Hi guys! My name is Sue. Welcome to my channel! I'm so excited about this new adventure in cooking. With a background in art, I am thoroughly enjoying the creative aspects of starting a cooking channel from scratch! Being a home cook, my goal is to share my favorite recipes with you in hopes that they will find a permanent place in your weekly rotation. My focus is on finding dishes using whole foods and more healthful ingredients wherever possible. You'll find most of my recipes are vegetarian, with some fish and many are dairy free. I also prepare all my recipes for the gluten sensitive diet. However, if you are celiac please check with your doctor before preparing these dishes. Enjoy these 'so simple, so good' recipes. Life has many challenges....let's not make cooking one of them!

RED CABBAGE-CARROT SLAW | LOW-FAT HONEY PEANUT DRESSING
Hey guys! How about a super healthy, low-calorie, low-fat, delicious slaw with tasty honey peanut dressing? That was a mouthful! If you're watching your waistline this dish doesn't disappoint, in taste OR calories. Check it out!
What you'll need:
Small head of purple cabbage (2 cups chopped)
2 large carrots (3 cups shredded)
Red bell pepper (1 cup chopped)
Green onion (1/4 cup chopped)
Olive oil (1 tbsp)
Lemon juice (1 tbsp)
Soy sauce (1 tbsp, gluten free)
Honey (3 tbsp)
Fresh ginger (1 tsp, grated)
Garlic powder (1/4 tsp, powdered)
PB2 (peanut butter powder, 3 tbsp. If you don't have PB2, you can also use 1 1/2 tbsp of regular peanut butter)
Coconut milk (1/4 cup 'lite')
Kosher salt (1/4 tsp)
Instructions:
Make low-fat dressing first:
In a small blender (or whatever you have) add oil, lemon juice, soy sauce, honey (microwave to just liquid if thick), fresh ginger, garlic powder, PB2 powder, coconut milk and salt. Blend until smooth. Set aside.
Grate carrots using a box grater and add to large mixing bowl. Thinly slice purple cabbage and chop red peppers and green onions...add to bowl.
Toast sesame seeds in hot pan...watch carefully. They are done when lightly brown and aromatic. Set aside and allow to cool.
Add dressing to chopped veggies and mix in until well blended. I used all the dressing, add enough to satisfy your taste. Sprinkle in sesame seeds or over individual servings.
This dish is best eaten in a few days.

@tkarlmann, thank you for your comment! It's funny you mentioned the dishes. My mother-in-law gave these to me (she passed in 2020 at the age of 103!). I'm sure she picked them up from a thrift store or antique shop. She loved vintage dish ware! And the portion size is perfect.... for me anyway! =)

Just made this with a little tweak here and there for a Christmas veggie alternative 😊 added a few finely chopped chestnuts to topping and a half half mix of pre made safe and onion stufffing as was out of dried sage 👍🏻what a winner as was super easy and economical. Big thumbs up from me as has saved me hours in kitchen with fussy recipes ❤

sorry don't you know oat is full of gluten ? So this is not gluten free!
Hi sofiaasai4982, Oats are naturally gluten free. The only time oats are not gluten free are if they are processed in a facility that also processes foods with gluten. Then the oats could possibly be contaminated with gluten. If you are celiac or very sensitive to gluten, just make sure you purchase 'certified gluten free' oats. Thanks for your comment! =-).
Thanks for your reply but Some people with celiac disease will experience inflammation after eating oats, even if they follow a gluten-free diet. This is because oats contain avenin, a protein that plays a role similar to gluten in wheat. gluten is a protein which cause proofing in bread and oat bread is not an exception! I react to oat like wheat, ray , barley and other grains including gluten and I don't have celiac decease but leaky gut. I'm making my own bread and sweets (gluten free , dairy free , sugar free, corn and starch free) for years and have to modify almost all recipes! and make my own. anyways I'll alter this recipe and let you know how it comes out 😉 thanks ❤

Was watching videos to see what other people put in their potato salad just out of curiosity. I seem to be the only one that boils the potatoes AFTER I peel and cube them, and the only one Victor puts fresh dill in mine. Weird

Do they get soggy when filled? How do they taste?
Hi D R! I have not experienced them getting soggy. However, I have not filled them and left them in the fridge all night, for example. My suggestion would be to freeze them (they freeze very well), and fill them as you need them. They have a really good flavor. I use mine for cream fillings primarily. Hope that helps!
Good recipe! I already had some grated tofu, so use that in place of the cubed. Additionally, I always use a tofu press! It saves me so much time and it’s used frequently.

Hi, there is 1/2 cup of sugar in the entire recipe, so I would say it is not 'high' sugar. Hope that helps.

Hi Maureen, Thank you for your comment! I appreciate it! I always cook my eggs for 13 minutes. I read somewhere Julia Childs said that was the perfect amount of time for hard boiled eggs =). I like to remove my shells by cracking them as soon as they're cool enough to handle....they always seem to come off a lot easier that way. Hope that helps!

If you make ahead, like the night before it's needed, do you need to refrigerate it once it's par-baked?
Hi Amanda....I've not tried this, but I have read that it's fine to pre-bake these types of crusts. Cool them completely and seal in an airtight bag. If you are only storing for a few days, this should be fine.
