    Rustic Brown Oatmeal Loaf: underatinroof.com/blog/2022/4...
    Chicken Pot Pie
    1 whole chicken cooked, broth reserved, will need at least 8 cups of broth
    1 cup celery
    2 cups carrots
    6 medium potatoes cooked, 1 cup broth reserved
    1 onion
    salt and pepper to taste
    1/2 tsp rosemary
    1/2 tsp thyme
    Noodles:
    2 cups flour
    2 eggs
    water as needed until dough forms
    Lemon Poppy Blueberry Muffins:
    3 cups all-purpose flour
    1 tablespoon baking powder
    1/2 teaspoon salt
    8 tablespoons butter, melted
    1 cup sugar
    3 teaspoons lemon zest, finely grated
    2 large eggs,
    2 teaspoons vanilla extract
    1 cup sour cream or yogurt
    1/3 cup freshly squeezed lemon juice
    3 Tablespoons poppy seeds
    1 and 1/2 cups blueberries
    Bake at 400 for 25 minutes
    Oatmeal Cookies
    1 cup butter, softened
    1.5 cups brown sugar
    1 egg
    1 tsp vanilla extract
    1 tsp baking soda
    1/2 tsp cinnamon
    1/2 tsp salt
    1.5 cups gluten free blend
    3 cups quick oats
    bake at 350 for 8 minutes, will be soft
    Elderberry Syrup
    1 cup elderberries
    6 cups filtered water
    2 sticks cinnamon
    1 thumb ginger
    simmer for 45 minutes
    gummies
    1.5 cups elderberry syrup
    4-6 tbsp grassfed bovine gelatin
    1/2 cup honey
    pour into mold and let set for 4 hours in fridge
    Pasta Fagioli
    1 lb beef
    1 onion
    2 cups carrots
    1 cup celery
    3 cloved minced garlic
    1 quart tomato sauce
    1 15 oz can diced tomatoes
    4 cups beef broth
    1 tbsp sugar
    1 tbsp italian seasoning
    8 ounces ditalini pasta
    1 can kidney beans
    1 can cannellini beans
    salt and pepper to taste
    parmesan cheese for serving
    Granola
    1/2 cup coconut oil
    1 cup nuts
    2 cups rolled oats
    1/2 cup maple syrup or honey
    1 tsp vanilla
    dash salt
    sprinkle cinnamon

    Definitely looks like chicken and dumplings that we make in the south but usually no potatoes. Some people do use carrots in theirs but I don't. That brie baked apple with the candied walnuts looked incredible!

      I’ve seen chicken and dumplings both ways. I think I have relatives who each make it differently but I’ve never seen it also called pot pie. Learned something new.

    My mother was from Berks County, and this was chicken pot pie! I call the flat dumplings, slicks, but I don't know if made that up myself. 😅 Mom always put celery, onion, and carrot in the dish.

    Freeze dry the veggies and can up the birds. My hog freezer is overloaded and in my beef freezer but we have a steer being processed right now so I hear you.

    Pork loin is a lean cut. Best cooked quickly such as fried. Your best bet for tender pulled pork is shoulder.

      True, but we grow our own pork and the loin is all that’s left so we make it work and it turns out great! 😊

    I can't wait to cut bread either! I just immediately place the cut side down on a flat surface to keep the good steam inside. Works great.

    Happy Friday Kelsey! You are sounding better with each video. We have been eating more soup this winter than I think ever before and your soups always look amazing! I’ll be checking those out although probably won’t make my own pasta.
    The oat bread and the apple were like wow! The apple looked like a dessert! I’ll be making some bread today so I’d like to give that a try. I only have white flour right now so hopefully it will still turn out. Praying you are doing well and staying warm! Have a wonderful weekend. God Bless You.

    I love the apple option because I like apple where my family would pick something else. This is a great quick idea for small portions! I love how you resource your own pantry and use leftovers. I continue to enjoy your channel thanks for sharing.

    I have always known that as chicken and firmed dumplings, when I make this my dumplings are drop like biscuits, that steam in the broth for ten minutes.

    You are a better person than I am! FYI family, if I go on the carnivore diet, WE are all going on the carnivore diet! No way im baking homemade bread and not eating it. Who the hell am I kidding, no way Im baking homemade bread! 😂😂😂

    Where I’m at in NC as well as when I was in VA, that’s called chicken and dumplings. They even sell them cut like that frozen in grocery stores. Where I grew up in MN, dumplings were dropped and never rolled. They’re both delicious, though it took me a while to call the rolled type dumplings hah! My husband now asks for my dropped dumplings whenever I make chicken soup.

    Cool mom makes fun shaped gummies. Practical mom makes all square shaped. That cracked me up.
    Also on the elderberry syrup topic. I wish I knew what is factual, but I heard you should NOT take it every day. Reason was that it can over activate your immune system, causing an autoimmune response. My family is loaded with autoimmune disorders, so I only take elderberry when actually fighting an illness. Just something for you to consider. Thanks for the Scripture at the end of the video.

    Kelsey I got hit with strep (that I did not have since I was 13) and a crazy upper respitory thing. Something that has really helped my sinuses and cough is the salt room all u need is like 2 sessions to knock it out

      @haou132 it is a place where you can sit in a room that is covered in medical grade salt. You sit in a chair for about 45 min breathing in this salt that helps the sinus, lungs. Great for people who suffer from allergies, eczema, or getting over upper respiratory infections.

      You have to pre soak the beans beforehand because they expand significantly. Jessica over at Three rivers has some videos on canning beans.

    LOVE the chicken pot pie you made! I grew up with it, too and it's my favorite way to make it and eat it! I tend to have to use the word "slippery" pot pie when describing it to others, otherwise they do not know what I am talking about. 🤣

      Jelly. Its made from corn cobs after you have cut the kernels off. there's juice left behind in the cobs and that flavors the jelly.
