I'm from South Africa n this is the recipe I use for years I sold them at schools in 1988 n my kids were young at that time n they went door to door selling it for only R2.00 brought lots of memories I started selling them again in 2023 using the same recipes boy what a good seller n the toffee is glossy crunchy n tasty but the only thing you have to eat on the same day it doesn't last more than a day the toffee drips off but thank you guys I love you n I do it exactly like yours
Made these tonight to sell at a market tomorrow. They turned out beautiful and glossy. Mine have some bubbles as did not have the granny smith. Will try the granny smith next time. The toffee tasted so nice. Was so easy to make thank you for the recipe
Your apples came out with bubbles because you need to remember to remove the wax (by putting them in hot water for 10 sec and dry completely) Then let them sit on your table or counter for 24 to 48 hours. After the hours, whipe with a wet cloth and then again with a dry cloth. The holes is from wax or the sap from the apples.😊
Wanted to let you know how mine turned out. Not too bad for a first timer. Live in the US and darn hard to find proper candy apple where I live, especially the type I’ve been looking for as long as I can remember as a kid. Candy apples my “cryptonite”, ever since a kid growing up in Rustenburg, South Africa and come “show” time mid June, you could count on me getting my “toffie appels”. So, they turned out fine, as per your mom’s recipe. It’s got that nice hard yet brittle coating when you bite into them. Perfect as you don’t break your teeth biting into it :-) As you explained they harden pretty quick and after a quick taste test, they went straight into their little wrappers, “celotape” and all. One thing to note: I almost ruined my batch. The time difference without a themometer is crucial. I actually bought one but didn’t use it. I wanted to try exactly as you did it. At 5 minutes did the cold water drop test- still a little bit soft and squishy. Here’s the kicker: at 9 minutes, not 10 for me at least, I did another quick test (and in the process spilled syrup in my index finger...man that’s hot...I know understand your heed of advice and will be more careful next time). I spilled it because I smelled my syrup burning, or got a whiff of it. So between minute 9 and 9:30, the syrup went a much darker or deeper colour and I had to lift it off the plate. I knew it was ready, but by minute 10 I had to rush it a bit in fear of my syrup burning. I was able to dip and cover at least 8 apples and didn’t want to do more since I were afraid my syrup burnt. However, they turned out perfect except not as red as I had hoped (maybe that’s because it was burnt a little). They have a slight brown tint but tasted fine and a beautiful “glassy” hard outer shell. Maybe next time I’ll turn my plate to low a little bit earlier since it seems those last few seconds make all the difference. Who knew? Oh, and I did granny smith apples. They made a hissing sound when resting as some of the juicyness was bubbling around the stalk/dowel while cooling. I guess way too hot right? Anyway, will give this another shot again since I have all the ingredients now. Oh, and my non stick pan worked like a charm. No real mess really afterwards. Boiling with water again did the trick.
Well done 👏👏👏 Thank you so much for the feedback. My mom is a toffee apple whisperer, she can tell by the sound of the pop the bubbles makes when the syrup is ready, the water testing is just a confirmation. It is important to note the time because every stove top is different. I am sure your next attempt will be perfect. It's great to hear from a South African living abroad. If you are on instagram, share a picture of your toffee apples and tag sweetphatz. Lekker dag vir jou
Made these toffee apples for my family today. Never made them before and I was so worried. Thank you so much for making it so easy. So simple to follow and they came out amazing. Thanks
This is how I remember toffie apples we bought at a shop in vdbp. The lady looked like the lady in the video. Was just wondering. She always made lollies from the left over syrup. That was the best❤
Made this today for my kids , I was a bit worried about over cooking/ burning the syrup but following through the instructions it was perfectly easy to make and yummy 😋 thanks 🙏
Made toffee apples today with my little cousin for the first time and they were delicious we really enjoyed them! What a lovely activity, thank you for the tutorial. Love the gift wrapping also, nice gift idea for Halloween and Guy Fawkes!
I love toffee apples! 😊Our Mother used to make them, then when they were set, she"d cut them off the core & pop them into a cup for us! Great hint about the granny smith! I've had the bubbles & that makes perfect sense.
Thank u so much for this. I tried your recipe only thing I didn't have the cream of tartar. Came out absolutely lovely. Only thing I did wrong was take out of stove so it got hard too quickly. Thanks again😊
I just tried this recipe today. I was always intimidated by toffee 🍎, seemed so difficult. I hit it right first time, extremely high gloss and perfect hardness.
Love the way your mom does the candy apples. She's from the ole skool days when mom's really knew how to cook.l love candy apples and saw a lot of tutorials on them, bit your mom's recipe is what I will be doing for now on. She also gave some good pointers . Does she have a good chicken an dumplings recipez?
I'm a treat artist and I've experienced that candy apple mixture with corn syrup makes them start to stick quicker. I'm going to do an experiment and try this recipe to see how long it take them to stick. If they don't, I'm using this recipe from now on.
Great vlog ladies! Thank you both so much. Just like when I too was a child. I will be looking out for small Granny Smith Apples now too. They are also my favourite type of apple. More vlogs too please 😊

