I lived in Chiang Mai for a few years... literally ate Khao Soi 2 to 3 times a week. So delicious at one of the shops that supposedly created the dish.

I get what you guys mean about Thai spice! Went to Bangkok recently... I didn't know how to explain it, but you're right -- their spices give the food a whole different flavor, not just to "hurt" your tastebuds lol

Panang curry is such a yummy dish! Hopefully the spice didn't ruin it for y'all bc it's really one of the best. Drunken noodles are a solid go-to dry noodle dish. I think it's a safe choice for the American palette.
You should challenge Herbert's tolerance of spice and fermented foods with Laotian cuisine.
I had Khao Soi for the first time last week. It was so good I cleaned the bowl, eating the sauce like it was soup. It was crazy good.

I just went to an Asian street market a couple weeks ago and had a bunch of fun dishes there, including khao soi, som tum, Thai wings, and lots of other Asian foods. Sai krok always a favorite to get from the market

khao soi is thai version of Burmese coconut noodle.. i m sure there is Burmese food influence to it. because in Myanmar, Khao Soi is noodle in our language..
They don’t add a food dye to make it orange. The brewed tea and creamer turns it that orange color.
Now I'm hungry!

I love Thai food, but I'm veggie so the fish sauce can be an issue. I love massaman or green curries, and literally every noodle dish :D

I’m so glad you didn’t do Pad Thai. For whatever reason I cannot stand the smell of it. I like other Thai foods so I’m not sure what about it is wrong to me. I’m so glad to see other dishes, I never know what to get so I stick with drunken noodles and Tom Kha.
Same, not sure why because I like the taste, but the smell can make me nauseous sometimes 😅
It’s probably the fish sauce coming into contact with shallots.
If it was added to the sauce prematurely (you want to add the fish sauce when the whole is boiling at peak), that fishy scent can go pretty crazy. And I doubt the selection available for fish sauce brands overseas would allow for much room for improvement.
