Agree. I'm a professional chef and always keep the skin on for flavor and texture. Fat gives any meat it's flavor. Do we remove the fat from a beef steak? Of course not.

You put water in the pan, it would prob make it soften. Maybe you could do a skin cracker to put it after cooking or smth
