why dont you mix the eggplant with the pasta and the sauce alltougether it will test better
Because it is so delicate that it will disintegrate. The flavors will blend on the plate.
If you do not like garlic flavour you can simply change your dish!! and do a Mac & Cheese, that terrible USA atrocity! hahaha
