Hi friends, I went for a little stroll through the garden before I got into the canning, but if you'd like to jump right to the canning click 6:31 Enjoy! ♥
I appreciate how kind and attentive you are to your family during your videos. Above all things, we are mothers first. Thank you for setting such a great example of motherhood.
They say great chefs make a mess. Same goes for great canners. Never worry about a mess, a mess equals progress. We're here to learn and enjoy your company. Can't wait for your next video. ❤
My friend and I in years past would can together, pooling produce and sharing the results. We would can at one house, taking turns heating up our homes and families! 😂 Sometimes we would be busy until the wee hours of the night when it was cooler, children were in bed and we could blitz our efforts. So satisfying to do. I have very fond memories of that time. Enjoyable to watch you at your efforts with so much accomplished.
My grandfather grew yellow cucumbers like the ones you grew. They were called lemon cucumbers. When they are picked young they have a slight lemon flavor. 😋
Love your videos! I noticed for the coyboy candy you said 1/2 cup sugar per cup of vinegar, but actually used the opposite , 1/2c vinegar per 1 cup sugar... Not sure, but you might need to put it in the show notes in case anyone tries to follow what you said instead of what you did 😊 thanks!!
Chelsea, it was wonderful to hear the voices of some of your children in today's vid. I can appreciate that you do not have them on-camera very often but it's hard to believe that your usually 'quiet' home is housing half a dozen kids. Plus - when our family (of 7 kids) was in canning/freezing mode it was All Hands On Deck and it appears that you do all of the preserving effort on your own.
I do it sometimes on my own, but usually I have lots of chopping help. My kids are awesome during preserving season! I also try to fill when they aren't home or otherwise occupied - I feel really strongly about not having them on camera.
Love your videos ❤️. I just made salsa yesterday. My son volunteered to cut all the onions. He likes to wear his swimming goggles when he cuts onions. Funny but smart. He is such a joy. Have wonderful day! Another fantastic video ~ Thank you❤️☮️
I am amazed by all you preserve. I canned dill pickles and bread and butter pickles yesterday and I was exhaused. I canned coleslaw last weekend and strawberry rhurbarb jam before that. Tomorrow it is zucchini relish. I have to pace myself these days because I have a very bad back and I am very close to being 78 years old. I love your videos and look forward to each one. Thankyou.
I have made salsa without cumin. As long as you’ve got cilantro it’s still very yummy. I did a roasted salsa this year which turned out very good. It’s roots and refuge recipe. You can find her on UA-cam
I have coursework due at midnight so cant watch now but I am feeling so much more motivated to push on after getting this notification 🙌 I will return soon!
Hi... I have two steam canners and it makes the canning so much easier... I'm not nearly as tired at the end of a canning day because the processing takes half the time... I have two pressure canners for the same reason.. also both have the weights so don't have to constantly watch the guage... it's amazing how much easier my day seems with those few changes. Thanks for another great video... I so often learn something new...at 70 that is so awesome for me ☺️
I’m making the Ball’s Fresh Veggie Salsa today & cutting back on jalapeños also. Dicing up bell peppers to freeze as I watch this video. Busy time indeed here in Ohio also.
Oh my gosh that is super satisfying for sure. Wonderful. I love making cowboy candy too. Everything looks so beautiful. Hope you enjoyed your swim, well deserved. hugs
That is called a Lemon Cucumber where we come from. I usually peal & slice them onto a plate, then squeeze a little fresh lemon over them, then a bit of salt & pepper. SO DELICIOUS!! A favorite in our home. Easy to grow & very prolific. Best younger, less seeds.
I just am in awe of how you have such an easy going confidence in your canning. I am always second guessing myself and can absolutely never multitask. I actually tried doing two things at once a couple of days ago, and added two tablespoons of salt into my sourdough pre-ferment instead of two teaspoons. I thought I was really zipping along well, but nope. You are such an inspiration! Thanks for sharing your canning days with us! FYI, just finished canning your Cole slaw, every lid sealed, and I can't wait to try it in the next day or so!
The apple cucumbers were a staple in our garden when I was young. Mum called them crystal apple cucumbers and we always peeled them. We only ever used them for salads and eating fresh. Still a favourite but becoming rarer.
So glad i could hear the children in the background helping you, that is a lot of canning to do by yourself, so glad they are willing to help. I made 26 qts of salsa for a friend.
Don’t apologise for your messy kitchen, I get like this when I am preserving my harvest nice to see I am not the only one. Our kitchens are working kitchens. Xx
Omgosh! Yes, wear gloves!!!! I cut up a ton of jalapeños from my garden to freeze and I didn’t wear gloves. I knew better too! My hands hurt for 24 hours😭😭😭 I tried every remedy. Nothing helped! ALWAYS WEAR GLOVES!!!!!!!!!!!!!!!!!!!! Love your content Chelsey! So relaxing.
Hey Chelsea...I love watching you and how much you get done...you motivate me for sure!!!! The little yellow cucumber is called Lemon Cucumber...at least that's what we call them in the states
You will never regret getting that processor..I had mine 20 years and the motor was still running smooth and quiet….although the plastic parts do decay with washing in dishwasher
