"Long Train Running" and "Blackwater" would be the ones I would recommend, as someone who was around when they were released.
They're both good, this is easily the first Doobie Brothers song I'd recommend.
There are TWO Doobie Brothers sounds and personally, I love BOTH! Before Michael McDonald they were must more rock and roll and when Michael came in they became more pop/blue eyed soul, both sounds were terrific! LOVED your reaction!

I honestly only know these guys for Long Train Runnin`,so this was actually a pleasant,new experience. I just never sat down and had a deepdive with this band. I realize now this was something i should have done,as this is music right down my own alley.

Great reaction, not sure if you will see this because it is old but here we go, the Doobies are the Doobies they don't fit into any category neatly. Maybe funk. Another great band, in fact most of the Doobies played in the band prior to forming, is Steely Dan, welcome to that rabbit hole. Greatest band ever.
My favorite song by the Doobie Brothers is Black Water. It's about being on a paddle boat on the Mississippi River. Research what a paddle boat is and the Mississippi river
