It would seem that to give the name "Norma" to the recipe was Nino Martoglio (1870-1921), the famous playwright from Catania, who in front of a dish of pasta so delicious exclaimed: "Chista is' na vera Norma!", This is a true Norma!, to indicate the supreme goodness, comparing it to the masterpiece of the great composer Vincenzo Bellini, to whom the Teatro Massimo in Catania is dedicated.

Marilyn In Italy instead, and in particular in southern Italy, (I am from South Italy) eggplants are not only highly appreciated, but also widely used in the kitchen in various ways. Eggplants are a delicacy in all ways !

I first heard of Pasta Alla Norma, when i watched the fictional Sicili detective Montalbano, the author of the TV series, based on his novels would have him eating different pasta dishes and later they would put the recipe on line. Unfortunately the Author passed away this year. PS I really enjoy Your Pasta Grannies
I would take another trip to Sicily just for this dish and then drive to Marsala for wood oven pizza at the prominent pizzeria, salad and Marsala wine. I would also visit the fresh fish market I found in Marsala right next to an old Catholic church to buy fresh Octopus.
