    I just tried your recipe for making the bread. It turned out great. I used Bob red mill 1 to 1 baking flour and added all the other ingredients you mentioned plus the following: 1 teaspoon salt, 2 tablespoons sugar and a extra 1/4 cup warm water into the dough while the machine was mixing it. Seemed a little dry while it was mixing. The bread turned out soft. My machine is a rosewell(looks like the wolf gang puck one), it has a gluten free option. It came out nice and soft. About to make another loaf. Thanks for this amazing recipe.

    • @DianaSprague
      @DianaSprague  6 років тому +7

      That makes sense that you had to add the salt and sugar, as the bobs red Mill is different then what I used. My mix has that included, so I am glad you made it work for you!! ❤️ I am so glad I could help! 😊

      Thank you for this comment!!! This is my first time ever making bread. I just found this video and hopped up to make it, I've had the ingredients.
      She mentioned hers was included and that it was important (thanks for that tip too btw) so I came to these comments to try to find what I needed to add, you're both amazing!! I happen to also have the Bob flour

    You saved me, I bought a bread maker (I've wanted one for so long) and I've wasted so much time and money trying to master a decent bread. Every fail is so disappointing, feeling regret for thinking I could do this at home. Pamela's flour was the magic change. Thank you for doing this.

    I have made this twice already with Bob's red Mill flour and adding the salt and sugar. We did the two hour bake in the breadmaker and it sinks a little in the middle, so this time I will try the 4 hour cycle. Our breadmaker does not have three hours. But, the bread is still so amazing. I almost cried. Gluten free for 20 years. My son is begging for bread everyday now. Thanks so much!

      Exactly! I'm in the UK and tried this recipe last night and completely failed. I used the measuring cup that came within my salter bread maker and the result was a very hard rectangle 😅. Grams would be more accurate. I'll be very grateful if someone that succeeded with this recipe could share how many grams fit in their cup. Thank you!

    I am a Dx'd Celiac for 20 years and really suffered back in the day with dry crumbly products. So glad to see someone else hacking up Pamela's too. 😄 I always buy Pamela's bread mix, not in that size but I always add apple cider vinegar too! I started doing that when I found I had a package that I lost sight of and realized it was past date. I didn't know if the yeast that came in the package was still good or dead. I added some ACV because it was very slow to foam up, and then it started to foam. I had the best risen bread that time ever!!! I always do it now automatically!!! We have multiple GF here too, some Dx'd some not but they eat those products too...no one noticed the addition of the ACV, I never added two full Tblsps measured. I just pour! hahahaha! 😄 Another hack: I also add some ground flaxseed or chia seeds or even psyllium. No one notices that either, but it adds fiber back into our bread that would be in whole grain bread that is otherwise not in GF bread. So sad to learn Ancient Harvest bought Pamela's. Although Ancient Harvest is a great company! I hope we don't lose the charm of Pamela's, as she started that company and changed the game of GF many years ago. Too many times larger companies buy out smaller ones and just swallow them up! So fun to run into this video...I think you have the same bread machine I have!!! 💗🙏🌺

    Diana: So grateful for this cheery video. First try with hand-me-down breadmaker (an old Regal Breadmaker model k6751).
    Some reports: Bought Trader Joe's Gluten Free Flour (ingredients: varieties of rice flour, potato starch, tapioca starch - 16 oz package) Used only 3 cups as all the breadmaker booklet recipes used 3, but kept same liquid amounts. Added eggs, salt and brown sugar per instructions. Bought Xanthan gum at Whole Foods - used 4 tsp per package instructions, 2 in liquids and 2 in flour. 1 packet Red Star Active Dry Yeast folded in to flour. Set timing for Rapid. Let stand in maker for half hour after baking (super eager to sample).
    Result much better taste than any store GF especially with a good butter. But otherwise a little dense and moist and sank a bit. My guess - should have used more flour but was afraid of over filling cooking pot when rising based on booklet quantity recipes. Any thoughts?
    Thanks again and keep exploring.

    • @DianaSprague
      @DianaSprague  3 роки тому

      Sorry I didn't see this comment!! I really appreciate the feed back! I am guessing you needed to add in all the flour! Did you try it again? Brown sugar also has more moisture then white, so that would also make it more dense. But when I have it come out as a dud (sometimes happens when I don't follow the recipe lol!) I use it for French toast or croutons! :D

    Thanks for this, I have tried many combinations over the years but after watching your extremely helpful method, I used it yesterday to make the first successful loaf, it was a little on the dry side, but I shall add some oil to the liquid next time. Being in Australia the brand of GF mix was not available, but I used Laucke, which seemed to work fine. Although it had never worked satisfactorily before, hence the proof that your method is excellent

    Hi Diana. Thanks for the video. I have not tried it yet because first I live in Europe and Pamela’s flour mix is not available. This bring me to my questions? Is the flour you use a bread flour that includes already some form of emulsifier like xantham gum? I have used the Schär all purposes gluten free flour. So I am trying to figure out if I need to add xanthan gum to the recipe. Also my bread machine doesn’t have a gluten free setting. With wheat breads it says to use the quick setting when using instant (or rapid rise) yeast and the basic ( the 3.5 or more hours) setting when using dry active yeast. Which type of yeast do you use in your recipe? I am curious to know how many times the dough rests and rises with a gluten free setting.

