Side note, the America's Test Kitchen guy said he never uses unsalted butter EVER anymore. It never has enough salt to affect the end product and salted butter doesn't rot after a few weeks like unsalted will.
True, the difference in between the lvl 1-2-3 chefs this video are drastic. Not even talking about the "smoked" butter or salt... but that thicc cookie + soft middle + button chocolate is just an excellent combination.
Normal people are not aware how real chocolate cookies should look, Penny made some original, beautiful cookies, way more complicated than the others ones but well worth it.
Because she wasn't "acting" that cheerful and passionate like Lorenzo, and people like that kind of stuffs nowaday. But let's be honest, she has been doing it for a very very long time, daily, so she knew exactly what's gonna happen next and how the outcome should be. The work of a professional is always very calm and steady.
@@kt81379 I mean, this is my opinion, no disrespect, but I find Lorenzo obnoxious and annoying. I enjoy a confident but not cocky person and I feel like Lorenzo is very cocky
It should be Level 0: cheesecake pancake guy Level 1: ketchup girl Level 2: lorenzo Level 3: pro chef Level 4: lvl2 grandma (coz her dishes are practical and she's so cute)
penny is such a mood and i love it. She’s like an “i’m better than this” mood. her “thank you” at 8:11 was literally the best thank you i’ve ever heard.
They have to make it extra as they want to make so that there a reason to buy their instead of making your owns and plus if they are a bakery that don’t mind putting their cookies overnight then they have time to make them extra
@@Talledo12 Even if it wasn't, it would have been by default because the level one chef totally burnt her cookies, which might taste fine right out of the oven, but it'll taste horrible once it's cooled down some. Lorenzo looked like he cooked his cookies a few minutes too long so they'll be hard in a few minutes. Penny's looks absolutely amazing but will cost us like $2 a cookie, considering she used real vanilla beans and smoked her butter. However, I'm willing to buy a few to try them.
For the skill-levels, all three did well. Of course the pro's are the best, look at those ingredients. But still, I like Lorenzo's attitude in the kitchen the best.
Yes specially when have best ingredients. Be surprised it does taste alot different. Specially chocolate. When tried the eat you try regular chocolate from store taste that oily feeling when rub tongue on the roof of your mouth. Expensive kind just melts so creamy ahh love real chocolate 😂
I didn't think the pro's looked the best. I'd much rather have Lorenzo's. The pro's looked way to cake like. I don't want a cake like cookie. I want a nice crunchy, on the outside, chewy, on the inside cookie. Also, I personally don't like dark chocolate, so while the pro may have used higher quality chocolate, I wouldn't have liked it.
Everyone is different. That’s the thing about recipes. They all look good, and they all did a good job. Personally, I liked the look of the professional’s cookies best. But everyone likes their cookies different. As someone said before, some like chewy, some crunchy, and some like in between 🤷🏻♀️ Plus, all of them loved their cookies. So none of them is really better than the other.
@@harveyalferez1851Every video from this channel is full of comments hating the level 3 from the way they talk to the food they make. It’s stupid af lol.
People are being way too critical of the professional chef. Certainly, not everyone can add smoked butter and salt to their cookies, but she's a professional baker, and her career is based off of enhancing and creating new flavours. While it might seem extra, I find it amazing how she strays away from the rest of the chefs and thinks outside of the box.
Exactly, she did extra because that's half the point of having an expert in the video! Plus the food scientist explains that the smoke helps balance the flavor, it's not just fluff.
I like her style of cooking probably the most just personally wouldn't have added the extra salt on top before baking even though I'm sure it tastes great, extra salt isn't healthy for anyone
I think people are being really hard on the professional chef. Realistically, if you're the one making a cookie at home, you'd make it more like Lorenzo, but if you're going out to get dessert from a real bakery, you'd want something like what Penny made. I think the video just made her seem pretentious when she's really not
Alyssia Taylor Thank you very much for stating this. When she decided to start cooking professionally, she probably learned all this, and really knows exactly what she would want in a cookie. As a result, I really admire her.
I really dont think there is a need to smoke butter or salt. Maybe if youre charging five dollars a cookie. But you could use her recipe at home minus the smoking.
