THE BEST STUFFING BISCUITS EVER! | gluten-free/dairy-free

  • Tastes just like stuffing!! I hope you give these 'so simple, so good' biscuits a try.
    How to make almond flour (stuffing) biscuits, gluten-free and dairy-free.
    Preheat Oven to 350 degrees
    What you'll need:
    Fine Almond Flour (2 1/4 cups)
    Dairy-free margarine/spread, ie., Earth Balance or Smart Balance (5 Tbsp total)
    Baking powder (1tbsp)
    Poultry seasoning (2 tsp)
    Kosher salt (1/2 tsp)
    Sweet onion (1/4 cup, finely chopped)
    Celery (1/4 cup, finely chopped)
    Garlic (1 large minced clove)
    Cracked pepper (to taste)
    Eggs (3 large)
    Instructions:
    Finely dice celery and onions and mince 1 large garlic clove. Heat saucepan with 2 tbsp dairy-free margarine, add onions, celery and garlic. Saute until translucent and tender, set aside.
    Prepare dry ingredients. To a mixing bowl add, almond flour (not almond meal), baking powder, poultry seasoning, kosher salt.
    Prepare wet ingredients. In a large mixing bowl add eggs, 3 tbsp melted margarine, onion/celery mixture...stir. Add dry ingredients 1/3 at a time. Let rest 3-5 minutes so the dry ingredients can absorb into the almond flour.
    Line a baking sheet with parchment paper. Using a small ice cream scoop, space biscuits 2'' apart. Press down lightly with your fingers if you want a little flatter biscuit, and not a round biscuit.
    Bake in preheat 350 degree oven for 16 minutes or until a toothpick comes out clean.
    These can be made ahead of time. They freeze very well. Just pop them in the microwave frozen for 15-20 seconds, depending on your microwave.

      Thank you! I wish I could advise you, but unfortunately, I can't guarantee the outcome with another GF flour. I have only tried these with the nut flour. I can suggest you buy a certified gluten free baking flour and add sautéed celery, onions, garlic and poultry seasoning to that...this seasoning is what gives the biscuits that 'stuffing' flavor. Good luck, let me know how it goes if you give it a try. =)
