    For those who aren't Asian Chinese. Mr lau's recipes are very authentic and for someone like me that is in his 50's and "Cantonese" his recipes are very much like how we ate it at "home". The techniques are similar as well! ❤ So know you are making it just like many Chinese families or Asian food foodies authentically cook it.😊

    We use drumettes and chicken wings. The collagen from the wing leeches out a bit. We love the sauce over rice. It’s fatty, rich and umami.

    Thank you so much for this recipe. My mother used to make this at home when we were young but I lost the instructions for cooking it so I'm glad Daddy Lau shared it with us. Also, your children are absolutely adorable!

      Well also just a lot of the younger folks (read, me LOL) don't really have time to spare for prepping a whole chicken when we also gotta juggle homework, studying, exams, and even work. Something relatively simple and easy with low prep like this that can get us 80-90% of the way to the full chicken recipe is perfect.

    I am more lazy in the past in Australia cooking Soy sauce drumsticks for my housemate:
    using the all purpose marinade/Chicken marinade from Lee KUM KEE instead of mix the two soy-sauce and spices 😅

    You should do a video about dehydrating the mandarin orange peels! I would definitely like to watch that video. I have a dehydrator, and I am going to try it soon.

      in my family we just chuck it in a mesh bag and leave it to hang dry until it's desiccated to the level you see here. it then goes into a container for storage

    my parents used to make this and I got scared when they said they had to use almost a whole bottle...but since i'm only making for myself, this recipe is a lot better for me and it doesn't need that much soy sauce
    can't wait to try it!

    I do very similar, but don't simmer the chicken. I season and cook in a broiler pan until done. Anything left in the pan goes to make stock for a future dish. As are all the saved bones.

      Clementine, mandarin, satsumas are fine stick them on top of a radiator 😅 that’s what my mum does

    劉師傅,我用幼鹽捽雞,內籠,表皮,脾翼都捽勻,室溫擺幾個鐘再入冰箱貯存. 解凍後無論浸雞,烤焗都覺得其他部位過咸但雞胸仍然唔入味. 點解會咁?又有咩辦法?

      I assume it’ll function similar to adding zest - steeping the peels will give the final product a slight sweet fruity tang

    Mandarine peels? I can't stand the taste of orange marmalade. The end result will taste like burnt orange peels. I have loved everything I have I have ever seen on this channel. Not this one!