@Eleanor of Aquitaine There's no rule on how a chocolate chip cookie 'supposed to be'. Making food is about being creative. Lots of bakeries add different ingredients that we don't know about to make their desserts special and tasty
@@alexisjohnson6079 Ik that she is someone but she is not “just someone talking about what the other 3 did”. She is a professional food scientist analysing each chefs recipe and technique. When she wrote this comment, she said “Just someone” which implies that it is just a random person talking about it and that anyone could do it.
@@PoseidonArts I guess you've got a point. It's just a little over the top for a regular person. But hey, if she has the time and equipment to make those cookies, nothing is stopping her :)
@@Jrr592 these cookies require the freezing step, otherwise they won't rise. It's just part of this recipe since it's so thick. I suggest looking for a different recipe if you're on a time constraint
Professional chefs are going to cook and/or bake like professionals. That's how it is. Just because your grandma or whoever doesn't make them the way she does, doesn't mean that her product isn't good. Each cookie can be appreciated for different reasons. They all had different methods and different recipes and that's okay. I'd happily try any of those cookies. I don't give a damn who made them. Cooking reflects who we are. Different doesn't equal bad or wrong.
It's not people hates the chef version, it's how the narrative is biased towards her. Lorenzo cookie is what people expects, while the chef one has this "wth is this?" vibe.
@@gthumbus Not every professional will make a cookie they way she did. In fact many will make them similar to lorenzo; however, in a restaurant or bakery where efficiency and consistency are vital, ingredients are often weighed. She happened to make them differently. People have their preferences. There's certain techniques and ratios that may tend to have more positive results, but there's no recipe that's right for everyone.
Bear White Hypotheses can rarely ever be 100% proven due to the use of inductive reasoning, so I wouldn’t use that term so loosely. Especially when it’s used in the context of something so subjective; you can’t “prove” that some food that is home-cooked is better than another food made professionally. Someone can’t just confirm that without being very biased. Even if there was some source attached to that, I highly doubt that they’re credible. I would guess that type of “study” (and I use that very loosely) would have come from a news company or some sort of blog, both of which are often rubbish and far from reliable.
I tried making Penny's cookie , and damn y'all. It was so freaking GOOOOOD!!!! I baked half the cookie dough before the freezer because I barely had the patience. But the frozen half was wayyyy better
@@artsybirdy sorry I mainly eyeball everything. Just add an amount that looks similar to Penny's. Also if you don't get it right the first time don't give up! Baking and cooking is about trial and error.
People don't seem to understand how much these people are playing their characters. I don't mean to say that they are lying. But the pro is obviously playing up the professional character while the amateur is playing the goofball. If a cooking magazine asked me to make cookies I would try super hard to do my best. The amateur is just having fun. This all makes more fun characters and an engaging video. I don't think we need to start making generalizations about the quality of work done by professionals vs amateurs based on a comical cooking video. Relax folks. It's a video about cookies.
@@pinheadlarry1977 Yeah but she didn't even try to get m out eventhough I even do that xD and she didn't even try to shape m into a cookie a child does better
Your are 100% spot on. First of all, it doesn't matter if you've been baking for 2 weeks VS 75 years, everyone can make a mistake at any time. The mistake doesn't have to be a goofy blunder either, just poor measurement or something. The fact that they used the girl for EVERY *stereotype in the book*, like the eggshell, was annoying and obvious. So because she didn't go to culinary school she can't pour vanilla on a spoon? Smh, so transparent and stupid. lol Cute-ish video though.
Alina: The mom who wanted to make cookies for a potluck once. Lorenzo: The fun dad who just wants people to laugh. Penny: The chef aunt that makes the cakes for the family Edit: Holy Crap 100 likes!!!
Filthy Gaijin not noticeable enough. Pure vanilla seeds matter more in dishes where vanilla is the forward flavor. In cookies (and other baked goods) it’s an accent to the chocolate and sugar, so it’s less apparent.
felt kind of bad at the beginning because the 2 non-professionals were made to look a little ignorant even though i'm sure their cookies are awesome and they know what they're doing with their own recipes! loved the rest though!!