      @DianaSprague  4 роки тому

      Hey there!! SO SORRY youtube didn't show me I had this comment!! Yes it has a small amount of xanthum gum, plus salt and sugar to feed the yeast! i use rapid yeast! I hope this is helpful let me know!!!!

    You can subtitute applesauce 1/2 cp instead of eggs and then also substitute 1 tblsp baking powder instead of yeast. After its done and you slice a piece put it in the toaster like you would regular bread slices and its GREAT!!

    Measure the flour by weight. The flour bag will give the grams per 1/4 cup, or 4 Tbs. King Arthur GF is 33g, thier recipes use 120 g per cup. This method is much more accurate and gives consistant results.

    • @DianaSprague

    FYI - I see so many videos and recipes that insist yeast needs sugar to rise. It does not! Case in point, France has a law that states if a bread is to be called French bread the only ingredients used are water, salt, flour, and yeast. Nothing else! By all means add sugar to a sweet bread (cinnamon rolls, etc), but it is not needed in regular bread. 😊

    • @DianaSprague

      Just try it! It’s ok to mess up! That’s what happened to me the first time and then I figured it out! ❤️ it depends on your environment but I tend to put it in the fridge after a couple days and it will last a couple weeks, but best the first few days. I use it for croutons, French toast or stuffing once it gets too dry ! Or you could do bread crumbs!

      You would mix it really well ( stand mixer would be great!!! )
      And then rose it in bowl for an hour then rise in your bread pan for an hour. Then bake at 350 for about 1 hour 10 mins. It needs to be brown on the top and have a hollow sound when you tap it.

      So not all GF settings are actually best! I recommend doing the “quick bread” setting that is 3 hours.
      I have never used Krusty flour so I do not know if that is a good one.
      Also try leaving it in the bread machine at least 30 if not 60 mins after it has finished to cool off. That helps it hold its shape better (I have learned some tricks since making this video 5 years ago!

      @@liviaemy did you mix the dough before you put it in the machine? For some reason I have found that works better if you premix it, even though the machine should mix it up! So before you put it in the machine make sure there are no flour lumps 👍

      @@DianaSprague Oh cool, because we are coming into spring and summer here, where I find bread making easier in the warm temperatures. A lot of gluten free flours when cooked have that paste texture. I've found that is mainly due to either pea or chickpea flour. Anyway, I look forward to being a regular again on your channel.

    Watched your video as I'm learning how to make gluten-free bread but I got a little confused with the amount of the flour. You "said" 3 cups but it looked like I saw you pour in 4 cups. So, is it 3 or 4?

    • @DianaSprague

      Yes sorry! It's 3 and 1/2 cups. 😁👍 Check description. Thanks for stopping by and I am glad you asked! Let me know what you think once you make it!!

    I tried this recipe for my very first attempt in my new bread machine. Although it was very tasty, the loaf deflated in the center which resulted in about half the loaf being unusable for sandwich bread. I wonder what I did wrong? The loaf looked proportionate when it was baking, but after it was finished it started to deflate. I had to jump on a work call so I couldn't pull it out immediately when it was finished backing. Did I wait too long? I didn't think it would hurt anything by leaving it in there an extra half hour or so. I googled the causes for deflated bread and there were a million reasons. Lol!

    Just curious to know if your recipe would work with Gold Medal Better for Bread Flour? I'm not Gluten Free but have some of that flour to use up. Amazingly, I have an Hitachi HB-201 Plus Convection machine that looks exactly like yours does! On the Yeast part I would use the faster Quick rise version on the Rapid shorter cycle. Was that the Yeast type that you used or was yours the normal Rise kind? I liked your big Smile and all your enthusiasm too. Great helpful video. Thank you so much.

      I am not familiar with that flour, but it should! But you would probably have to add a bit of salt and sugar, if that is not already included in the bread flour, because it is in my mix!! That is so funny that you have a same machine! I just got up to check mine lol!! Good question about the yeast! I think it is the instant, honestly I would have to double check. My baking skills are not amazing lol, which is why I love this recipe. :D Thank you so much for the kind words!! They mean a lot!!
