    I love your channel and watch it almost every day. I am 75 and rarely do any big canning projects anymore. But that being said I grew up with a mother who canned, grew, gleaned all the fruits and vegetables. We never said we were bored or you found yourself out in the garden weeding. I laugh about it now. My mother is long gone but she is in my heart and watching your channel reminds me so much of my Italian mother. She loved 3 things deeply, her children, and cooking and canning, baking. You name it. She didn't have all the amazing things you have but she was fine doing it the "hard" way. One year we lived in a logging camp, and she had a old camp stove lugged to the sand bar and did our washing.       What size canner?

      @angelal6700 you can use any size canner you have. If it's a big one, you'd just be processing a few jars in these small batch recipes rather than filling it to capacity with several jars that you get from larger batches. If you are looking for your first canner, get on that accommodates about 4-7 quart jars. That way, you can start with a manageable sized one. I like the Kitchen Crop Steam canner. It's the best. Happy canning!! 🌞

    I just wanted you to know that I made up some of your rhubarb strawberry pie filling. I filled tarts with some of it, then thought I'd try a loaf. It turned out really nice.
    Cream together
    1/3 C sugar
    1/3 C butter
    1 tsp orange zest
    Add in 2 eggs
    1 pint of the rhubarb filling drained - about 1 1/4 C
    1 tsp vanilla
    Mix and add
    1 1/2 C flour
    1 1/2 tsp baking powder
    1/2 tsp salt
    I added chopped pecans and white chocolate chips
    Bake at 350 for about 1 hour.

    Like you I saw right away that the chicken pot pie wasn't going to turn out exactly right. I tried it a few times and ended it up turning it into soup each time. The best way for those pies is to make your recipe cool and pour into unbaked pie shells and freeze. Being single I make quite a few 6" pies every few months turkey, beef and chicken. Really enjoy popping them into my toaster to bake. Can't wait to try your other recipes. I could almost smell them thru the screen 🤩

    It took a few weeks to get to this but it was on my mind since you uploaded it. My farmers market had beets this week so I knew this weekend was the time. I have six glorious half pints sitting on my counter cooling down now. Well, five are cooling down. One is almost empty because we’ve been nibbling on it spoon by spoon. It is SO delicious. Thank you so much for passing the recipe along!

    Now that we’re empty nesters I tend to small batch can more often, (except for big garden harvest times), so I really loved today’s content.     I pick up the Taste Of Home Canning Book anytime I see them at Thrift Stores . The Million Dollar Relish I can’t keep on my shelves, I make it several times a year .

    That was my family's favorite that we canned was the chicken pot pie filling and the ground meat with sauce base. First things we ran out of besides apple sauce.

    Also, when a recipe calls for 1lb of something, like tomatoes for example, is it safe to assume the 1lb is the product after it has already been chopped, pitted, and seeds removed? I am so thankful for your videos! I'm going to try canning for the first time this summer and it's a little intimidating!

    I am not a fan of beets, but my grandma makes these cinnamon candied beets that have the texture of relish but are a sweet-tart treat. Highly recommend.

    I have to get into Small batch , it’s just two of us at home but I love to share. Last year I did 120# of Dills, Bread n Butter, Hamburger Chips and 40# of Pickled Asparagus.

    Very sensible idea to do these small batch canning, before canning season when you are in full on go, go, go mode. Rather then doing a big batch and then finding out you or your family do not like it.

    I had a LOT of cantaloupe one summer and found a recipe for cantaloupe bread, which is like a banana bread or zucchini bread. We really liked it as did my farmer's market customers.

    Thank you Chelsea. What I have made with the cantaloupe at the end of summer is juice it with mainly watermelon and apples. It is a delicious drink easy to freeze. I am getting to the end of it from last year and look forward to making it again this summer. Take care.

    I made a batch of the Strawberry Rhubarb pie filling today, and it was really great, and so easy to make. I will be making another batch of it. I think the next batch I might lessen the amount of orange zest as I thought it overpowered the Rhubarb and Strawberry flavors a little too much.