I think we can all agree that the level 2 guy will put out the best cookie. The amateur made rookie mistakes because... well she's admittedly an amateur. The chef I'm sure put care into it but she was almost robotic about it. But Lorenzzo put real thought and passion into it.
Moxie Beast ASMR I didn’t see it that way at all... they are just trying to show the differences! If they were trying to make them look bad they would have picked people who didn’t know how to make cookies, like some other UA-cam videos do! The idea is to teach people how to amp up their “normal” cookies. They were ordinary people, the Baker was just extra ordinary ;)
Chris Davidson I don't see how her being robotic about it would alter the flavor. It's more about the ingredients and the twist the put on it. You can be passionate about something and still be bad at it. Not saying his cookies were bad, they look delicious. Just saying that's probably not the deciding factor in how they taste.
I don't feel as if they were made to look a little ignorant as much as I feel this video showed that no matter what the skill level, one can still turn out cookies that put smiles on everyone's faces :).
To be honest, i think i would’ve like Lorenzo’s version the best. The cookie’s not too thick, not TOO much chocolate and isn’t too thin were the heat penetrates the cookie. I think Alena’s adorable AND her cookies are the type I would make 🤣! Also, Penny is Top dog and I will definitely be using her recipe!
I like the concept, and I like the science behind it all, but why didn't they just have professionals do a blind taste test of the cookies? You can tell me all day long that chocolate without emulsifiers is better, but I want to see if that's even something people notice when actually tasting the cookies. All I saw were three different styles and someone with an easel telling me that one was the best.
Would you believe the video more if they had people with lab coats on, a blindfold on their eyes, and repeating every single thing she was saying? Most blind taste test videos are still fake: they have lighting, make-up, wardrobe, editing and other tricks to tell you what they want. Your reply reflects YOUR character. (friendly reminder to youtube users, not directed at you, Gamer2k4)
I agree with you, I like science and stuff, but I wanna see some professionals people eat the cookies. They dont have to wear labcoats lmao @ the person that commented before.
I said most, not all. Anyway, I watch videos, THEN decide if they are to be believed. It is just healthy to assume they are not all real, nor are they all fake either. How would you know if they are professionals? How would you know they really haven't been told which cookies they are about to taste? How would you know they weren't paid to say one is good and another one is better?
Same. But it's 'cause level 2 chefs are home cooks which are prolly our level too (or amateur) and level 3 ones are professional chefs so they really are extra. It's their profession.
I understand it is based on personal opinion but WHY is the Pro Chef getting so much hate? She acts and bakes like a professional, and honestly I think Lorenzo’s cookies were too thin (for my taste). Just because the pro made a chocolate chip cookie with a creative spin doesn’t mean she was “extra” or trying to show off.
personally I think the pro chef did just fine; smoking the butter is interesting and I would love to try her cookies. however, what makes "the best chocolate chip cookie" is extremely subjective to personal taste and opinion, so the way that the cookie expert food scientist and video pretty much entirely sides with everything the pro chef does is a bit off-putting. there are many different styles and ways to make chocolate chip cookies, so the way they only really support her style (which uses a lot of ingredients and methods inaccessible to a lot of people) without highlighting anything that the other two did feels rather unfair to all the other ways that cookies can be made. the pro chef wasn't showing off; she didn't do anything wrong as she was just doing things the way she always would, but the video itself was showing off her methods as "the ideal" when in reality it's just one person's method and not some high standard to hold other cookies to.
I agree, although I do feel like this concept would do better if each chef had the same exact ingredients and the only variations were in their preparation. Since this seems to be about the science more than anything, having as few variables as possible would make it better fit that theme. Sure, the smoked butter and smoked salt could have made the cookie taste better, but it's hard to compare her cookie to Alina's since there's so many ingredients that changed.
Because Americans don't like anything they deem to be fancy. Whether that be smoked butter or weighing ingredients. They just want sugar in different shapes and colors.

