    Puff pastry, also known as pâte feuilletée, is a flakey pastry made by laminating dough. Frozen sheets of puff pastry are easy to pick up at the store, but after trying this quick homemade puff pastry recipe, you’re never going to want to go back to store-bought. While it does take a little bit of elbow grease, homemade puff pastry just cannot be beaten.     It really helps to dunk the block of butter into the flour when grading, makes is much easier to grate

    Perfectly pronounced “pastelitos de guayaba” so glad I found you, simple recipes are encouraging for people who want to try challenge themselves in the kitchen, you are a very pleasant person to listen to.     Made it twice in culinary school and that was ok for me, lol if you’re into pastry this is good to know. I love how he breaks it down. I use my puff for quiches, vol le vents and pastellios de guayava.

    I've found that freezing the flour helps too. Just pop the bowl in the freezer until the butter is ready. I've also learned that a bench scraper can be your best friend!

    You are awesome ! I’m 40 and had to learn to cook myself since my moms speciality was either wish sandwiches or cereal. I now measure my ingredients by weight and they come out much better. I use a lot of your recipes and I’m thinking of buying your book!

    Was brave enough to try this recipe tonight after a dismal failure with a different recipe almost 12 months ago. I'm very happy to report it was a complete success and I made a delicious spinach and feta pie. Thank you for your generous instruction. I will never go back to store bought or any other recipe.     Just so happens I have a package of kerrygold in the fridge, along with some domestic butter, saw it in the dairy case, and it just appealed to me, appreciate you explaining the differences in the product composition :)

    We live in Mexico and, while I've seen Kerrygold butter on occasion in certain stores, I don't recall ever seeing puff pastry dough. Soo excited to see this recipe because now I can make my own! Well, I can attempt it, anyway. ;-) Thank you!

      Yeah here in Vietnam they don't sell puff pastry either! So sad. Now I can just attempt to make my own😁. I think I have seen Kerry gold butter in stores but its so expensive!!!

    This dude can hear what my heart says
    at 3am. Where I live puff pastry is not readily available so the requirement of puff pastry has held me back quiet a bit.
    Edit: I just made the pastry...it is absolutely amazing!!! Give it a shot without any hesitation. If you live in india try it with president brand butter and not amul. It does wonders

    You can’t find frozen puff pastry in Romania so wooooooohoooooo I’ve been eagerly waiting for this recipe because I’ve seen many of your recipes that look soooo cool but require a frozen puff pastry.

    Such a great way to make the puff pastry, so flaky, I've made a version of rough puff but for some crazy reason never thought to fold it! I love using puff pastry for chicken pot pie.

    This looks super easy. Thank you so much for this recipe 😍 I love puff pastry for quick and easy snacks . I just roll it out the same thickness as store bought and cover it in egg wash, sprinkle with pink salt and lots of caraway seeds and bake until golden brown. Best quick snack ever, especially with beer 😊💖

    I've been making scones like crazy for the past month. One tip I learned from a commenter was to put the cheese grater in the fridge. I tried putting it in the freezer but my frozen butter got stuck every single time. I switched to that tip and the butter released from the grater with just a tap. You don't have to keep it in there long. In fact I noticed the longer I did it didn't release as easily. I'd say about 15-20 mins tops and you should be good. Hope this helps someone...

    I tried the American butter, against your advice, and it still turned out nice. The good butter is so expensive, I didn't think it would hurt to try the cheep stuff. I'm glad I did. Maybe it depends too on the specific brand.

      I've used only American butter, common supermarket stuff, and it always works perfectly fine. But I think he works the dough too much with his hands; that may be part of the problem. I work it for only a few minutes at a time and then stop and refrigerate for a while. It's key that the butter not melt or even get too soft. I start it the old fashioned way, with frozen blocks of butter and beat them with the rolling pin. lol

    Ooo My God! I was so obsessed to make puff pastry last week, I tried, it turned out flaky but didn't expand completely. I saw almost EVERY reliable tutorial and then I wished if John would have made that, I would have made it right😂

    Hi John. Your recipes and videos are my favorite. I remember, years ago, seeing a Kitchen aid video that used the pasta attachments to laminate pastry dough.

    Butter... flour...lots of chilling, folding, rolling. I noticed when I used to make this that the butter would pool by the ounce while it was baking. Maybe that was because of the water content. It still came out ok, but the butter on the bottom would formed a very brown layer of very thin film (When I made this or croissants I used to get the butter from either Costco or a local dairy.)
