I chuckled when Becky stated that these are not traditional holiday pies because the ONLY pie we eat during the holidays (and year round) is sweet potato pie! :)
I'm from the south and Sweet Potato pie has always been a must have dessert at Thanksgiving. I was an adult before I ever tasted pumpkin pie.
Big facts! I have to admit this gave me a hard chuckle when she stated “None of these pies are a traditional pie that you would think of for the holidays” and starts off with sweet potato pie lol 😂😂😂

My mother always made a more fluffy pumpkin pie. She would whip her egg whites and fold into the batter. Makes a wonderful custard like pie. So yummy.
Becky, at one point when you were making the German Chocolate pie, I was thinking you were making the French silk pie. I was thinking, oh my this a strange French Silk Pie. When you started making the French Silk my heart settled and I was cheering you on. French Silk pies are not an easy pie. You must be precise and humid day can cause problems with this pie. Well done. I so enjoyed this video. BLESSINGS to you and your family.
In my younger days I was asked to make 6 pumpkin pis for a church function. Mission complete. All pies cooling on the counter. Came back in to check on progress, found my cat on the counter whisker deep in one. She had eaten about 3/4 of a cup out the center and was very grateful I had made it just for her.
So excited to share this video with my 6year old little one! He was so excited to see the Halloween cookies video, and we HAD to make those monster cookies 👨🍳 my little chef, would only add the ingredients when you did in the video!! Hi Guys. a julia child tip. when mixing two different textured creams. put half the whipped mass (egg white or cream) into the thicker one. mix them but don't worry so much about losing air...then GENTLY fold iin the second half of the whipped cream and now pay more attention and be super gentle..it makes the whole process go by faster.
You made a mousse (actually a chocolate bavarian cream which is a mousse with and added custard) ... so next time you want to try a mousse, you've already done it
I share your hand mania. the first time I made bread I washed my hands every 10 minutes hehehe.

Becky, I noticed that when you dump out your Cuisinart food processor bowl, you dump the blade out with it. A little trick you can do is palm the container and stick your finger in the hole under the bowl, which will hold the blade in the container while you dump it out. I find it helpful, safer and less messy! I love your enthusiasm!❤️

Love these recipes! Thanksgiving won’t know what hit it! One thing-I store my sweetened condensed milk upside down because it makes it so much easier to get out of the can when it comes time to use it. Learned that one from my grandmother!

For the peanut butter pie, if you stir 1/3 of the whipped cream into your peanut butter mixture, and then another 1/3, etc, you take less risk of squashing all the air out of your whipped cream, instead of adding the pb to all the whipped cream at once. You can feed the leftover sweet potato to your dogs, too, they'll love it and it's so good for them! As for the chocolate, you can substitute cocoa and melted butter, since you had to melt the chocolate anyway 😊
Sweet Potato Pie is a traditional pie for Black folks. Its our Culture. Its our Soul Food. Not everyone can make it.

Becky-you made making five scratch pies look so easy. When you read silk pie instructions I told myself oops! when you read melt butter room temp. This could be why you were confused what whipped meant. Room temp butter (not melted) does whip and lighten in color and it probably wouldn’t have overflowed as it would have been more airy and fluffy. Bet it still tasted awesome!
I truly enjoyed watching Becky make each of these pies and I don’t remember seeing her confused at all...ever!
I also wash my hands between each step. Hands are essential in cooking, the cleaner the better. Clean up in between projects is a must as is getting all ingredients out and pre-measured, that’s how I role in the kitchen.