Same! The professional chef...her's were too big and...I dunno....just not appealing to me. I mean I'm sure they tasted great but...idk....something about HUGE cookies just makes them less appetizing...also hers were not just huge but THICK and I like thinner cookies. Also also, I don't really like salt in my cookies despite what the food scientist said. Idk about salt on the top though. Wow. Apparently I have a lot to say about chocolate chip cookies.
Why is everybody taking the piss out of penny? She’s a professional. It’s her job to make it as perfect as possible. Yeah but that guy who put graham cracker in Mac and cheese....
YES! OMG! I was already thinking "no way" when she said it takes 40 minutes to smoke the butter and then she said 24 hours... Ain't nobody got time for that!
I love everyone who is up for cooking, I'm a chef. BUT, always listen to what the pros have to say: Smoking butter AND smoking salt, Bicarbonate AND baking powder, they all put the WOW factor in the recipe. Epicurious, thanks a lot for this vid, I enjoyed it a lot. Lots of love!♥
Me: "Hey kids, we're gonna make home-made chocolate chip cookies!" My kids: "Yay!" Me: "Now we're gotta let the dough rest for 24 hours." My kids: "WhhhAAAAAAAAAAAAAAAAATT??!"
What they should do to make this show a little more interesting. Is to have them share each other's made dishes. To see what the three levels think of each other's food. And then maybe even give some tips to improve the level 1 and level 2 or to give the level three a method in doing something that they made out of thought of or is traditionally accepted
Level 1: I'm using vanilla extract Level 2: I'm using vanilla seeds in a packet Level 3: I'm using vanilla pods that I had imported all the way from Madagascar and shipped all the way here to give it that *nAtUrAl* flavour
Watching this almost 2 years later... epicurious done a great job in improving their videos throughout the days, months, and years! Nice videos as always
His cookies sure looked good and I'm sure they tasted good too. But I'd say Penny's cookies still looked better. They look much softer, and the chocolate chips are well spread out so you always get about the same amount of chocolate in each bite. However, the process for making them is definitely not for everyone. Just the fact that you need to wait 24h for the cookie dough, that's a deal breaker for most people right there. I think Lorenzo's strength in most of these videos is that he can make delicious food while keeping it simple, with ingredients that you can usually find easily at the grocery store for the most part. I'd be a lot more inclined to try to make his cookies rather than Penny's, even though her cookies looked a bit tastier to me. Let's say that his recipes are probably like 50% the efforts for 90% of taste
@@kenzashenna but if she's selling them, that's going to jack the price up a bit, and I suspect most buyers won't notice a difference in taste between vanilla extract and vanilla bean.
@@Metal_Auditor You're right - just like the smoked salt and the smoked butter. She puts those in her cookies because then she can sell them for a higher price because they're "gourmet"... LOL Use vanilla beans when vanilla is the primary flavor if you want it to be fancy - if the vanilla is just there as a supporting flavor, use vanilla extract - or even better, use imitation vanilla, which "tastes better" than most extracts. The vanilla in a chocolate chip cookie is not there to give you a vanilla flavor when you eat it, it's there to enhance the other flavors. Also, bake your chocolate chip cookies at 375 degrees so the sugar will caramelize and then you won't have to do things like smoking the butter... 😂
@@kumada84 having done the smoked butter myself, I can highly recommend that. If you haven't done it, you should try it. I used my charcoal grill and it worked fine.
I use a vanilla bean paste. It kind of splits the difference between extract and whole beans, in terms of taste, but it’s a lot more affordable than buying whole vanilla beans.
My Mini & Me Car Vlogs She isn’t a baker, she is a scientist that analyzes the components of what the actual cooks make. The level 3 is the “max level” and the level 4 is just there to show you what they did and explain why they did it.
I honestly prefer Lorenzo's cookies in terms of actual cookiness. The perfect cookie must be a cookie you can't stop eating, very sweet but balanced with some darker chocolate, not too crispy but not too chewy. The other cookie looks amazing, but it looks like the kind of cookie that you eat ONE and you feel bad for doing so being so heavy and rich and decadent. It's only my opinion though, I'd have any kind of cookie if offered :)
I agree. But I imagine considering the ingredients, that cookie will be slightly expensive, and you will probably only get 1 or 2 at most.... So well worth your money, as you'll have just enough!
I like his too, though I do think he made it a lil too crunchy for my liking. Not sure if that was how he mixed it or if it was how long he cooked it, but I personally like my cookie to NOT feel crispy at all and airy in texture.
I think a lot of you are against Penny’s cookies because she brings techniques you didn’t think were done. She’s a professional and these were the steps she does in a bakery. Of course she has the tools needed to smoke the butter and has the time to chill the cookie dough. You don’t need to smoke your butter if you don’t want to or if you don’t want to buy the tools for it. YOU SHOULD CHILL YOUR DOUGH THOUGH. It intensifies the flavors regardless of your cookie baking expertise. If you’re an amateur or a home chef, try melting your butter, smoking your butter, letting it chill, adding sea salt to balance, etc. This isn’t a competition. She says in the end that more likely you’re going to like it anyway because it’s a chocolate chip cookie. They’re just showing different techniques at different levels.
They only look cakey because of the height of the cookie. It’s just a combination of the thickness due to the baking powder, the size of the scoop, and the fact that she didn’t compress the dough that attributed to a cakey LOOKING cookie. More likely, this is chewy and dense based on the ingredients. This looks like a great recipe. However, that doesn’t mean I won’t also go out and buy a premade cookie dough for a traditional cookie because that’s damn good too when you don’t want to spend a weekend on this recipe, lol.
King Arthur Flour did an experiment refrigerating cookie dough and found that even 30 minutes improves the flavor - but that the longer you chill it, the more it improves. KAF attributes this to the dough drying slowly, condensing the flavors, but I think it also has to do with the sugars dissolving into the fat and eggs. The temperature of the dough also affects how it will bake, as butter is much stiffer cold (so warm dough will spread more). I often make a batch of dough and just bake a few cookies a day, so my dough chills for a while. For myself, I use store-bought chips, but for gifts, I use high-end chips I order online. I don't weigh, I measure - as a home baker, I like a bit of variety, but for a professional baker, consistently high quality is their livelihood. Too bad I don't have any cookie dough in the fridge, I'm getting hungry!
nah the steps were fine, but the end product just looked more like chubby scones than cookies. I don't know how they taste but the texture looks too bready.

