    I appreciate that you featured our all time favorite Filipino adobo. I would still recommend our cane vinegar or coco vinegar for a more authentic Pinoy taste and marinate overnight for a more flavorful dish. More crushed garlic would also add in more flavor. We would also add in the onion at the end of cooking so it is half cooked, add in a few pepper corns and green sili for a slightly spicy flavor and aroma.

I have made this dish a few times and it would come out good enough to let me know that I was on the right track, but I could tell that I wasn't quite there yet. Now with your recipe and techniques (+ the tips included in this comment) this dish has reached new heights for me!! I made it tonight and I am surely using this same recipe from now on! With cane vinegar and extra garlic 😊

    Gud pm. Thats tagalog abobo with sugar. In visayas its usually a mix of only vinegar and soy sauce and the usual spices. Try it with out sugar. Just balance the mix of vinegar and soy sauce.

    I made this today and really enjoyed it! I was only cooking for me (just three drumsticks) so had to reduce the ingredients etc to a third, though I think next time i'll need a little more water - half instead of a third as it had reduced nicely by the time the initial 20 minute cooking time had done, and I had planned to put the rice on so it would cook and be ready while the sauce was reducing. Either that or I put the rice on when I start cooking it so 20 minutes will be enough. Definitely one I'll be cooking again. Thanks Roland!

    The authentic Filipino chicken adobo just Filipino special soy sauce the brand is silver swan or datu puti and then white vinegar we don't use oyster sauce.. but l guess ur version of chicken adobo is still very tasty 🙏❤

      its ok to add corn flour if you want your sauce to be thick but just don't forget the main ingredients of adobo

    Ok as a Filipino, i'm not mad at the oyster sauce 👍also, Sugar and Onions are not essential to adobo. More authentic without sugar, chef.

      who are you to say whats authentic and whats not? everybody in the Philippines got their own recipe and way of cooking adobo. people. stop being a karen. @chef, keep it up! your adobo looks good. don’t mind my fellow filipinos hating on your recipe 😂😂😂

      well i sometimes add oyster sauce and even worcesteshire ( sometimes hot worcestershire) and voila! it’s adobo to the next level! a little bit sweet adobo is just fine, btw. i like it a bit sweet too. to each his own preference

      @@sundalo1217 Pilipino. Original adobo walang asukal at walang sibuyas. OO Kanya kanyang recipe ang adobo pero dapat malaman nya din ang original. Dapat alam nyo din yun :)

      @@lj1175 thats ok. You know what you're doing is a variation of adobo. I'm just letting him know the Basics of adobo. It can get lost with the many versions around.

    Note to self : Made this tonight followed exactly..need to reduce soy sauce and increase vinegar slightly...found it too salty

    You forgot to add bay leaf and pepper corns. No, we dont usually use onions should be garlicky though. Lots of garlic I mean and sugar to balance the sourness