Your friend and you sharing Oreos is what my younger cousin and I do when we're together. She likes the chocolate cookie, I like the filling. We make sure we always have Oreos to share when we see each other! I am going to like watching your pies because I make pies in my family.
recently got tired of mushrooms going bad all the time in my fridge, and inspired by you preserving food, I learned how to preserve them for the freezer. When i told a food chat room about it, someone gave the idea that gives you an "umami bomb" out of it too with rendered liquid.
To a super hot pan, add your cleaned and cut(or pre-cut to save time) mushrooms. Add a small sprinkle of salt and put a lid on it for 10-15 minutes(depends on how many mushrooms you added) until there is a lot of liquid in the bottom of the pan. Instead of taking a whole lot of time cooking that liquid off, drain the mushrooms saving the liquid and returning the mushrooms to the pan to finish cooking/browning until golden.
Let the liquid cool and freeze in half-full ice cubes. I use them in place of oyster sauce as i'm allergic. It gives you the same umami bomb but without the shellfish or wheat/gluten allergy.
Flash freeze the goldeny browned mushrooms in a single layer on a silpat/parchment paper lined sheet pan and then when frozen, transfer to a freezer bag. I pull them out a handful at a time to use in my cooking just like you do the frozen onions.
I no longer have mushrooms that go bad as i do this within a couple of days of grocery day AND bonus i just figured out this week, i can take advantage of sales because they don't go bad \ :) /

Thanks, we will also try this next time. We usually just cut our mushrooms and freeze them raw and when we need them, we just take some of the frozen mushrooms and cook with them and they are just as nice. 🙂
@@SB-mw7lg i found the freezer pulls out too much moisture and they get freezer burned too quickly when frozen fresh, but if that works for you, that's a LOT easier than my way
@@lily_white We have luckily never had that problem. We use freezer ziploc bags and we take all the air out and then we freeze them. We also mostly use button mushrooms, because that's what's readily available in our stores where I'm from. I don't know if the kind of mushroom or where we live, have an influence on how they react in the freezer, but I'm really happy that it works for us, because it does make life so much easier. We usually cut up onions, peppers and mushrooms and put them in separate freezer bags and then when we cook, they're already prepped. But we will definitely try you're way as well and see what we like best. It's always nice to try different methods.

Can you believe that when I made the suggestion in one of her older videos, a bunch of people jumped at me, as if I was insulting Becky for suggesting her content could be even better with better audio? It really has helped the quality of her videos! I also suggested video lighting because sometimes her kitchen looks dark. But the audio was definitely something that was needed.

Our cake for Thanksgiving is an Atlanta Lane Cake, the 3-layer white cake is beautiful and the filling is sugar, vanilla, nuts, raisins, egg yolks and dark rum. The frosting is a boiled white icing with the egg whites.
At Christmas we make a homemade coconut cake with fresh coconut(my husband’s job.) i use a 3-layer 1-2-3-4 yellow cake. I have developed a filling with the fresh coconut milk and grated coconut. We use the boiled white icing for this cake, too, but sprinkle fresh coconut all over it❣️
Becky, I love your channel and would like to be able to try some of your recipes on a whim when watching you. I don’t have most of the spices and or oil's you have. Have you ever considered making a list of all your spices, oils, etc. Things that are must haves in order to use your recipes, as far as pantry items. I would love that.

Hey Becky, for the future, Goya has a Chocolate wafer cookie and sometimes the British section of your grocery store might have Chocolate Digestive biscuits (cookies). These pies looked amazing!
Chocolate digestive have a layer of chocolate on them. They're not chocolate biscuits/cookies. They do work for a pie crust, though. I use them frequently.
Remember, sugar is not just for sweetness It’s also a binding agent.
Refrigerate your mixing bowl and whisk when making whipped cream. Helps!
Just for future reference, room temperature butter, and melted butter is not the same thing. Room temperature butter, will whipped up and doubled in volume. But it looks like it came out great anyway. These recipes are awesome and so are you! Thank you so much for sharing it with us.

You keep calling the stages components and I got to changing my mind set on other things got going on with my life, and big projects become more surmountable as i break things down like your prep days and smaller component parts. now have got a handle on stuff. thanks, sometimes you don't see the obvious.

For the peanut butter pie, I would use Trader Joe’s triple ginger cookies as the crust. Trader Joe’s has three different types of ginger cookies but the one that comes in the clear container with the orange label. It is absolutely addicting and I try to use that with any pie for the flavors makes sense. With peanut butter this would work.

I know for the last five years, instead of using pumpkin, I’ve been using butternut squash, for my pies, I find the butternut squash has a creamier and nuttier taste. And instead of using a shortcrust pastry, I used crushed ginger snaps, with melted butter, a little brown sugar. Has more of a holiday taste. I’m wondering how it would be if I used crushed snickerdoodles for a pie crust.