They have to make it extra as they want to make so that there a reason to buy their instead of making your owns and plus if they are a bakery that don’t mind putting their cookies overnight then they have time to make them extra
Just by the looks, number 3 was the best imo
@@Talledo12 Even if it wasn't, it would have been by default because the level one chef totally burnt her cookies, which might taste fine right out of the oven, but it'll taste horrible once it's cooled down some. Lorenzo looked like he cooked his cookies a few minutes too long so they'll be hard in a few minutes. Penny's looks absolutely amazing but will cost us like $2 a cookie, considering she used real vanilla beans and smoked her butter. However, I'm willing to buy a few to try them.
Say Soun I feel like most local bakeries sell their cookies at around $2, so if they were for $2, that’s a very good deal.
Exactly! Gosh some people don't understand that it's because she's a professional she does these things.
How do we know that, at no point did we see them taste each other's. I would bet if you gave all three to the public the 2nd guys would be rated best.
There is merit also in not trying to reinvent the wheel. How is it that out of all 3 hers looked the worst, cakey and huge.
Lorenzo’s look the best to me tbh.

TheKorerican agree, it was already said that they have to make a version of their own cookie yet the chef still receive hates on her version ...

I'm assuming the bean gives you a better vanilla taste?
Filthy Gaijin not noticeable enough. Pure vanilla seeds matter more in dishes where vanilla is the forward flavor. In cookies (and other baked goods) it’s an accent to the chocolate and sugar, so it’s less apparent.

You amateurs make me sick

It is proven that people seem smarter and more trustworthy if they are wearing lab coats.
why watch youtube videos at all if you just assume they're all fake?
I said most, not all. Anyway, I watch videos, THEN decide if they are to be believed. It is just healthy to assume they are not all real, nor are they all fake either. How would you know if they are professionals? How would you know they really haven't been told which cookies they are about to taste? How would you know they weren't paid to say one is good and another one is better?