    I won't be able to make it into the live zoom call at 2am Sunday-Monday morning 😅
    I just started my canning journey, mason jars are not very common here and i find finger tip tight a little shady. Some i think are ok, but i also have jars that the ring is just loose after processing, is that ok? The jars do seal.
    I'll be trying the strawberry rhubarb filling as i already have strawberries in my high tunnel 🎉 Can i use frozen strawberry and rhubarb as well, to save up and can a batch of 4 pints?

    Cut your cantaloupe rounds, & put a scoop of homemade vanilla ice cream in the middle. Great quick desert. You could probably use up 2 cantaloupe's at a time with your large family. Dan can put other fruits in the center of his. Yummy.

      My mother used a scoop of sherbet instead of ice cream. Ice cream sounds yummy.

      As a treat, my mom would cut a cantaloupe in half and put a scoop of vanilla ice cream in the scooped out part for breakfast on Saturday when we'd go to the beach. It was a hint at what was in store for the day. I think of my mom every cantaloupe season. ❤

    You know what would be a great video?
    If you did a compilation of how you use different things you can. I have only ever eaten pickle relish and only on hot dogs. Do you have lots of applications for each thing you can or do they generally go towards certain meals? I did cowboy candy last year and we aren't really using it.
    Lately we have seen you try new recipes with us, which are always fun. But...
    I'm fairly new to the channel, so would love to see you use more from the pantry for those of us with not as much experience eating canned food!

    I’ve always wanted to find a way to preserve cantaloupe. Did it taste at all like melon? Or did the orange and cinnamon take over the flavor? I remember Lifesavers having a melon flavored candy - it really was my favorite, even over the red one. Lol. Going to make the beet relish because beets rule. And your rhubarb harvest makes me so happy. It has always been my favorite. I had a pretty wonderful plant next to my garage (I call it alley rhubarb) but someone dug it up and spirited it away last year. It was there for so many years, so we did grieve its loss. It’s $4.99 to $6.99# at grocery stores around here. ☹️ Finally, the steam canner has been revolutionary.

    Rhubarb is my absolute favorite! It is hard to find in grocery stores and quite expensive! I have paid over $4 lb for it. We now live in our RV so growing it is not an option 😢

    I come across it every so often, dehydrated cantaloupe. I've had it both regular and candied (soaked in sugar before dehydrating). Both were done to a soft gummy consistency. Very delicious. You can also puree and reduce, then dehydrated for cantaloupe fruit rolls. There is also the cold summer soup approach.

    Once years ago I found and made a cantaloupe jam that was very, very good - just don't know where the recipe is, so now I have an alternative and am happy. All the recipes look good and I hope to make them this year. Down here in Florida, I can NEVER find rhubarb fresh - don't know why but maybe it doesn't ship well. Two years ago I came across some and made a rhubarb pie and it was not very good, at all! So this year, I hope to find some so I can try again - love rhubarb so much!

I’ve also made the chicken pot pie in broth. It’s great as a soup or as pot pie filling once thicken when open. Love your videos!😊❤

    I made with our very ripe cantaloupes a sauce - it was a jam recipe originally but it didn't set well. We liked it SO much, we kept the "sauce" recipe and I add it to our kombucha if I have extras (its wonderful!) as it is a great sauce over chicken on the grill or our venison on the grill. The caramelization from the grill takes it to a new level.

    Yes, Chelsea, the Presto stove top canner is the same style as ForeJars canner.
    Got 2, 18-qt canners. Now, the gasket is good for a couple -3 years of service, but the little emergency release plug, rubber, does need to be replaced more often. And had to be ordered from Presto, no Amazon vendor subs. (But the gasket can be!)

    I made a salted canteloupe jam (I made it with scotch bonnets but that was optional) and it was really delicious! The spicy version was great with cheese.

    Thoroughly enjoy watching all of your videos. Another idea for the cantaloupe that we used to do is treat it as a dessert and eat it with vanilla ice cream. It does taste better if the cantaloupe is good and cold.

    I have a Presto pressure canner, which is very similar to the ForJars. I love it. The All American is too heavy for me. And if you don’t lubricate the rim well enough, the lid can lock up on you.
