  • Hey Friend! We are in the Homestead Kitchen baking up some Holiday Pies! These 4 homemade pie recipes are not your typical holiday pies and are perfect if you are looking for something a little different this holiday season!
    We are baking Apple Butter Pie, Sweet Potato Bourbon Pie, Cranberry Orange Custard, and Brown Sugar Maple Cookie Pie! I'm also sharing my tried-and-true butter crust recipe and a great gluten free pie crust recipe!

    Today's Recipes
    Brown Sugar Maple Cookie Pie

    Apple Butter Custard Pie:
    3/4 cup apple butter
    2 eggs
    1/2 cup raw organic cane sugar
    2 tablespoons arrowroot powder
    1 teaspoon cinnamon
    2 cups whole milk
    Bake @ 350 for one hour or until knife pulls out clean. Will still be jiggly!
    Sweet Potato Bourbon with Meringue
    2 lbs sweet potatoes, roasted and peeled
    6 Tablespoons butter melted
    2/3 cup dark brown sugar
    1/2 cup heavy cream
    1/4 cup bourbon(scant 1/4 cup!)
    1 egg + 2 yolks(reserved whites)
    1 Tablespoon all-purpose flour
    1 teaspoon pure vanilla extract
    1 teaspoon ground cinnamon
    1/2 teaspoon ground nutmeg
    1/2 teaspoon ground ginger
    1/4 teaspoon ground clove
    pinch salt
    Meringue:
    2 egg whites
    1/2 cup raw organic cane sugar
    1/4 teaspoon cream of tartar
    1/2 teaspoon vanilla extract
    Bake pie at 350 for one hour and top with meringue
    Cranberry Orange Custard:
    12 oz. bag fresh cranberries
    1 1/2 c. raw organic cane sugar
    3 eggs
    1 c. heavy cream
    1/4 c. flour
    ½ tsp. salt
    1 Tbsp. orange zest
    1 tsp. vanilla extract
    Bake @ 350 for 45 minutes or until custard is set.

    2.5 cups AP Flour
    1 cup cold butter
    1/2 tsp salt
    6-8 Tbsp cold water

    Oh my goodness ma’am!! If you narrated a book, I would buy it!! If you created a video of you reading a book I would listen to it everyday! The calm gentle tone and quietness is SO relaxing!! Great video! The pies looked good too! Lol 😂😂

      Some of my favorite homesteaders I will watch while doing other things.. working, cooking, etc… but Kelsey’s videos.. I absolutely will light a candle, grab a cup of tea and make it a whole experience to take a break to sit and enjoy entirely focused… precisely because of the energy and whole feeling I get from them! Kelsey - even when you’re not being intentional about the energy or tone of your video (like when things a admittedly hectic) it’s still so effortlessly comforting! You are so obviously loving and warm and it shows no matter what.

    I'm A very old southern woman who grew up on a homestead. You make the most beautiful pies! I have a dear friend who is gluten free for health reasons. She really misses pies. Thank you for your crust recipe and tips. I will be using them.
    I have to say that I did get a little chuckle out of your peanut harvest and roasting process. We not only boil green peanuts but when they cure, we roast (or parch) in the shell in the oven. Don't bother to remove inner husks unless we will be grinding them for peanut butter. We use them shelled raw to make peanut brittle. I hope you will try again sometime.     I too now must learn how to cook and bake Gluten-free. Although I am feeling better, learning how to find ingredients and then make them taste good has been a challenge! Thank you for sharing your recipes and for the inspiration to try new things. I thought my pie crust days were over as i had yet to find one I liked and could make until you showed us yours. It will be the next thing I try!

    Seeing all those pies lined up on the counter was a beautiful site. I have to say I am very intrigued by the Cranberry Orange Custard and the Brown Sugar Maple Cookie Pie.     If your pie dough is for two crusts, consider making into two disks instead of one large. Might be easier when you want to roll out.

    I don't know if people mentioned it and probably a lot of you might already be doing this but if using the kitchen aid for pie crust put the bowl and attachment in the fridge a while before making your crust. You might even be able to do that with food processor parts? If making crust by hand I normally freeze my butter and then grate it, put it back in the freezer and transfer it to the fridge about 45 mins before making the curst but when I forgot to transfer it it still worked out great. Also, if I know I'm going to make pie crust I will make that first before starting anything on the stove or preheating the oven. Make the crust when your kitchen is at it coolest.

    Right out of the gate, I'm so glad you started with the gluten free as I have promised a young fellow liveaboard a gluten-free pie for the holidays...also...I never buy sour cream so the fact you're trying greek yogurt works perfectly for me! Fingers crossed!!

    My gf recently bought an apple pie from the store and I wasn't a big fan of it. The flavor was alright but the crust was like a half an inch thick, top and bottom and it was just too much crust for me.
    I always like getting new ideas for pies. I remember when growing up and at family dinners there would always be the same pies, and multiple of each, every year.

    I made your cranberry relish? ( jelly?) recipe the same night you put the video out it is good! I didn't put any clove or spice in because i wanted to try it without first. I'm going to the store today and buy more cranberries and make a 2nd batch with clove so i have 2 flavors. I love it on turkey sandwiches. Its a great recipe, thank you so much.

    I’ve heard that people with gluten sensitivity and even celiac can eat bread and danish in Europe with no issues. I’m going to experiment with flour from Italy. If all goes well, I can ditch the GF recipes and go back to my old favorites.

    Stunning pies Kelsey! Great job. I’m old, so I use lard or crisco in my crusts.
    I’ve never seen meringue made that way! Interesting. I keep everything extremely cold. So putting it on the heat blew me away!

    I’m gluten free except I can use Einkorn flour. Have you tried it? It’s actually very good but there is a learning curve to cook/ bake with it.

    You are amazing. Do you find the Redmonds real salt is gritty? I stopped using it because my husband hates the crunch in my homemade bread. Thoughts please.

      Maybe you need to try the fine salt from redmonds.

      I personally do not! I haven’t ever had issues with it being gritty, but a great way to ensure it’s not is to mix your salt with a tiny bit of water to dissolve a bit! Also, thank you ☺️

      Redmond said it happens because there’s silica on the salt and that is sand so that explains it. I got real salt from Thrive. I didn’t know there was a fine Redmond salt. I’ll check my package. Thank you.