Same. But it's 'cause level 2 chefs are home cooks which are prolly our level too (or amateur) and level 3 ones are professional chefs so they really are extra. It's their profession.
I like what level level 4 cooks... oh wait...

I literally gasp when I saw Penny's cookies come out of the oven 😍 my mouth is droolingggggg 🤤🤤🤤

"4 levels of chocolate chip cookies "
Me: *Thats 3 levels in the thumbnail*
The 4th level is the food science evaluation
@@HappyFluegel the evaluation showed nothing new. I agree, 3 levels.

There are people who make turd chip cookies.
Me: "Hey kids, we're gonna make home-made chocolate chip cookies!"
My kids: "Yay!"
Me: "Now we're gotta let the dough rest for 24 hours."
My kids: "WhhhAAAAAAAAAAAAAAAAATT??!"
Joke on you she's not a homecook, you're nothing but a peasant
Me, I want to make cookies for coffee time, let's look for some expert advice. Seems like I'm not gonna eat cookies for another day
Hahaha 😅😅
FR! Aint no way im gonna have those kinda patients either!
Ayumisan Yuki you seem a bit hurt my love
"I make a good cookie"
LEGEND
What they should do to make this show a little more interesting. Is to have them share each other's made dishes. To see what the three levels think of each other's food. And then maybe even give some tips to improve the level 1 and level 2 or to give the level three a method in doing something that they made out of thought of or is traditionally accepted
Christopher Everett no kidding, I thought they would obviously do that but I guess not
Exactly...sharing the food n opinion would make the vid more fun n informative
They should have the food expert taste all three of them and have her rank them.
Is it just me that like the cookies hard around the edges but really soft and almost doughy like in the middle??
Nope, me too!
Nope me too !!!^-^
Lets make this the "hard-soft" gang.
You are my spirit animal 🙌
I like that too.
Level 1: I'm using vanilla extract
Level 2: I'm using vanilla seeds in a packet
Level 3: I'm using vanilla pods that I had imported all the way from Madagascar and shipped all the way here to give it that *nAtUrAl* flavour
@Faris Khadar :( I worked hard on that comment

I'm a food scientist.

You speak the truth
Not gonna lie Lorenzo stays killin it
His cookies look the best imo. Not too thick, not too thin, no unnecessary gimmick... Just good cookies.
Michael Chavez in most of the episodes I like his cooking the most
His cookies sure looked good and I'm sure they tasted good too.
I love the way they have the same reaction when they tried their cookies.
However, vanilla bean seems unreasonably expensive for making cookies. I'll pass on that and stick to the extract.
Shes a professional baker its not an everyday recipe for families duh
Bro.... I just binged watched all the episodes. Now I'm bored :(
Im in route to that

Why doesn’t the food scientist make one. Technically it’s only 3 levels if she’s not gonna bake something
My Mini & Me Car Vlogs She isn’t a baker, she is a scientist that analyzes the components of what the actual cooks make. The level 3 is the “max level” and the level 4 is just there to show you what they did and explain why they did it.
I agree. There shouldn't be a level four. Just the food scientist critique. It's a dumb name.
It would be just perfect everyone would bow down to their new master
That’s what I want to see. Easy to say the science, let’s have them put their studies to the real world.
Shooketh Or like saying yeah it’s real easy for those rocket scientists to spit out the science but let’s see them go to space
Think about the fact that the food scientist was actually looking at a green board
Sped GottaGoFast lol
LOL this makes me feel like you ruined my childhood somehow

ANY cookie?
The professional chef's cookie was too big, and the chips were too big. I don't have much other complaints than that though
Yea, and I like my cookies crunchier too
You forgot my level. Cookie dough

nah thats level 5
With Hannah here. I hate thick and soft cookies. I was very into Lorenzo's cookie since that's how I like em.
I love the type that the professional made- dense and chewy. I don't like flimsy and chewy or big and hard as much.
IM TRYNA FIGURE OUT HOW TO MAKE PENNYS COOKIES BUT SHE’S NOT SAYING MEASUREMENTS 😭🤚🏼