Hi from the East Coast of Australia. When I was young the only cucumbers we grew were what my mother called Crystal Cucumbers which are the same as you showed at the beginning of your vlog. We always peeled them as the skin was a little tough and could be slightly prickly. They are hard to come by now as our food likes have changed to the green long ones, usually called Lebanese cucumbers or just green cucumbers. My uncle and many country folk in the family grow a large oval white; as they ripen, they turn yellow and are delicious too. They can be rather fat and large and ideally better when they are lighter in colour. I will try to get some seeds for the crystal cucumber and grow some this year. We are looking forward to Spring which starts slowly for us in September. Love to watch you and your beautiful garden. BTW there is not one member of my family that likes coriander or as you call it cilantro, you said it has a lemony fragrance, to our noses it smells like the green stink bugs we get on our lemon tree. They say it is in your DNA as to whether you like certain flavours over others.
It is so nice to see you use the steam canner. I don’t think I have seen anyone else using one on you tube. I have been using mine for a year and it has been a game changer. It is faster heating up and so much easier to handle without all the water. I love it!
Your kitchen is a working kitchen, not just for show, don’t worry at least we know you’re real. Lol. My kitchen looks like that too, when I’m going a big day. 😊❤
We love cowboy candy. My recipe has cayenne powder or red pepper flakes, granulated garlic. All else is the same. Ever canned cake? Just two of us, so I do that so my husband can have a sweet treat when I haven't been able to bake
I envy your heat! We here in south Sweden, had a warm and dry June but then it got very cold and we've had so much rain. I've hardly been to the beach this summer, disappointing! At least the garden is doing good with all the rain! Fun to see you can, love your videos!
Thank you i enjoyed this video so much God bless you you know you just make everyone smile and you take it in a roll and something messes up your rolling with the punches thank you so much i cannot wait to put up some blackberry jam for the winter this winter and you just made me so excited about it thank you miss kelsey i will never forget this this is something that i will tell everyone about in fact i talked about it all the time here in like in pensacola florida where i live i talked about how you go through all that i love your panties and your carrots oh my God you grew some of the beautiful carrots wow thank you again and God bless from my family to yours you're in our prayers
We are in Northern Michigan, tip of the mitten area, and our drought has hugely affected our local farmers hay production as well. We saw a few farmers that cut for a second time, and literally it looked like if I cut my grass after letting it go for a month. The cutting was pathetic. It may give him one or two round bales to the entire field.😢😢😢
I love my steam canner. Less time and less water too. I cannot imagine doing that much canning in one day! You are amazing❤️ This year I made red hot cinnamon pickles with overgrown seeded cucumbers. They are like candy.
Yesss I love bulk canning my self . Some think I’m crazy cause I love canning a huge amount at a time . Ohh well if I’m gonna mess up the kitchen why not do a big batch getter done . GODBLESS sweetie
Back in the days, my father's family ( lived in the mountains over 1000m above sea level) would use branches with leaves to feed their animals in order to extend the hay. They also grew fodder beets. I hope you got your cumin for the salsa:))))
Hi Chelsea, I’ve been a subscriber for a really long time maybe near Little Mountain Ranch UA-cam beginning. I’ve been really busy for the longest time and not watched any UA-cam but I think of you often, pray for you all and still hear you in my head saying, “Hi I’m Chelsea from Little Mountain Ranch”. I will catch on your channel soon.
I love cowboy candy. I run mine in the food processor like I do relish. I love it on every bite of say a hamburg I add a little bit as I go. Then you can use as little or as much as you want.
You are a little energizer bunny :) I don't know how you do it all. You are amazing. Thanks for the video. I'm canning right now, but much, much less quantities..
It gets hot in a kitchen canning. You can a lot and have you thought about an outdoor canning room (just for the summer) to keep the heat in the house down. During the winter the heat is a good addition. It is just a dream for me.
Time saver suggestion, use a measuring cup to fill your jars. A 2 cup measuring cup will only require 2 dips in your food to fill a quart instead of a bunch with your ladle.
Oh❣ Maybe we will see Dan organizing all of those peaches down in that beautiful pantry! (I have a question about making large purchases like 80 lbs of tomatoes. Do you guys always agree about $$$ ? )
The salsa looks delicious. What an incredible canning day. Hope you enjoyed your much deserved swim! BTW, your roast chicken recipe in your recipe book is delicious…never thought to roast one on sliced onions before.
We make a HUGE batch of Cowboy Candy every September. We have enjoyed ours way more by chopping the peppers finely, with my chopper of course, not by hand given the amount we do. However, we have used our left over brine for subsequent batches as well. Just be warned that the heat/spiciness intensifies when you do. We also can the left over brine to use in marinates for pork and chicken. It is WONDERFUL and if you add just a little, it gives a zing without too much heat. Everything that you're doing looks so fabulous! Good job!
We actually had the water shut down for irrigation by the environment service of BC in Westwold and Falkland a few summers years back , it was devastating to the farmers and we have huge Hay farmers in this valley .

