I guess using smoky paprika made all the difference. I don't like the way it takes over, but without it... something needed to. Mushy eggplant... The most positive thing to say about it is that it makes a nutritious side, needing a star in the main dish for sure. Near bland on its own. Pass for future. Bad thing to do to eggplant. There was enough broth to save it as soup. I'll cool and freeze most of it for that, as this is not the season for that. Cinnamon doesn't work for me in savory dishes. Is that actually Mediterranean or Mid-Eastern?
Im addicted. Made it last Sunday ate it all week and now making it again. Doing Dr. Oz 2 week diet so I havent made it yet with carrots. I am sure it is even better.