In the future, if you don't buy enough baking chocolate, you can mix 3 Tbls cocoa powder and 1 Tbls shortening or oil per 1 oz unsweetened baking chocolate

Budget pies..... Graham cracker crust, 2 boxes of chocolate or cream cheese jello pudding, 1 half gallon milk and optional whipped cream. Make pudding in batter bowl with half cup less milk so it is stiffer to cut into slices. Pour mixture into crust and refrigerate 3 hours. Add whipped cream when serving
Yummm, I think I'll attempt the moose one 😢. I think most of us tune in for the cooking, recepi and your take and antics on it. Maybe consider leaving the cleaning emphasis out. We know what happens after a great bake adventure.

Hi from Australia, loving your content, I am 68 and love to cook and bake yummie food for my hubby, my daughter, her partner and 5 children, 4 of them are under 10. They are true critics and tell me what they want me to bake again or not...cooking is so relaxing and satisfying...I do make alot of different cheese cakes, my daughter, her partner and children absolutely love..they ate also big fans of my German potato salad my mumma taught me how to put together...my mumma was German, 91 when she died, she had 8 children, was very clean in her house and a fantastic cook or baker. She worked in bakery when she was very young, I think that's where she learnt all her cooking skills...sending blessings to you Josh and baby ❤
I make that french silk pie! You can make it in a regular pie crust, graham cracker, or don't put it in a pie at all. I serve it just as pudding, put one of those rolled cookies, and a few raspberries or raspberry sauce- perfection!

Hey, y'all! Another great video, Becky! My French silk pie recipe is from the 1960s, if not older. The eggs are not cooked at all. They get added one at a time, then beaten for 5minutes each. Then, into the fridge, it goes.

@dianepace7376 The short answer is yes. The recipe came from a Navy cook and long-time family friend that my dad was deployed with a few times. No one has ever gotten sick from eating it. I don't know the science behind why it's safe to eat, but I think it has to do with how long you beat the eggs after they are added. They get beaten for 5 minutes ,so 10 minutes minimum.
@@colonelvedegys1561I’m not a germophobe and I have my own chickens and have never been sick from them, but I have to say, beating eggs will not do anything to the bacteria if they have it.

Ma’am I have to say thank you I have been watching your videos for a week or so we bought a sams membership and noticed we can pay the less than what we pay know per bulk item and get more I thought we would have to do an extra amount of money every time we bought in bulk but it basically made are food bill go down wail getting more food. Hi Becky I live in Barbados and we don’t usually make pies but after watching this video I’m going to try . You are a great inspiration
Becky - when I do my whipped cream/mousse/meringue sort of baking, I put about 1/3-1/2 of the mixture into the the bowl and just get it added without intentionally breaking git. Then, I’ll add the rest into the partially combined items by folding AND turning the bowl about a 1/4 turn with each grab to the middle and pull through. Add that bowl turn and you’ll be super happy with those airy recipes.

Hi Becky! I just use the chocolate Teddy Grahams crushed in my mini mint cheesecakes and then put a little bear on top. They work great in a pinch!😊

Have you ever had a grated sweet potato pudding? It has a different consistency and taste than pumpkin pie, so not so much like pumpkin pie.
My grandmother made an incredible two-crust sliced sweet potato pie. Bake or roast the sweet potatoes, partially, then build it like an apple pie…incredible!
My Jakie made wonderful persimmon pudding, she had the bushes. She also made two-crust apple pies with apples from her Lodi apple tree.

I've been making my Grandma's Peanut Butter Pie for several decades. However, Nabisco stopped making the chocolate graham crackers.
•NOTE WORTHY: There are Chocolate Teddy Graham Cookies availablein some stores. However, my family & friends love brownies with chocolate chips in it on the bottom, the after cooling, the Peanut Butter Pie goes on top. I love to garnish with chocolate curls.
It's a UGE HIT every time!
->Another variation is normal pie crust, with a layer of crushed roadtd peanut nuts on the bottom, with the pie on top (no chocolate)
