I appreciate that you featured our all time favorite Filipino adobo. I would still recommend our cane vinegar or coco vinegar for a more authentic Pinoy taste and marinate overnight for a more flavorful dish. More crushed garlic would also add in more flavor. We would also add in the onion at the end of cooking so it is half cooked, add in a few pepper corns and green sili for a slightly spicy flavor and aroma.

I made this today and really enjoyed it! I was only cooking for me (just three drumsticks) so had to reduce the ingredients etc to a third, though I think next time i'll need a little more water - half instead of a third as it had reduced nicely by the time the initial 20 minute cooking time had done, and I had planned to put the rice on so it would cook and be ready while the sauce was reducing. Either that or I put the rice on when I start cooking it so 20 minutes will be enough. Definitely one I'll be cooking again. Thanks Roland!
Gud pm. Thats tagalog abobo with sugar. In visayas its usually a mix of only vinegar and soy sauce and the usual spices. Try it with out sugar. Just balance the mix of vinegar and soy sauce.

The authentic Filipino chicken adobo just Filipino special soy sauce the brand is silver swan or datu puti and then white vinegar we don't use oyster sauce.. but l guess ur version of chicken adobo is still very tasty 🙏❤

Just tried this, skipped the oyster sauce. Loved it, plenty of sauce for the rice was the best part! Wife said its a bit salty but shes on pms so its ok

well i sometimes add oyster sauce and even worcesteshire ( sometimes hot worcestershire) and voila! it’s adobo to the next level! a little bit sweet adobo is just fine, btw. i like it a bit sweet too. to each his own preference

its ok to add corn flour if you want your sauce to be thick but just don't forget the main ingredients of adobo
