because there is nothing traditional about it. It's as "traditional" to Native American culture as the Bible is.

    I've always wanted to try frying things on my stove but it seems so.. intimidating. Could you do a basic how-to on shallow-frying? How to know if the oil is hot enough, what to do with the oil after, etc?

    • @christinafidance340
      @christinafidance340 Рік тому +2

      I was always intimidated by it too, but if you have a thermometer, just heat the oil on high until it is about 375. (I actually just flick a few drops of tap water in it to see how hot it is, lol.) 😂 The biggest mistake is not getting the oil hot enough first. So, just put it on high and wait about 10-15 minutes and you’re good. Just start with non-meat things so you don’t need to worry about it being cooked all the way (or wasting anything expensive). I’d say things like pastries and fry bread is a great place to start as you get the hang of it. It’s actually VERY easy and I’m sure you’ll be pleasantly surprised- I know I was! And you’ll be making delicious things in no time!

    • @inthekitchenwithmatt
      @inthekitchenwithmatt  Рік тому +3

      Hi! Sorry, I have been on vacation and am still currently on a cruise haha. Shallow frying is actually a little easier than deep frying. With deep frying always use a thermometer so the oil heats to the exact them that you want. With shallow frying, Medium-Heat is usually a good heat to use. If you use gas the pan heats up much quicker like 30 seconds to 1 minute, if using an electric burner, it will take a few minutes longer. It will kind of glisten when it is ready. If you flick a little water on it it will sizzle. I let the pan completely cool, then soak up the grease with a paper towel and throw it away. If I want to save it, like bacon grease, I will pour it into a mason jar and store it for later use in the cupboard. If you are deep frying you can let the oil cool down and then pour it through a strainer back into a container, and resuse it. Just use it for the same kind of food, like don't make fried chicken, and reuse that oil for donuts or fritters, etc.

    • @samb7652
      @samb7652 5 місяців тому +2

      One old cowboy trick is to throw 2 or 3 popcorn kernels in the oil while heating up and when they pop your ready to fry... don't turn down the heat as each frying item will be taking heat out of the oil... happy trails!

    How is this different than Italian fried dough?

    • @inthekitchenwithmatt
      @inthekitchenwithmatt  6 місяців тому +1

      It may not be, fry bread is not only an American Indian thing. Many many many cultures have been making fry bread for many many many years. This particular recipe is the one that Navajos and many other Native Americans used. With that said it also depends on the recipe, there are many Italian fried dough recipes that use yeast-based dough. This dough doesn't use yeast.

    Is this basically the same as a beignet?

    • @inthekitchenwithmatt
      @inthekitchenwithmatt  2 роки тому +1

      Fairly similar. Beignets are fried dough as well, but shaped in a small square or rectangle and much fatter, and not super crispy. A lot of beignet recipes also use a yeast-based dough. Although mine doesn't. Here is my beignet video ua-cam.com/video/pa-J8zSeJFA/v-deo.html

    • @inthekitchenwithmatt

      If you just toss them into a hot frying pan they will turn out like a flat bread and not be fried bread. They will taste much different from each other. The least amount is around 3/4 to 1 inch deep as far as deep frying goes.

      Slightly different than Bunuelos. Bunuelos are even thinner and crispier. Most of the time have eggs in them, which traditional Navajo fry bread does not. But I can see how you mistook these for Bunuelos.

    Can anyone please tell me what I am doing wrong? I followed every step exactly. I even threw out the 1st batch of dough & made another to be sure. Mine is so sticky. I can barely knead it because it sticks to my hands. What am I doing wrong? Is it specific brands of products?
    I am trying to get better at cooking, but I am constantly discouraged when the same thing keeps happening. I try to follow simple recipes & videos. I am always so careful & sure to be precise with ingredients & instructions, but almost every time mine will turn out completely different &/or bad. It is so confusing. I can never see what I did wrong, but the end results are constantly bad. :(

    • @inthekitchenwithmatt
      @inthekitchenwithmatt  Рік тому +1

      hi there, if it is too sticky you didn't follow the instructions. In the video, I said it will be sticky, then you add more flour to the counter. As you knead the dough it will stop being sticky. If it is still sticky add a bit more flour. Also are you using American Standard measuring cups to measure the ingredients?

    • @inthekitchenwithmatt
      @inthekitchenwithmatt  8 місяців тому

      Indian fry bread or najavo fry bread is definitely the more common term. And while technically true that anyone born in the US is a Native American, the term Native American still refers to people that we would call "Indians". And it still exists as a classification of people by the Government. When asked what nationality you are, if you are white and born in the States, you can't select Native American which will also be a selection, haha.

      There are many fry breads out there. I live next to an Indian reservation, I know what fry bread is. It is not moist by itself. It is deep fried exactly like I showed. It becomes soft depending on what toppings you put on it. Besides that, just like most fried things, if you want it softer don't fry it as long!
