How to Make Khao Poon Nam Pa (Lao Fish Red Curry Noodle Soup)

    Ingredients:
    16 Lime Leaves + Stems
    1 whole Galanga
    1-2 Lemongrass Sticks
    1 Tbsp Salt
    1 Tilapia Fish
    2 Heads of Garlic
    10 Shallots
    1 Can Red Curry Paste
    1 Tbsp Paprika
    2 Tbsp Sugar
    4 Tbsp Fish Sauce or Padaek (Lao Fish Sauce)
    500 Ml Coconut Milk
    Optional Add In's to Taste:
    Banana Blossom
    Bean Sprouts
    Long Beans
    Carrots
    Cilantro
    Cabbage (green or purple)
    Lime
    Fish Sauce
    Sugar
    Crushed Chili Peppers or hot sauce
    Directions:
    Boil a medium pot of water
    Cut Lemon grass and galanga
    Add to boiling pot along with Half your lime leaves (8) and Stems + Salt + Coriander root (optional)
    While boiling prep all your vegetables for later ** See video for how to cut
    Cut the fish in half and add to your boiling pot (make sure its cleaned and descaled)
    While you wait for your fish to cook , peel your garlic and shallots
    Cut shallots into smaller pieces
    Place shallots and garlic into a blender and blend
    Take your fish out and place in a bowl to cool
    In a separate frying pan, add oil and fry your blended garlic and shallots
    Fry for about 15 minutes until golden brown
    Add curry paste
    **Fill up your first pot with water (top up) since most evaporated while boiling
    Turn down the heat on your frying pan and continue to stir in the red curry paste
    Add the rest of your lime leaves
    Optional: Add Paprika
    Fry for about 5 more minutes then turn off stove and set aside
    Take your bowl of fish that has cooled and take all of the meat and skin off the bones ** Dont miss any bones !!!
    Place the meat into a Mortar
    Use your pestle to "smash" up the fish
    Return to your frying pan and take out most of the red curry mixture into a bowl, leave a little bit in the pan
    Add your fish into the frying pan
    Fry and mix together
    Add Sugar and Padaek or Fish Sauce
    Continue to fry until it starts to smell strong (fishy But GOOD lol)
    Add Coconut Milk
    Stir Well then add to the broth pot
    Bring to a boil then add the red curry bowl we set aside earlier
    Leave to boil then taste and adjust with coconut milk or fish sauce as needed
    Boil your blood and cut into small pieces, add into your broth pot
    Cook and drain your noodles
    We are done !!!! Enjoy =P

    One thing growing up in a Laosian home was this dish .. it’s at every event Lao get together .. you can possibly imagine !!! I make mine with chicken .fish & pork only .. never beef .. yes we all ball everything after you master cooking any Lao dishes !!! Making this today for my sister lol .. unfortunately I’m the only sister that cooks Lao food .. 😃🙏🏽

    If I want to use chicken instead of fish will any of the other ingredients change as well?

      Dannny King it’s isn’t hot for us either but does add flavour and a little spice . You can buy the whole coriander/ cilantro vegetable and then just cut off the bottom (those are the roots ) enjoy !

      Lena Saeng hey ! I asked my mother in law and she says a few tablespoons is her best guess (she doesn’t really measure ) lol but honestly it tastes amazing without it 😋 -Katie

      Kin Khao With Us I have had Khao poon at only 2 different locations and it is my favorite dish in the whole world. At one place the broth less sweet than the other and I preferred it less sweet. Do you think it was less sweet because they used less sugar OR less coconut milk than the other place? Is it ok to not use any sugar at all? If you could give me a your thoughts on this I would appreciate it.

      B dizzle yes they probably used less sugar. You can definitely taste and adjust to your liking . This specific recipe i don’t find sweet at all . Thanks for watching 🥰

      Watching you peel all the garlic was painful lol. My store has trays of peeled garlic for $4/lb, and it usually lasts me a couple months. You can freeze it and it only takes 10 min at room temp or 10 seconds in the microwave to be able to work with it. Honestly though, it keeps just fine in an airtight container in the fridge, and I’ve only had to throw out 5-7 cloves bc they got moldy out of the 60+ in the whole 1 lb tray! To top it, get the Zyliss garlic press and you’ll never have to mince it ever again too!
