  • This vegan egg salad recipe is quick and easy to make and is a fabulous substitute for traditional egg salad.
    If you are wanting to eat more plant foods or are transitioning to a vegan lifestyle, then this is a must try eggless recipe :-)
    Vibrant color, great texture and an amazing eggy flavor... this can be eaten as is or on sandwiches.
    This is a plant based "egg" salad without the cholesterol of the traditional version :-)

    500 gm block firm tofu, halved
    Chop one half (like egg white)
    Smoosh other half (like egg yolk)
    1 t turmeric
    1 t garlic powder
    1 t onion powder
    Cook to the sizzle, adding 1/4 water
    Dressing:
    1 can butter beans, incl liquid
    1 T dijon mustard
    1 lg clove garlic (optional)
    2 t fresh lemon juice
    1 t black salt (for eggy flavor)
    Blend to smooth & creamy
    Add dressing to tofu, about half
    Add chopped scallions (optional)
    Add fresh cracked black pepper

    O my word Anja it’s the best. Took me two weeks to find black salt but worth every bite Made scramble egg and toast( of course your bread recipe) and it’s amazing . Been craving egg for four months since plantbased wow wow wow

    I just had to tell you that yours is truly the BEST vegan egg salad I have ever had. I have tried many different recipes, but yours truly nails it. I did use vegan mayo instead of your dressing, but the way you cooked and seasoned yours made a huge difference :) Thank you!

    I made this yesterday, and WOW, it is awesome! Not only does it taste great, but it looks like the traditional egg version. I hope to live in a world where THIS version is the traditional, and the egg version is the less used! Thank you for sharing this recipe! Love your videos!

    OMG I had this at the Vegan Tasting in Charleston WV last month & it is a GAMECHANGER! The VERY 1ST time I haven't spit tofu out !!!     I bumped into this YT by chance; I'm feeling lucky. This is the first cooking demo I come across that ACTUALLY DEMONSTRATES AS IT EXPLAINS! No intro blurb that's so annoying when you're in a hurry to know how and what to do... Lady if your other demos are like this, you're my mentor. My thumbs up for this video! I've got all the ingredients in the kitchen; I'll try it now!!!

    FYI all Indian stores sell black salt (pink in color) as Indians use it in vegetarian chaat recipes also in Indian lemonade

      Yes! It may say Kala Namak on the packet. Kala = black, Namak = salt.

    If you don't have tofu you can cook a broad, fat, chunky form of pasta (like fusili, rotini, rigatoni, etc.) until it's really soft/soggy and cut it up into small pieces and use it instead of tofu - that's what they do in Germany. This is a fantastic recipe - thank you for sharing! This is one of my go-tos for easy take to work lunch.

    I started watching your channel last year when I was a poor college student with little means for grocery shopping or cooking, and it was quite difficult to recreate a lot of your recipes.       Plant foods are available in every country, no? Fruit, vegetables, legumes, grains, nuts/seeds. I think when people are confused they are over thinking it. And since you have access to the internet (which is full of recipe ideas) there's surely no room for being confused as to what to eat.

    An amazing recipe which I enjoy very often. I think it tastes even better when cold from the fridge :)
    As I don;t like tumeric, I had a bit of leftover boiled carrot which I pureed and added it to give it the egg colour. Still delicious :) Thanks so much!

    Don't like tofu? Then try akee. A yellow fruit mild enough to replace egg. Sold canned at caribbean food stores or online. Plus it is not processed the way tofu is.

      +Nikki Jones Yes! Akee is very nutritional and tastes just like scrambled eggs. When I don't have time to prepare/cook the akee myself. I usually buy from the many Caribbean, and asian restaurants/markets in my area. Very tasty and good.

      Yes akee tastes really good but it has 240mg of sodium per 100g and 15gs of fat, 3g of protein and 150 calories where as Firm tofu is only 63 calories, 7g of protein, 3g of fat and 18mg of sodium

    Yes. Very vital to this dish to cook the tofu. It holds up better when dressing is added and tastes great.

    I just made this alongside the real thing for my husband (who is not quite ready to transition from vegetarian to vegan). I had to taste both versions to make sure the seasoning was right, and I was pleasantly surprised at the degree of similarity. The vegan version would not fool my husband, but it is plenty close enough for me. Thank you very much for this "doppelgänger"!