I appreciate how kind and attentive you are to your family during your videos. Above all things, we are mothers first. Thank you for setting such a great example of motherhood.
She and Dan are both like that. They have taught their children kindness and respect through example❣️
Don't forget your yarn is on the ladder! 😊
Thank you! 😊
Your videos are a favorite of mine. You have such a gentle manner.
They say great chefs make a mess. Same goes for great canners. Never worry about a mess, a mess equals progress. We're here to learn and enjoy your company. Can't wait for your next video. ❤
I must be a Michelin star chef and canner!!!
My friend and I in years past would can together, pooling produce and sharing the results. Celery-yak makes me smile every time. We (UK) call it Sell-air-ree-ach (not saying we are right at all…but the difference makes me giggle) x
I caught that too, I’m British and my dad grew it.
My grandfather grew yellow cucumbers like the ones you grew. They were called lemon cucumbers. When they are picked young they have a slight lemon flavor. 😋
That's what my seed pack this year called them too....
You are amazing Chelsea. I get excited at how excited you get over all your preservation and garden. You're the best mom. Great video.
I was just looking for this comment too - I was wondering if the vinegar:sugar ratio was correct as it is backwards from what she did
Can't tell you how you inspire all of us!! Love watching your videos and all the things :)
Wow, thank you!

@@LittleMountainRanch Wonderful 'parenting', Mom!!!

I did the same. And my hands burnt so bad for a few days. Nothing would help the burn. Never again!!!! Gloves for all hot peppers.
I have made salsa without cumin. As long as you’ve got cilantro it’s still very yummy. I did a roasted salsa this year which turned out very good. It’s roots and refuge recipe. You can find her on UA-cam

You got this!

Love the crunch when you chop the peppers , so fresh and crisp .

You are so hard working❤❤
Wow what a productive 2 days! Thank goodness for the lake where you can relax and unwind a little!❤
My favorite cowboy candy is shishito peppers done in the leftover brine after doing a batch using jalapeños.
Hi Chelsey, in the US we call them Lemon Cucumbers. 🍋🥒
Hey Chelsea ☺️ Watermelon Rind Pickles are a new favourite on our homestead!!
I just am in awe of how you have such an easy going confidence in your canning. I am always second guessing myself and can absolutely never multitask. I never used to be good at multi tasking, but years of doing the same things every year has helped a ton.
Wow! Lady Chelsea you are amazing. The cans on your counters looked beautiful! I hope you had a nice time at the lake with your family.
I am exhausted just watching. I am dehydrating cabbage ar moment but have a large bowl full of peppers to go in next. Thank you for sharing 🙏🙏🙏
I discovered a vegetable chopper by Starfit that makes chopping so easy and uniform for tomatoes, peppered and onions.
I made some cowboy candy the other day and to some of it added a bunch of cherries I needed to use up - so delicious and so beautiful!
Thanks so much Chelsea. I love spending time with you. 🌷🇨🇦
Amazing accomplishment, getting so much prepped & canned in just 2 days! Thanks for sharing! Blessings to everyone 🤗💗🇨🇦
Wow! Lots of work but so rewarding! Blessings Chelsea!🤗💕🤗
Loved every minute of this video. What a fantastic mom and wife you are.
I have so much Pioneer Woman in my kitchen, bathroom, and bedroom;😂
I don’t get tired of her designs❤
Don’t apologise for your messy kitchen, I get like this when I am preserving my harvest nice to see I am not the only one. Our kitchens are working kitchens. Xx
Yay! it's such a relief to get a lot of preserving done.🌻