Hey!! They look great...reminds me of when I was a kid! ; ) I noticed your mom didn't use any corn syrup in her recipe. About every other recipe I have seen uses it, is there a reason why? Does it make the sugar more hard and crisp with out it? Not many use the pinch of COT or the vinegar either. My grandmother use to make them all the time but passed away and I never got her recipe. I really like the "old school" recipes like your mom's...these recipes come from years of experience!! ; ) Seems like the apples hardened beautifully and was ready to package up quickly. Thanks for the help with the questions...Hugs from Texas!! : )
We had our second go at these this morning, and they turned out perfectly. We didn't want to use plastic bags so we cut out big circles of grease proof paper and tied with a ribbon, which looked lovely. The kids really loved the left over lollipops too!

Hello. I don't think that we have ever tried Fuji apples. I can't give you meaningful feedback. If you try it, please let me know. Have fun and don't burn yourself.
Thank you so much ! perfect instructions, tried it with red apples and golden delicious and you were right they formed bubbles , a question please my daughter want a stick toffee apple not to become as hard as candy , how would I do that please ,
I did de recipe but two things happens after a while so I need your help because I’m making a big batch 1 the candy got very sticky and the plastic bag got stock on the apple 2 the day after I made them the candy got watery and started to melt I really need your advice because I need to make 75 for tomorrow Thank you
You didn't cook the syrup long enough. It should cook about 10min on high or when a drop becomes a hard ball when dropped into cold water. The apples have to be put into bags as soon as you finish the one batch. It will be easier to make only 30 at a time
Phatz Kitchen I did the water test the hard ball test and it was good hard candy Thank you for your response Another question will be good to do it today to deliver tomorrow or do it tomorrow instead
If you put them into bags as soon as they have cooled, they should be fine for tomorrow. Don't put them in the refrigerator because that can cause stickiness. Also, if the weather where you stay is wet and humid, it might be best to do them tomorrow. Seal the bags tightly. Granny Smith apples don't cause the candy to become runny so they are the best to use.
A day before is perfect. Remember not to keep in the fridge. Clean the apples and allow them to dry nicely. Stick the sticks in a couple hours before dipping. Clean any juice that might have run out around the stick. The less moisture, the less inclined the toffee is to become sticky. All the best and enjoy. Thank you for the feedback.
@@PhatzKitchen It was great fun, the kitchen is now very sticky! We had two tries, one burnt very suddenly, the second we were too cautious so it was chewy. We think we're ready to make some for his class at school now.
Write down the heat setting you use on your stove and the time it takes to reach the hard ball stage with your successful try. It will ensure only success in the future. Holding thumbs for you.
I followed your instructions but mine burnt when I turned the heat up and stopped stirring. After 3 mins i could smell the sugar had burnt and that was that. I will now attempt it again and this time when the sugar has dissolved I will up the heat to only 3/4 instead of turning it right up to full. Fingers crossed.
I am sorry to hear that. That is the tricky part. All stovetops are different. What is medium heat on our appliance could be hot on yours. I am happy to hear that you are not giving up. Make sure to make your own notes when you get it right so that you only have success in the future. Holding thumbs for you.
@@PhatzKitchen thank you for replying. My 2nd lot were great, But they were rather hard and by the time I dunked the last apple the mixture was rather thick. my daughter loved them and that's all that matters. Thank you for sharing
How long do the toffee apples last once you've made them if you store out of the fridge? Say thanks to your mum thats really informative, I like that she tells you why she's doing something instead of just doing it. 😉
Hi. It depends on the humidity and how well you seal them in the bag. If they are Granny Smith apples, they will last about 3 days if the air is dry. Any other apple will last 2 days if you are lucky

Just to be sure once again. She only used 2 cups of sugar and 1/2 cup of water to make all that syrup? It really looks like a lot more.
Monique Alfred she had doubled the recipe
What can u use instead of cream of tartar because I didn’t think we have it in the shops here
This is an old recipe hence the cream of tartar. We don't have a problem finding it. It's used in meringues as well.

Jonathan Pringle it depends on the weather. They last longer in dry conditions than humid. Two to four days

Can you make it without cream of tartar
There are recipes without creme of tartar that you can try.
Ok thanks
If i don't have cream of tartare can i replace it by something else or can i not use it at all?
Thank you
The cream of tartare makes this recipe unique. I think that might need to find a recipe with corn syrup.
Can U please advise how too thickened my sause please cause its too thin.
Hello. If they syrup is thin it means that it hasn't cooked long enough. A drop of syrup must form a hard ball in cold water after a minute.
I'm a kid and my dad said his going to make one tomorrow im so happy
Enjoy