    Oe, you gave me some good ideas. This is a whole different way to make egg salad. My mom used to make hers using mayo, mustard and a little celery and pickle relish (of course I substitute everything with the vegan options). I'm now going to try this recipe to make my potato salad. Thanks for the new ideas.💞

    I must try the butter bean mix, I make the tofu black salt for scrambled and egg sandwiches, I use vegan mayo, but this butter bean version must be so much healthier with out the oil Thank you

    this is really different from what i do but i'm going to try it when i get some beans (i'll probably add some chopped celery, parsley and peppers/capsicums but that's what i put in mine). i usually don't precook the tofu and i use veganaise but i'm trying to cut down on added oil so this is worth a try.
    i tried to post this at pinterest and facebook but the thumbnail picture doesn't show up.

      +Alex Lee They're the same type of bean, but butter beans are "mature" (whitish in color) and lima beans are "immature" (green in color). For me, a Floridian, there is a marked difference between the two. I would never call what Anja used "lima beans".

      In Australia Lima beans are the white color. So confusing. For the sake of this recipe, any white beans should work :-)

    Also... any chance you could put your recipe-inventing brilliance toward making a vegan/tofu hot dog? (Am I pushing my luck?? haha). Those ones at the supermarket are full of yucky things.

    I'm just wondering if we could use other white beans, such as canned cannellinis or great northerns, or if the specific flavor of the canned butterbeans (limas) is inherent to the salad dressing recipe ???

      One of the great things with vegan home made recipe i find is that usually you can swap an ingredient for another. So dont hesitate to modify to suit your preferences and go experiment. It's a whole new world of cuisine to discover and with room for your own creativity to explore. :-)

    Hi Anja. I am a subscriber to your wonderfully innovative recipes on You Tube. Think your fab. And warm wishes from the south of England 😘. I have today made this recipe and it’s really great. When I tasted it however and adjusted it with a little more salt and black peeper I felt there was something just slightly missing.... don’t know if you have it where you are...... Salad Cream! I know it is not an ‘up there’ epicurean condiment but boy a few (or more) tablespoons added and a bit less of your beans mix and I’m in there eating egg mayonnaise! Thanks for amazing recipe. Ps I used Asda dairy free salad cream which you can find in the ‘Free From’ section. X

    is it possible to make this with silken tofu?
    i live in a country that has little to no plant based food items, apart from vegetables ofcourse.
    so often vegan recipes are close to impossible for me to make unless i order things online :(

    Most of the recipes for vegan egg salad I find have vegan mayo (made with oil). I'm excited to try it with butter beans instead.

    When I ate eggs, I made my egg salad with mayo and sweet pickle plus some pickle juice. Since your beans are the replacement for the mayo, do you think I would still be able to use the sweet pickles instead of scallions? How do you think those flavors would mix with the garlic powder and onion powder that you added?

      +Shelia Owens Just use her method as the base and you'll have the "eggs." Then make as you would with real eggs. I did it her way first, then another batch later, I made it with pickles and everything I liked in regular egg salad. Both were great, but I preferred the one like I used to enjoy. I've been making mock egg salad for years, but never cooked the tofu. Her basic recipe is the BEST.

      Shelia Owens yes! When I first transitioned I did her tofu ad added black salt to the tofu then used vegan mayo and sweet pickles. I'm oil free now and you can do her sauce which is wonderful, I don't like scallions so I use pickles, or make an oil free mayo :)

      It seems like mayo has a sour flavor so switching to beans would seem to call for keeping the pickle and pickle juice, if you like it that way. I just had a deconstructed tofu egg salad and got pretty much the same flavor with vinegar-pickled vegetables and tofu.

    Just made this for Sunday brunch, used okara for the crumbly bits, cooked five minutes,
    then added the chopped tofu. Good with chives too. Very eggy and tasty. Thanks for the recipe!
    PS, just finished it in lieu of the hardboiled eggs my OH likes with his beetroot ovenbaked chips. Much better than egg!!

    Hi Anya, I am not a vegan, but it is something I have been thinking a lot about lately and am begining to experiemnt more and more with different recipes. I came across your channel and have been enjoying watching your videos. I decided to give them a try. This is the first one I have made. I must admit, I was a little skeptical at first, but your enthusiasm encouraged me to give it a go and by the time I could smell the black salt in the butter bean dressing, I was really excited. That is delicious and I am even going to try it over a salad, but on this "egg" it really amazed me. Keep the videos coming! Loving them :-)

      +CookingWithPlants Flavor and color - red, yello and green are essential to balanced vegan/vegetarian dishes - peppers, paprika, etc. love the idea of turmeric in the vegan egg salad - and the black salt.