💚 Wow, canning extravaganza! What an amazing amount of preserved food. Hope the swim cooled you off!💚
Hey Chelsea...I love watching you and how much you get done...you motivate me for sure!!!! The little yellow cucumber is called Lemon Cucumber...at least that's what we call them in the states
That was AWESOME! I bet you take your coffee down to the pantry for breakfast just to admire all that work and joy!
What a great feeling to have all that beautiful produce persevered for the winter. Thank you for sharing.
amazing amount of canning for two days! wow! I am impressed! Thank you for sharing your recipes and tecniques!
Wow, that was a lot of jars!!!! Good for you!!! This was very inspiring!!! Thanks!! 😊
I love your videos. I really enjoyed walking with you through your massive garden. ❤
You will never regret getting that processor..I had mine 20 years and the motor was still running smooth and quiet….although the plastic parts do decay with washing in dishwasher

All I can say is WOW!
I live in Southwest Colorado. My husband cut all of our hay and every single grass waterway he could, For winter.
You are such an inspiration to many, especially to us!
Thank you so much!😊
It is so nice to see you use the steam canner. I don’t think I have seen anyone else using one on you tube. I have been using mine for a year and it has been a game changer. It is faster heating up and so much easier to handle without all the water. I love it!

Thanks for taking us with you as you can
Awesome job
Fabulous you read my mind, doing peaches and salads and tomato sauce this weekend.
We love cowboy candy. My recipe has cayenne powder or red pepper flakes, granulated garlic. All else is the same. Ever canned cake? Just two of us, so I do that so my husband can have a sweet treat when I haven't been able to bake

Last year I canned the leftover cowboy candy brine and used it as a meat marinade throughout the year.
We are in Northern Michigan, tip of the mitten area, and our drought has hugely affected our local farmers hay production as well. We saw a few farmers that cut for a second time, and literally it looked like if I cut my grass after letting it go for a month. The cutting was pathetic. I appreciate that you wear goggles for onion chopping! I am not a fan of onions, but my husband is!
I love my steam canner. Less time and less water too. I cannot imagine doing that much canning in one day! You are amazing❤️ This year I made red hot cinnamon pickles with overgrown seeded cucumbers. They are like candy.
Very very interesting video! Thank you for taking your time to produce this video for us.
Amen, Cilantro lovers everywhere! Yum! I'm with you ;)
Superb brand lids are fabulous and made in the USA.

We were told recently that bee balm attracts bees but does not feed them. So it kind of tricks them .
THANK YOU for your messy kitchen. I'm feeling better about myself now!

Thinking about your family when I watch news of the wildfires in BC and the rest of Canada. Hope it stays away!
I do hope everyone is safe, take care❤
I love cowboy candy. I run mine in the food processor like I do relish. I love it on every bite of say a hamburg I add a little bit as I go. Then you can use as little or as much as you want.
You could use your new french fry maker to chop your veg. A restaurant I worked at that is how we chopped our veg for western omelet mix.
You could make red hot cinnamon pickles with your cucumbers if you have a bumper crop. They take around 4 days to make but are worth the effort
We know them as a lemon cucumber.
You are a little energizer bunny :) I don't know how you do it all. You are amazing. Thanks for the video. I'm canning right now, but much, much less quantities..
Absolutley fascinating and heartwarming! Thank you!
Glad you enjoyed it!
That’s pico de gallo. Love it! 💕
Wish you had help in the garden. I can't imagine you doing it all alone. God bless.😘
Go to the lake and relax after all that canning. Canning is so rewarding after all is done.
It gets hot in a kitchen canning. You can a lot and have you thought about an outdoor canning room (just for the summer) to keep the heat in the house down. During the winter the heat is a good addition. It is just a dream for me.
yep
How satisfying to see your bounty!! God bless. You!!
Time saver suggestion, use a measuring cup to fill your jars. A 2 cup measuring cup will only require 2 dips in your food to fill a quart instead of a bunch with your ladle.

Wow! That’s a lot of canning! AWSOME
The salsa looks delicious. What an incredible canning day. Hope you enjoyed your much deserved swim! BTW, your roast chicken recipe in your recipe book is delicious…never thought to roast one on sliced onions before.
Wow! Very productive!
Wowzers !
We call the Yellow cucumbers, lemon cucumbers😊

You can use your fry chopper to make salsa ,that how we make it
Still waiting for tomatoes and peppers here, but I am making zucchini relish and canning salmon while I watch your latest video!
You can slow down your cabbage by pulling gently and breaking a few roots. Works great.
